    YUM! I made a spicy curried pumpkin/carrot soup last week with some of the Long Island Cheese pumpkin. And I'm roasting a butternut in the oven as I type. Gardening is the gift that keeps on giving all year round.

    Lovely recipe, Vivi. I wasn't too sure how well my pumpkins were doing so all the Naked Bear bitties were baked off and frozen as puree and the seeds lovingly stashed. That left me two huge Cinderella pumpkins. The smaller one canned down to 11 quart jars of cubes. They'll hold well for a few years now. The dilemma is the last pumpkin that is huge, huge. So far the flesh still feels good and there aren't any signs of rot. Next year I think I'd better not grow any pumpkins!

      Yay, I hope they do really well for you.....main thing to remember is not to water the leaves and stems (they hate it!).....if you can sink an old pop bottle next to them to water into they'll be happy......and lots of manure/compost if you have it. Good luck....and happy scoffing when your gorgeous harvest comes. 😊

    Vivi....I think you should consider creating a "Cookbook" with all those amazing vegetables you grow and delicious recipes you put on videos. Add some of the colored pencil drawings of veggies at each recipe.....and because us subscribers are so special to you, when we buy your cookbook, you can autograph it before you ship it to us!!!!!! :>)

      I totally do too!!! I'm currently experimenting with another recipe using pearl barley as part of a stuffing for roast squash (or peppers)......so far, so good.....but needs a couple of tweaks before I film it and go public as it were. ;-)

    Vivi, looks delish!
    My FAVORITE butternut soup...so far... is very simple too. Love the sweet, creamy butternut flavor! I roast the squash, cut in half, seeds scooped out, face down on parchment paper in the oven until done. Meantime, some leeks slowly sauteed and caramelized in butter and a good amount of thyme. Then, I scoop the squash out, add all ingredients to a large pot, add veg broth, some water and cook for 20 minutes. Then, just puree and eat... but i think i will try adding in the barley somewhere to incorporate, after blending.

    After rewatching this again went to the store today $1.23 for 1 pound for Pearl Barley =) For 1 butternut squash $5.00 =( left the squash at the store crazy people. At home I have spinach, beets, red onion, zucchini and now barley. Found recipes on TH-cam for Buddha bowls with barley. Oh my Viva, excellent suggestion.

    Luv it! I only managed to get 3 very small pumpkins last year. Needless to say, they were gobbled up fairly early on. I planted corn & pumpkins together w/o any beans to supply N to these monster plants so: lousy corn... very few pumpkins. Next year will be better. Giving up on corn. Our local farmers excel at it!

    I've only just recently discovered the winter squashes for not sweet dishes. I had done pumpkin breads and pies in the past. I just this week dried some seeds from a large field pumpkin (chickens got the flesh of this one as it was going a bit too soft) and ground them up to add to the cats' and dog's food as a supplement. Lightbulb went off in my brain - sift it and use the finer bit for flour! We are low carbing so no wheat flour is in the house. It worked on the first thing I tried so I will be experimenting with it more this autumn after the next harvest. I've found I don't like eating the unhulled roasted seeds by themselves as a snack any more. But I just heard about the Naked Bear hull-less variety. So much to choose from and so little garden space!

    Now I'm hungry for soup. The way I make it is to roast my olive-oiled butternut in the oven with garlic cloves tucked in the cavities and maybe surrounded with quartered sweet onions. Then blend everything with apple juice that I use for stock, and season with thyme, nutmeg, and a small amount of salt and pepper. I garnish the soup with sliced sage leaves that have been sautéed in a small amount of butter. So delicious.

      my favorite tool for cleaning out a squash is an old-fashioned grapefruit spoon. Works a treat!

      Mostly it's about two or three......but the butternuts can end up with four or five. :-)

    Mmm, I had my 1st squash soup a few months ago, and I am growing my own this year for my new veg addition, my cupboards are getting condensed from all my canning/bottling of my tomatoes, corn, jams, soups, and dehydrated sweet peppers. It's sad to see all those beautiful cans of food disappearing but that means spring is right around the corner!!!! Happy cooking Vivi!!😆

      I spend so little now at the shops - I love it! Also, the VAST majority of what I make/my recipes are vegan because it's cooking from my plot.....so, go on, get stuck in! Any non-vegan but veggie recipes can be easily adapted to your vegan needs too (I sometimes use cheese but it can be omitted easily). Happy scoffing! :-)

    I can really recommend the potimarron squash vivi. The best little squash I've ever tried, and it grows well in the Midlands!

    thankyou so much for this video, was trying to work out what to feed my son. Just been in hospital with my son due to stomach bug that flared his reflux and he's basically not taken in food for last 5 days, it's all come straight back up, all he could keep down was water. They've put him back on gaviscon and this looks perfect for what they suggested to feed him to try get his stomach to tolerate something. Thank you so much :)

      Oh, sorry to hear this. I would probably exclude the barley to begin with as it can cause some folk a bit of irritation and loose bowels...........but a plain pumpkin/squash soup should be very gentle on his stomach. I do hope he feels better very quickly. :-)

      @@WhatVivididnext already given it to him but he seems fine, the peadiatrician suggested the pearl barley as one the things I could give him but was trying to work out what to put it with that wouldn't flair up the reflux. He's only managed a little bit but it's alot more than he's had since he's been ill. He looks a bit more awake than he has been so he's getting there :)

      horrendous rash now which last night they said was heat rash, looks nothing like a heat rash to me so he will be in with the doctors first thing monday

    Thanks Vivi, done my shop for this wk but will be buying some pearl barley next wk to make soup. I have got a book on making soup which is great but it's much easier to watch you. Can't remember if I've mentioned it but I'm trying the kuri squash as well as the usual butternut this yr.

    Do you bake anything with your butternut?
    That's why I like pumpkin. One pumpkin, cut in half and roasted, and frozen, keeps me in pumpkin cake, bread, pancakes, cookies etc.... all winter. Don't know what Id do with all those butternuts you grew. We have the squash vine borer so I haven't grown any squash for years. I love zucchini and hate that I have to buy them. But I'm slowly battling those buggers and grew my first pumpkin ever (so proud) lol.
    Sorry about your sunflowers when you start to see animals eating it, throw some netting over it . Have you ever tried growing Peanuts?

      I don't tend to bake much......but I keep promising myself a pumpkin pie. One of these days...... Ugh, those vine borers sound horrible - I'm grateful they're not a problem here. :-(

    Yummy soup, I love pearl barley too. I have a few different squash seeds to plant this year, so great to get recipes using squash. I was wondering about saving the seeds to replant the next year, do they still grow true to the original plant, or do they cross pollenate? I suppose it wouldn't really matter, you would just have some weird and wonderful squash, but they would still be usable 😁

    HI vivi! as autumn starts to look closer here I'm thinking if pulling my sewing machine out and making some bunting for next seasons garden! are you going to do a tutorial. I went all weak at the knees when you produced that bunting template but haven't been able to find one here yet!

    I was practically drooling as you were tasting that soup and then...... happy days, I've found a pack of pearl barley in the cupboard and I know I have a squash perfect for soup making, so off I go. Enjoy your roasted seeds to, do you put anything on them or literally just roast, and how long for please, I shall have a go :-) x

      Ooooh, enjoy your soup. I usually roast my seeds plain but sometimes use a bit of salt and garlic.........around 20 - 30 mins (depends a bit on which seeds/size) on about 180*c.

      What Vivi did next You are right, it’s sooooo good. I went for a quick potter in the garden while it was cooking, brr, it’s too cold to do much but I swept the patio and checked over my pots.     Made this today utterly delish!!! How do you freeze it do you use the plastic food cartons?

      Yes, I just use old take-away tubs or any other tupperware. Glad you tried and enjoyed it.......I love it now the evenings are getting chilly. :-)
