My grandmother used ham hocks simmer them first in chicken broth and then pick the meat. Makes a great base broth for the green beans and potato’s. Cheap and feeds the family. We make till this day and kids love it.

She'd cook chunks of jowl bacon with green beans and potatoes (she preferred using red potatoes because she grew up in North Dakota where red potatoes grew abundantly there). She use to say other potatoes cooked ok but with a red potato, you could do anything with them, fry them, boil them, bake them, etc

YOU BETTA SHOW EM HOW ITS DONE!!!!!! I do the very same thing as you but I use pork belly(its still bacon 😉). I cube the pork belly. Throw it in the crock. Onion cooked/uncooked…cubed/sliced goes in. String beans next…potatoes maybe. That’s if I’m not serving potato salad. Set it on high to get the pot hot then turn it to low and let it go. Yeah it takes awhile but I ain’t in no hurry. I usually do this a day or 2 ahead. Especially for holidays.

Like this recipe. Would suggest adding a little citric acid in the form of tomato paste, sauce, ketchup,etc. Also gotta have some bread to dunk in that juice.
