THIS. You can always use a way too big bowl.... and have to wash only one large bowl. But if you use too small a bowl, you now have to wash at least two bowls. lol
My mom used to have thick slices of onion and potato wedges under to raise out of grease. But made flavorful but greasy sides. Also steamed green beans as a side.
I just want to point out, you had to destroy the beautiful Portuguese onion in order for the chinese machine to stand a chance at truly defeating it. In the first take, I think it is more than fair to say that the onion won. :P 7
I usually make about 5 meatloaves at a time and freeze them in vacuum sealed bags in the freezer. In these bags, they will last for 5+ years. Then, whenever I want that for supper, just take it out of the freezer and heat it up! I'm SO proud of you for taking on these tasks. You will learn a LOT and will continue to amazing yourself and your lady!!! Thanks for your reactions!!!

7 your not crazy, in fact this series is one of my favorite cooking shows on TH-cam. no pretentious chef/influencer, no weird over the top fake enthusiasm, just a man exploring the food of a country he loves. warms my American heart!
It gets even better the next day Andre! The flavors meld overnight in the fridge. Make a meatloaf sandwich tomorrow. Lightly toast some bread, add cheese, bacon... Yum. As a NY Italian, I use the Holy Trinity (beef, pork, veal) ground meats together. And now, watching this, we're having this for dinner. Keep up the awesome videos! Mashed potato pie would go great with that. Cut about 4 to 6 potatoes into 2 inch cubes, put in pot with a tablespoon of salt, cover, bring to boil, when it starts to boil turn temp down low to simmer (where the bubbles come up real gentle). Simmer about 10 to 20 min, or more until you stick knife or fork into a piece and they don't stick. Test several pieces. Drain and put back in pot (stove off at this point). While those taters are simmering get another pot on stove. Heat on medium heat about 1/2 cup heavy cream, and half a stick of butter and a pinch of salt till it starts to want to bubble over. Stir often. You have to watch over this pot so it doesn't boil over. When it starts to hint at getting bubbly, stir and lower temp to very low and keep stirring a min or two. Then turn off heat. Go back to the potato pot, put in a handful of grated Parmesan cheese pour 1/3 of cream in and mash until it starts to get incorporated. Do this with another 1/3rd until it's all mixed. Don't over mix. You can make it as lumpy or smooth as you want. Then put in a small baking dish. I like to like mine with non stick foil to make cleanup easier. Rake a fork over the top, make some peaks all on top. Then stick it under broiler and watch it. Keep in until you start getting some brown on top and then it's done. Crispy top, fluffy taters on the inside. My family loves this pie
Absolutely! Nice thick slice of meatloaf (I prefer mine warmed) between two pieces of white bread with plenty of mayonnaise.😋 One of the best parts of meatloaf is the leftovers!
I really thought for a second there he was gonna' make some garlic bread to go with it... **sad panda** So disappointed... Woulda' been perfect! Maybe someday when he does some "red" lasagna... Meatloaf is great sliced and put on bread the next day for a sandwich, hot or cold! We don’t let things go to waste here in America. We try to find new ways to eat our left overs so we don’t get bored eating them. Your meatloaf looked so yummy Andre! You did an awesome job especially with it being your first try. I have to feed a lot of men in my family so I always make a double batch and press my meatloaf down flat into a 9x13 pan so it’s not in loaf form, it’s more like a huge rectangle. If I’m just feeding a few then I do a regular batch and put in a loaf pan so it has that loaf shape. Meatloaf doesn’t have to be in loaf form or put into a loaf pan, just depends on how many you need to feed. The traditional way is in a loaf pan, hence where it gets its name meatloaf.

You did a great job. Meatloaf always cracks so don't worry about the looks. It was invented to stretch meat. That's why there are so many other ingredients in there and so many variations. Putting milk in it just adds more moisture, but you could also use tomato sauce or condensed soup. You can also put finely diced or grated vegetables in too. What my family always did was mix mustard and ketchup in equal amounts and put that on the meatloaf before cooking it. We didn't put any in the mix. You asked about side dishes. One of the classics is to bake potatoes beside the meatloaf. Wash and poke the potatoes to break the skin in a few places. Then put them straight on the rack in your oven outside the pan. If they are large enough, they will cook in the same amount of time as the meatloaf.
Great job on your meatloaf, Andre! I'm in America watching you make meatloaf. I haven't made meatloaf since my husband passed away. I like my own meatloaf better than any other. My husband, who never really liked meatloaf until he tried mine, raved about it every time I made it. When we had the first meatloaf meal, it was served with baked potatoes and green beans. Often, I would make a double-size meatloaf so we could have meatloaf sandwiches for lunches, too.
In my opinion the perfect accompaniment to meatloaf is scalloped potatoes, which happens to be the perfect thing to cook along with your meatloaf. The two dishes will spend almost the same amount of time in the oven and bake at the same temperature. And if your oven is big enough you can also add a tray of your favorite roasted vegetables. I like parmesan garlic Brussel sprouts alongside my meatloaf and scalloped potatoes.
potatoes is a classic side dish for meatloaf. my mom used to mash the potatoes like 85% so there's just a bit of lumpiness, salt pepper butter bit of milk, done. can't wait to go home in a few days for christmas, gonna get some mom made food. a very merry christmas indeed
@@european-reacts classic American meatloaf, mixture of beef and pork with diced vegetables like onions, celery, carrots, cooked rice and your favorite seasoning mix formed into a loaf and baked in a casserole dish with tomato sauce on top. When I make my meatloaf, I use about 5 lbs of meat. You asked for recipe requests, get a large flank steak and pound it out to form a thin layer about the size of your cutting board you always have next to your stove. Cut long strips of vegetables like celery, zucchini squash, asparagus. Anything you like and a layer of ricotta cheese. Roll it up and tie it tight with butcher's twine and also tie the ends shut to keep everything inside. Brown it on all sides then put it into a baking pan and bake to desired wellness then cover with spaghetti sauce and bake about 10 minutes more to heat the sauce then sprinkle grated cheese on top and cut into slices and remove strings before serving.
Fun fact: the veggies were added as a way to "extend" [or use less of] the meat, as it was a bit of a depression / wartime dish. So, to make it last, they'd mix in diced or grated bits of cheaper vegetables (onions, carrots, peppers, etc.) to make the more expensive meat last longer. And then they realized, "well, actually, this tastes pretty damn good," and kept making it with vegetables and such in it... ^_^ Happy accidents, I guess? ;)
Just a recommendation from a long time meat loaf lover and regular maker. Instead of all beef use a ratio of 2lb beef and 1lb ground pork. Another alternative is a 3-2-1 ratio of beef, pork and veal, 3lb a real sweet spot for meatloaf size. Having a good loaf pan with a removable insert that will allow the grease to collect in the bottom also is great!
Meatloaf is a very versatile dish. You can use any ground meat or a combination of ground meats of your choice. My favorite is half pork sausage and half ground beef. You can use bread , crackers, or cereal like wheaties, corn flakes, etc. some people like ketchup or tomato sauce over the top during baking. I also prefer to add fine diced carrots,celery, and bell pepper along with the onion. Seasonings can also vary to your imagination/ taste. Enjoy!
Meatloaf is one of those things that are both undeniably American and so varied that there is no singular recipe, even from house to house within the smallest of towns. My wife's meatloaf includes a layer of scramble eggs in the middle and gets seasoned through with sauteed garlic, dried rosemary and oregano, then glazed with a sauce made of tomato paste, yellow mustard, honey, brown sugar, and chipotle chili powder. Last time time she made it was 3 weeks ago. It's an absolute masterpiece, but it's only one of hundreds of thousands of recipes for this humble-looking dish. Heinz makes an okay barbecue sauce. If you want a *_really_* good barbecue sauce, go online and order some Sweet Baby Ray's. It doesn't matter what variety, because they're all 10 out of 7. And yes, that was your number. 😉 That tasting reaction says it all. When you come across a good recipe, meatloaf is pure comfort on a plate. Your wife, and possibly your neighbors, are going to be so happy you discovered it. And yes, you should serve it with a side of potatoes of some sort, whether baked potatoes, mashed, fries, scalloped, Hasselback, or fondant potatoes. I use half breakfast sausage and half ground beef in mine. I also add milk to the breadcrumbs before using them. Meatloaf can get dry easily, and adding the milk helps keep it moist.

There seems to be a piece missing in the machine. It is a disc with slots for the blades the keeps the onion from getting stuck. You are a crazy Portuguese man, but we definitely enjoy watching. You should let us see how your wife reacts to these recipes. Meatloaf goes great with mashed potatoes and green beans.
Agreed, I had a original "slapchop" with the best tag line "you're gonna love my nuts!" Cause he chops nuts. And it had a piece in the top that stopped stuff from getting stuck. Still a shitty product and a proficient knife user could do it in the same time. Something else Andres doesn't seem to have is a spinning mechanism, mine on the upstroke would spin the cutting blades.
Actually, that chopper is complete, but you must slice the onion, then use this chopper to cut it in small pieces. I had one exactly like it. I have a different one with better blades, but you still need to slice the onion first.
@@ronclark9724 Ketchup is one thing where I go for Heinz. I think it really tastes better and they now sell multiple versions, at least one without high fructose corn syrup (all versions may not have that in Europe--not sure if they have banned it).
Worchestershire sauce, I usually just say Lee and Perrins. A famous platinum blond chef calls it WASH YOUR SISTER sauce. Chortles American bread - that's probably just going to be full of sugar. If you can get your hands on some Sourdough bread - that's a west coast favorite.
7 -Machine/ Gizmo/ Gatget - same thing. And as a professional chef, I have to say just use a good knife. Nothing beats a good knife. -Worcestershire sauce; we say (phonetically) Woos- ter- shear sauce. -The best BBQ sauce from the store is Baby Rays. - Suggestion: Mix equal parts ground beef and ground pork - I also add crushed garlic. - Line your pan with parchment paper/ aluminum foil and the cleanup is easier. - I've never seen that brand of bread. - As Americans, we enjoy clogged arteries; layer bacon / ketchup/ the sauce you made thickly on the top of the meatloaf and then cook. It carmelizes the sugars. -Meatloaf goes well with potatoes or rice and steamed vegetables. - Americans with tastebuds don't drink Starbucks ... ugh. You did a fantastic job! Well done!
I actually rather like Heinz BBQ sauce because they make a version without fake smoke flavor which I dislike a lot and most other brands except Open Pit have. If you want smoke flavor, some pureed (canned) chipotle chiles in adobo will do it (chipotles are smoked jalapenos). The other sauce is Wu-stir-sheer (proving its Chinese origin). Meatloaf GRAVY is super good but must be spooned over MASHED potatoes.
i have not had meatloaf in a few months.. It may sound odd but you can slice left over, cold meatloaf and use in a sandwich the next day. 7 Espresso is steam passed through finely ground coffee. American coffee is hot water passed through a large grind of coffee. Of course we drink a lot of things with espresso If you have a loaf pan your meat loaf will have less chance for the break but either way it will be just a tasty Usually we serve with mashed potatoes and another vegetable as a side dish.
Cold meatloaf sandwiches were my favorite lunch as a kid. If I opened my lunchbox and discovered Mom made me a meatloaf sandwich with ketchup and spicy pickles, I was practically bouncing with joy on the bench.

so my family makes our own meatloaf, with a few differences, one, we dont use BBQ sauce, makes it 'too' sweet, we use tomato sauce instead, and when we do that we get an 8oz can, pout half in it and then once its all mixed up, pour the other half on top. It's really good that way and you wanna save the BBQ sauce for the ribs. And two, bake it in a ceramic bread pan, and put it on top of a baking tray then bake it that way, yes it will get a little messy but its worth it also, to avoid air bubbles, make sure to stick your finger down into each corner before squishing it back into the corners from bottom to the top. Then you make some brown gravy(make sure to look up american brown gravy for this one gravy can be different things depending on where you are at in the US) and mashed potatoes (with milk and butter) and once the meatloaf is done, slice it, put it down with your mashed potatoes (you can add a choice of veggies for the side) and pour brown gravy all over it...its so good...
I made a meatloaf in the crockpot last week. Mashed Potatoes and corn on the side. Cut leftovers into slices for sandwiches. It's like eating a great burger! You did a FANTASTIC job on your first attempt at meatloaf! What's on the next menu? I can't wait! You cook it and we'll watch!! ❤🇨🇱🇨🇱
7 😊. For your wife’s birthday. You can make her a meat loaf but you can get a cooking pan in a different shape like a heart or maybe a teddy bear. And then cook it. And the meatloaf will be heart shape/teddybear shape.
That's funny ! When we got married I didn't have a pan big enough but I had a double heart shaped cake pan and so I baked it in that. Just used ketchup right out of the bottle and "decorated it. " Made with love !"

I think I am not alone in saying I really look forward to your cooking show. You make it so much fun and when you do the taste test you I enjoy watching you enjoy what you cooked.
Nailed it. This is pretty much how I make it, but use ketchup instead of bbq sauce and I bake it on a rack in a baking sheet to keep the meat out of the fat/liquid so the bottom isn't soggy. Make sure to drain off the fat from the sheet as a lot of fat and liquid comes out. You can also use a rack in a roasting pan with higher sides - but I like the no sides so the outside gets nice and crusty. I think I learned this from the esteemed Mr. Alton Brown on one of his Good Eats episodes. I usually have it with mashed potatoes and gravy and green beans as veg sometimes mac and cheese instead of potato. One other tip - don't mix the meat too much it affects the texture, just enough to combine everything. Oh - one more thing, I use some ground pork with the ground beef in equal parts. I have been making meatloaf for over 25 years and just started adding pork about a year ago, what a difference it makes to the taste. Great video again! I think I'm making meatloaf tomorrow.
As a natural born American I make meatloaf for my family for dinner once or twice a month. They love my meatloaf. You can use whatever ingredients you have on hand or use the same exact ingredients each time you make a meatloaf. I always use finely smashed cracker crumbs eggs diced onion and a bit of milk. I never substitute bread for cracker crumbs so my meatloaf tastes the same everytime I make it. Meatloaf and potatoes for dinner makes a hearty meal
If you're confident in the moisture you don't need to add milk. You really only need to add milk when you need to add more fats to keep the meat from drying out during baking. Also, if you do this again, bake the loaf for 15 minutes, take it out, apply the glaze, bake another 15, add another layer of glaze, and repeat as needed/wanted. The oven will caramelize the sugars in the glaze and it will be sticky and delicious as it clings to the meatloaf. The more layers, the more complex the flavors. I think you'll enjoy it even more. Using the loaf pan as a mold and baking it in a sheet pan was a good call. I'm impressed you did that on your first time. I think the final dish is so much better when you bake it like that instead of in the loaf pan itself. Overall, good job! Though next time you need mashed potatoes on the side to really perfect it. ;)

Great job on your first meatloaf. I've really been enjoying watching you cook classic American recipes. I've always thought it, but your enthusiasm is infectious. When my dad made meatloaf, he would always mix some day-old rice with the meat. The most important part is topping the meatloaf with ketchup before you stick it in the oven. Tomato sauce will work in a pinch but ketchup is the absolute best. The best bites were the ones with the dried, slightly burnt ketchup. Gosh, this brings back memories ;)
Mom's recipe, 6 months ago. Use a larger bowl, and consider shredding things in with a fork. Recipe with corn flakes from US :) Bread pans work well. Fresh eat as a meal, then chill leftovers and slice as sandwich meat :) You did fine, and made my favorite food. For a tighter shape mix the eggs and wet ingredients into the meat and then shred the bread in using a fork. The better it is mixed the more consistently it will hold together. Also, consider less oil on the bottom as you will always get fat off the meat
Now take the "American" bread, and make a meatloaf sandwich. Great way to enjoy left over meatloaf. Great Job. You Sir a a good Chef. You're already seeing ways to make it your own. Go for it; that's why there are so many variations of meatloaf. I like to add sausage to mine, and use a Lipton dried soup package. So So good. Keep up the cooking; can't wat to see what's next.
I'm a Jayhawk Wichita born & bred but now living in Colorado, and I JUST LOVE watching Andre!!!!! He has many of the same interests and views that I do. I'm so glad he's finally getting to enjoy the foods I grew up on and raised my children on. My folks were from central and western Oklahoma. Meatloaf was so often a once a week meal. BBQ a couple times a week in the summer! 😋
I have several recipes that I've added to my family's recipes (created and improved over 400 years). I have a meatloaf recipe that I've developed over 30 years. In my recipe I use A-1 sauce and honey. I also use Ritz crackers crumbled up instead of bread crumbs. Additionally, I use 60% beef and 40% pork. And last, I use a drip tray to cook so that it doesn't sit in fat while cooking.
Hello from the states! Meatloaf goes well with mashed potatoes, steamed carrots, and steamed green beans traditionally here. Season the potatoes with salt, butter, minced garllc and maybe some cheese to taste. The carrots are often served with celery salt or a butter honey glaze. The green beans are salt and peppered with minced garlic optionally. Btw, your's looked perfect when you sliced it! We also have baking pans here that we use to not only shape the loaf but also bake it in which prevents it from breaking in the middle like you experienced. Love your series and figured I would answer some of your questions hopefully!
I use two eggs,Italian bread crumbs and one to two packets of Lipton onion soup mix, I asked family ,if they wanted turkey or pot roast for Christmas, they said nether one, they want a meatloaf dinner.
When making a meatloaf typically before you put the meatloaf in the oven you make an indention lengthwise in the middle of the meat and then add glaze or tomato mixture and then bake until ready. But essentially the only way to ruin a meatloaf is if it becomes a brick or a piece of charcoal

There are as many recipes for meatloaf in USA as there are family surnames. I use ground beef and ground pork, bread crumbs, chopped onion, green bell pepper and garlic, eggs, Worcestershire sauce, yellow mustard, salt and pepper. Out it in a large bread pan and top with a sauce of ketchup, mustard, chopped onion and black pepper. Bake 359° for 35-40 min.

Mashed potatoes are excellent as a side dish with meat loaf. There’s no need to add milk or butter to your meat loaf as it’s cooking. When my 3 girls were growing I added chopped green chilies to my part but they didn’t like them so I didn’t add it to their part. Now that they’re grown and gone I can add them to the entire meat loaf. You can also use oats instead of bread crumbs.
A couple of things - meatloaf often cracks like that. Don't handle the mixture too much or it will get tough. I break the meat apart with a fork and whisk the eggs before combining the ingredients. It's just easier. And yes, it does produce a lot of grease. Great job!
5:19 Barbecue sauce takes place of tomato sauce or ketchup. 6:16 You need a larger bowl. It will make mixing so much easier. Also rubber kitchen gloves keep your hands from smelling of onion. 6:52 I would suggest a baking sheet, covered in parchment paper (or tinfoil, with edges rolled on sides to direct grease away from the loaf). I prefer parchment because it soaks up grease, making the meat loaf tastier and healthier for you.
With meatloaf people typically eat it with mashed potatoes or macaroni and cheese or even a baked potato or rice and some people like gravy on the mashed potatoes or rice and also people eat a vegetable with it like peas, carrots, broccoli, corn, green beans etc. there are so many different styles of meatloaf, but the one you made is more on the traditional side. Meatloaf is a type of American comfort food, but it’s interesting seeing you try some of the American recipes that many may not know of and yes, it’s origins are European.
@ Yes some people do macaroni and cheese with peas or broccoli or whatever vegetable and meatloaf. Some do rice with gravy and a vegetable, so it depends on who makes it.
My personal favorite is the version with shredded cheese, wrapped in bacon with the brown sugar tomato sauce glaze. Served with garlic mashed potatoes, succotash and buttermilk biscuits.😋
We had meatloaf last week. I split the meat into two one pound loafs. We eat one and freeze one for later. I also add ketchup rather than BBQ sauce. The best part about meatloaf is you can mix in what you like! We love watching!
Since there are only 2 of us at home, I make a "family size" meatloaf recipe that uses 2 pounds of meat. Divide it into 4 loaves. Cook them. Have one for supper and freeze the rest for later. It's very nice to have homemade food that is ready to heat up when you don't feel like cooking.
I'm single. I'll make a double batch and do one loaf. The other half I make into burgers and freeze them and just take one or two out at a time. Sometimes I do both batches that way. Many of my friends who aren't great at finishing leftovers have adopted my method. 😊
About 60 years ago when I was a girl I sent away for a cookbook that was offered free on a flour package I think. I still have the recipe somewhere but haven’t made it that way in ages. The idea was to interest kids in cooking. One ingredient I have never seen used in any other recipes was a small can of vegetables. Drained. I think it was peas and carrots but might have been mixed vegetables. They were diced. One half to one cup size can. The mixture was put in cupcake pans which makes for handy leftovers. Just freeze and reheat the amount you want. Something about the veggies made the meatloaf really moist and flavorful. It was the first time I ever had meatloaf as my mom never made it. I thought it was delicious. The next time I encountered meatloaf was in a public school cafeteria in Houston, Texas. It was served by the slice with this amazing sauce that was the color of Thousand Island salad dressing. That sauce elevated simple meatloaf to another level of dining to my rural tastebuds.
@doriskoons531 I finely minced onion, celery and carrot. Saute that, let it cool, and add to my meatloaf, along with egg, fresh breadcrumbs and a bit of milk.
If you want a smaller meatloaf (about 1/2 the size you made), here’s a good basic recipe to get you started. Then you can tweak it to your own liking with different ingredients if you wish. This one is called the Quaker Oats Prize-Winning Meatloaf. For this recipe, your Portuguese bowl should be plenty big enough. Ingredients 1-1/2 pounds lean ground beef 1 cup tomato juice or tomato sauce 3/4 cup Quaker® Oats (quick or old fashioned, uncooked) 1 egg or 2 egg whites, lightly beaten 1/4 cup chopped onion 1/2 teaspoon salt (optional) 1/4 teaspoon black pepper Cooking Instructions Heat oven to 350°F. In large bowl, combine all ingredients, mixing lightly but thoroughly. Press into 8 x 4-inch loaf pan. Bake 1 hour to medium (160°F) doneness until not pink in center and juices show no pink color. Let stand 5 minutes; drain off any juices before slicing.

We add red, orange, or yellow bell peppers(capsicums) to my family’s recipe with the onions. Some people add bread crumbs to help the meatloaf stick together. Sometimes the egg is good enough to hold it together.

7:20 you scared me for a moment I thought you were talking about putting it in the oven with the plastic wrap still there lol glad I trusted the process and you moved it to a different pan :D if you have a meat grinder you can also add some ground up bacon meat to the meatloaf; just made sure to add a little bit more bread crumbs to help absorb some of the fat ^_^
Meatloaf, mashed potatoes (with gravy) and green beans (or tossed salad) is THEE comfort food of most Americans. When I have this meal I immediately think of my mother. It's like a warm hug.
Born and raised American, here, 69 years old. My mom made this all my life. I learned to make it. It's an American staple food and you nailed it! You did a great job. Sometimes, when I make a too large amount of meat loaf I just make a mound of it on a sheet pan, shape it as well as I can and cook it like that. No loaf pan. Works fine. On the question of Should I add milk? that's the beauty of Meat Loaf. You can experiment with (some) ingredients. Try it with milk, see how you like it.
Meatloaf was always my specialty. I used to make it at work a lot for our crew. I had people coming from other areas of the plant, telling me, "Next time you make meatloaf, let me know. From what I've heard, I really want to try it." I always got creative with it. Sometimes I'd put cheese in it or add some mayo and ketchup to the mix. I always cut the ground beef with some type of ground sausage to up the flavor and texture. I also liked diced green peppers in it. I also cook it in the smoker. Mmmmmmmm. So good.
I use a meatloaf specific pan that keeps the shape and juice in together better! And I usually do more ketchup than BBQ for the sauce. For sides, southern green beans, mashed potatoes, homemade rolls, coleslaw, various veggies like cooked carrots or something, homemade macaroni and cheese - there are a lot of ways to enjoy a good meatloaf!

Meatloaf no ketchup on top. Mashed potatoes and gravy. Corn or asparagus or candied carrots.,,then you make it a hot sandwich ( butter the bread on both aides,put the meat between the two slices. Place creamed potatoes next to sandwiches pour gravy over both. Save room for the candied carrots on there too. Now a big glass of iced tea and you can eat

Meatloaf can be good made from just ground beef, but the best meatloaf is nade from a mix of ground beef, ground veal, and ground pork. In American grocery stores, you can even find all 3 ground meats in a mix called "meatloaf mix" or sometimes "meatball mix" that contains all 3 of beef, pork, and veal.
As some have said you can find different variations of meatloaf. I make mine with ground beef, crushed cornflakes cereal instead of bread crumbs, ketchup, egg and onions. Cover the top with a mixture of brown sugar, mustard and ketchup. Make them in single serving balls about the size of your palm. Serve with mash potatoes and broccoli and cheese. I love your cooking videos. You are so funny. I am happy you are enjoying American food.
I'm from the Midwest in the US. There are as many recipes for meatloaf as there are families. I recommend putting in a splash of milk to keep the loaf moist. Also I use onion, garlic, along with salt and pepper. As far as glazing goes - i usually apply the first coating of glaze about 45 minutes into cooking and then every 10 minutes thereafter to build up a nice coating. Good job for your first meatloaf.
Meatloaf is such a comfort food. I know the name can sound really unappealing, but as you've discovered, it's just meat mixed with spices and baked with a sauce on top... sort of like uncased sausage. When meatloaf is made well-- juicy, well seasoned, etc.--- it is DELICIOUS. Eat it with some mashed potatoes and some roasted vegetables, and you have a very delicious dinner. :D I LOVE watching your cooking videos. It makes me so happy to see you enjoy food that I've grown up with as some of my favorite comfort foods!
#7 North Dakota here. Cooking 40 years, 30 professionally. Cracking of meatloaf is totally natural. It shrinks as it cooks. I can't describe how I do it at work. At home we love lots of surface meat loaf so I would make 2 square loaves in that pan. Give it a natural place to crack.
First a much bigger bowl. Yes worcestershire, just 2 tbsps for 2 lbs, ok with bbq sauce just a little (prefer soy sauce). Eggs, bread crumbs (toast potatoe bread) , and just a touch of heavy whipping cream and the spice/herbs you want (I like sage). You need a big container so that you are not mashing the ingredients, but simply folding them together. Pre scramble the eggs. And I like to bake it in a bread pan.
Ground beef looks great. USA also sells a combination of beef, veal and pork used often to make meatloaf. Mashed potatoes and gravy are my go to sides. Could have been baked in the loaf pan. Didn't need to transfer to glass baking dish.
The grease would have come up the sides and spilled all over the oven, causing a fire and we would have been able to see a Portuguese firefighter! But true, needed two loaf pans.

Not all choppers like that are made equal. If you have home stores, kitchen stores, or places like Target get one of those there. Pay more money. The one you're using will never work because the blades are supposed to make a quarter turn or so while you're chopping with it. It's just a malfunction with a cheap product - its not turning so you're just chopping the same point and jamming it further into the gadget. $10 should get you a decent one. We tend to bake our meatloaves in a bread loaf pan, that's how they keep their shape and how they got their name - and I mean like an American bread loaf pan. I also think your fat ratio was ok, if its too dry it will just fall apart and be, well, dry. Milk is an either or kind of thing. Its only going to affect the way the meat is held together. You should try a few recipes for this. There are millions of meatloaf recipes out there. I like ones that include lamb. Your veggies should also be a little more well chopped, but we understand that situation :) This can also be a nice sneaky way to get your baby to eat some more veggies when he's older. Lots of people put carrots in their meatloaf, you could sneak in other things too.
Meatloaf is one of my favorite things to make. I cover the top in bacon and slather it all with ketchup, bake it until the bacon is crispy and the meat all cooked (you usually have to drain the fat a time or two), cut it in slices and cover it even more ketchup. Heinz, of course. And then when it’s cold in the fridge, you cut good slices and make sandwiches with spicy brown mustard. Amazing, my friends!

Meatloaf is typically served with potatoes and a vegetable. You could do mashed, baked or roasted, either would be good with meatloaf, and whatever vegetable.

I usually make about 5 meatloaves at a time and freeze them in vacuum sealed bags in the freezer. In these bags, they will last for 5+ years. Then, whenever I want that for supper, just take it out of the freezer and heat it up! I'm SO proud of you for taking on these tasks. You will learn a LOT and will continue to amazing yourself and your lady!!! Thanks for your reactions!!!

It gets even better the next day Andre! The flavors meld overnight in the fridge. Make a meatloaf sandwich tomorrow. Lightly toast some bread, add cheese, bacon... Yum. As a NY Italian, I use the Holy Trinity (beef, pork, veal) ground meats together. And now, watching this, we're having this for dinner. Keep up the awesome videos! Mashed potato pie would go great with that. Cut about 4 to 6 potatoes into 2 inch cubes, put in pot with a tablespoon of salt, cover, bring to boil, when it starts to boil turn temp down low to simmer (where the bubbles come up real gentle). Simmer about 10 to 20 min, or more until you stick knife or fork into a piece and they don't stick. Test several pieces. Drain and put back in pot (stove off at this point). While those taters are simmering get another pot on stove. Heat on medium heat about 1/2 cup heavy cream, and half a stick of butter and a pinch of salt till it starts to want to bubble over. Stir often. You have to watch over this pot so it doesn't boil over. When it starts to hint at getting bubbly, stir and lower temp to very low and keep stirring a min or two. Then turn off heat. Go back to the potato pot, put in a handful of grated Parmesan cheese pour 1/3 of cream in and mash until it starts to get incorporated. Do this with another 1/3rd until it's all mixed. Don't over mix. You can make it as lumpy or smooth as you want. Then put in a small baking dish. I like to like mine with non stick foil to make cleanup easier. Rake a fork over the top, make some peaks all on top. Then stick it under broiler and watch it. Keep in until you start getting some brown on top and then it's done. Crispy top, fluffy taters on the inside. My family loves this pie

Meatloaf is great sliced and put on bread the next day for a sandwich, hot or cold! We don’t let things go to waste here in America. We try to find new ways to eat our left overs so we don’t get bored eating them. Your meatloaf looked so yummy Andre! You did an awesome job especially with it being your first try.
I have to feed a lot of men in my family so I always make a double batch and press my meatloaf down flat into a 9x13 pan so it’s not in loaf form, it’s more like a huge rectangle. If I’m just feeding a few then I do a regular batch and put in a loaf pan so it has that loaf shape. Meatloaf doesn’t have to be in loaf form or put into a loaf pan, just depends on how many you need to feed. The traditional way is in a loaf pan, hence where it gets its name meatloaf.
You now know more than enough recipies to host a day of Americana. Breakfast: Biscuits and gravy Lunch: Grilled Cheese and Tomato Soup Dinner: Meatloaf with mac and cheese and a roasted veg as sides. Dessert: Banana Pudding and most of this you can prep ahead of time.

You did a great job. Meatloaf always cracks so don't worry about the looks.
It was invented to stretch meat. That's why there are so many other ingredients in there and so many variations. Putting milk in it just adds more moisture, but you could also use tomato sauce or condensed soup. You can also put finely diced or grated vegetables in too.
What my family always did was mix mustard and ketchup in equal amounts and put that on the meatloaf before cooking it. We didn't put any in the mix.
You asked about side dishes. One of the classics is to bake potatoes beside the meatloaf. Wash and poke the potatoes to break the skin in a few places. Then put them straight on the rack in your oven outside the pan. If they are large enough, they will cook in the same amount of time as the meatloaf.

I'm in America watching you make meatloaf. I haven't made meatloaf since my husband passed away. I like my own meatloaf better than any other. My husband, who never really liked meatloaf until he tried mine, raved about it every time I made it. When we had the first meatloaf meal, it was served with baked potatoes and green beans. Often, I would make a double-size meatloaf so we could have meatloaf sandwiches for lunches, too.

In my opinion the perfect accompaniment to meatloaf is scalloped potatoes, which happens to be the perfect thing to cook along with your meatloaf. The two dishes will spend almost the same amount of time in the oven and bake at the same temperature. And if your oven is big enough you can also add a tray of your favorite roasted vegetables. I like parmesan garlic Brussel sprouts alongside my meatloaf and scalloped potatoes.
potatoes is a classic side dish for meatloaf. my mom used to mash the potatoes like 85% so there's just a bit of lumpiness, salt pepper butter bit of milk, done. can't wait to go home in a few days for christmas, gonna get some mom made food. a very merry christmas indeed

@@european-reacts classic American meatloaf, mixture of beef and pork with diced vegetables like onions, celery, carrots, cooked rice and your favorite seasoning mix formed into a loaf and baked in a casserole dish with tomato sauce on top. When I make my meatloaf, I use about 5 lbs of meat.
You asked for recipe requests, get a large flank steak and pound it out to form a thin layer about the size of your cutting board you always have next to your stove. Cut long strips of vegetables like celery, zucchini squash, asparagus. Anything you like and a layer of ricotta cheese. Roll it up and tie it tight with butcher's twine and also tie the ends shut to keep everything inside. Brown it on all sides then put it into a baking pan and bake to desired wellness then cover with spaghetti sauce and bake about 10 minutes more to heat the sauce then sprinkle grated cheese on top and cut into slices and remove strings before serving.
Fun fact: the veggies were added as a way to "extend" [or use less of] the meat, as it was a bit of a depression / wartime dish. So, to make it last, they'd mix in diced or grated bits of cheaper vegetables (onions, carrots, peppers, etc.) to make the more expensive meat last longer. And then they realized, "well, actually, this tastes pretty damn good," and kept making it with vegetables and such in it... ^_^

I hate crunchy onions, so I cook my onions before I put them in the bowl to mix in. Otherwise, very traditional recipe. Looks great!

Just a recommendation from a long time meat loaf lover and regular maker. Instead of all beef use a ratio of 2lb beef and 1lb ground pork. Another alternative is a 3-2-1 ratio of beef, pork and veal, 3lb a real sweet spot for meatloaf size. Having a good loaf pan with a removable insert that will allow the grease to collect in the bottom also is great!
"3-2-1 ratio of beef, pork and veal" is the Salisbury meat patty recipe. Its just the best.
Meatloaf is a very versatile dish. You can use any ground meat or a combination of ground meats of your choice. My favorite is half pork sausage and half ground beef. You can use bread , crackers, or cereal like wheaties, corn flakes, etc. some people like ketchup or tomato sauce over the top during baking. I also prefer to add fine diced carrots,celery, and bell pepper along with the onion. Seasonings can also vary to your imagination/ taste. Enjoy!
I'm a ketchup boy. When it bakes into the top it's pretty good. I like to dip it into a small pool of A1 sauce. Not a lot.
Meatloaf is one of those things that are both undeniably American and so varied that there is no singular recipe, even from house to house within the smallest of towns. My wife's meatloaf includes a layer of scramble eggs in the middle and gets seasoned through with sauteed garlic, dried rosemary and oregano, then glazed with a sauce made of tomato paste, yellow mustard, honey, brown sugar, and chipotle chili powder. Last time time she made it was 3 weeks ago. It's an absolute masterpiece, but it's only one of hundreds of thousands of recipes for this humble-looking dish.
Heinz makes an okay barbecue sauce. If you want a *_really_* good barbecue sauce, go online and order some Sweet Baby Ray's. It doesn't matter what variety, because they're all 10 out of 7. And yes, that was your number. 😉
That tasting reaction says it all. When you come across a good recipe, meatloaf is pure comfort on a plate. Your wife, and possibly your neighbors, are going to be so happy you discovered it. And yes, you should serve it with a side of potatoes of some sort, whether baked potatoes, mashed, fries, scalloped, Hasselback, or fondant potatoes. I prefer baked potatoes, myself, but any of them would work.

I use half breakfast sausage and half ground beef in mine. I also add milk to the breadcrumbs before using them. Meatloaf can get dry easily, and adding the milk helps keep it moist.

There seems to be a piece missing in the machine. It is a disc with slots for the blades the keeps the onion from getting stuck. You are a crazy Portuguese man, but we definitely enjoy watching. You should let us see how your wife reacts to these recipes. Meatloaf goes great with mashed potatoes and green beans.
Agreed, I had a original "slapchop" with the best tag line "you're gonna love my nuts!" Cause he chops nuts. And it had a piece in the top that stopped stuff from getting stuck.
Still a shitty product and a proficient knife user could do it in the same time.

Actually, that chopper is complete, but you must slice the onion, then use this chopper to cut it in small pieces. I had one exactly like it. I have a different one with better blades, but you still need to slice the onion first.
We had it with mashed potatoes and corn. I always mixed my corn and potatoes together...memories of childhood!

-The best BBQ sauce from the store is Baby Rays.
- Suggestion: Mix equal parts ground beef and ground pork - I also add crushed garlic.
- Line your pan with parchment paper/ aluminum foil and the cleanup is easier.
- I've never seen that brand of bread.
- As Americans, we enjoy clogged arteries; layer bacon / ketchup/ the sauce you made thickly on the top of the meatloaf and then cook. It carmelizes the sugars.
-Meatloaf goes well with potatoes or rice and steamed vegetables.
- Americans with tastebuds don't drink Starbucks ... ugh.

I actually rather like Heinz BBQ sauce because they make a version without fake smoke flavor which I dislike a lot and most other brands except Open Pit have. If you want smoke flavor, some pureed (canned) chipotle chiles in adobo will do it (chipotles are smoked jalapenos).
The other sauce is Wu-stir-sheer (proving its Chinese origin).
Meatloaf GRAVY is super good but must be spooned over MASHED potatoes.

If you have a loaf pan your meat loaf will have less chance for the break but either way it will be just a tasty Usually we serve with mashed potatoes and another vegetable as a side dish.
Cold meatloaf sandwiches were my favorite lunch as a kid. If I opened my lunchbox and discovered Mom made me a meatloaf sandwich with ketchup and spicy pickles, I was practically bouncing with joy on the bench.

so my family makes our own meatloaf, with a few differences, one, we dont use BBQ sauce, makes it 'too' sweet, we use tomato sauce instead, and when we do that we get an 8oz can, pout half in it and then once its all mixed up, pour the other half on top. It's really good that way and you wanna save the BBQ sauce for the ribs. And two, bake it in a ceramic bread pan, and put it on top of a baking tray then bake it that way, yes it will get a little messy but its worth it also, to avoid air bubbles, make sure to stick your finger down into each corner before squishing it back into the corners from bottom to the top. Then you make some brown gravy(make sure to look up american brown gravy for this one gravy can be different things depending on where you are at in the US) and mashed potatoes (with milk and butter) and once the meatloaf is done, slice it, put it down with your mashed potatoes (you can add a choice of veggies for the side) and pour brown gravy all over it...its so good...

That's funny ! When we got married I didn't have a pan big enough but I had a double heart shaped cake pan and so I baked it in that. Just used ketchup right out of the bottle and "decorated it. " Made with love !"
For my son in law, I made a two layer meatloaf " cake" iced with mashed potatoes and decorated with ketchup. He loved it!

Nailed it. This is pretty much how I make it, but use ketchup instead of bbq sauce and I bake it on a rack in a baking sheet to keep the meat out of the fat/liquid so the bottom isn't soggy. Make sure to drain off the fat from the sheet as a lot of fat and liquid comes out. You can also use a rack in a roasting pan with higher sides - but I like the no sides so the outside gets nice and crusty. I think I learned this from the esteemed Mr. Alton Brown on one of his Good Eats episodes. I usually have it with mashed potatoes and gravy and green beans as veg sometimes mac and cheese instead of potato. One other tip - don't mix the meat too much it affects the texture, just enough to combine everything. Oh - one more thing, I use some ground pork with the ground beef in equal parts. I have been making meatloaf for over 25 years and just started adding pork about a year ago, what a difference it makes to the taste. Great video again! I think I'm making meatloaf tomorrow.
As a natural born American I make meatloaf for my family for dinner once or twice a month. They love my meatloaf. You can use whatever ingredients you have on hand or use the same exact ingredients each time you make a meatloaf. I always use finely smashed cracker crumbs eggs diced onion and a bit of milk. I never substitute bread for cracker crumbs so my meatloaf tastes the same everytime I make it. Meatloaf and potatoes for dinner makes a hearty meal
I'm a cracker person as well. Bread gets clumpy, bread crumbs are too soft, and oatmeal...bleh! 😂
I added diced cheese to this, but substituted herbed croutons crumbled into the recipe for the crackers.
Potatoes, yes. With meatloaf, I like them mashed.
If you're confident in the moisture you don't need to add milk. You really only need to add milk when you need to add more fats to keep the meat from drying out during baking. Also, if you do this again, bake the loaf for 15 minutes, take it out, apply the glaze, bake another 15, add another layer of glaze, and repeat as needed/wanted. The oven will caramelize the sugars in the glaze and it will be sticky and delicious as it clings to the meatloaf. The more layers, the more complex the flavors. I think you'll enjoy it even more.
Using the loaf pan as a mold and baking it in a sheet pan was a good call. I'm impressed you did that on your first time. I think the final dish is so much better when you bake it like that instead of in the loaf pan itself. Overall, good job! Though next time you need mashed potatoes on the side to really perfect it. ;)

Great job on your first meatloaf. I've really been enjoying watching you cook classic American recipes. I've always thought it, but your enthusiasm is infectious. When my dad made meatloaf, he would always mix some day-old rice with the meat. The most important part is topping the meatloaf with ketchup before you stick it in the oven. Tomato sauce will work in a pinch but ketchup is the absolute best. The best bites were the ones with the dried, slightly burnt ketchup. Gosh, this brings back memories ;)

For a tighter shape mix the eggs and wet ingredients into the meat and then shred the bread in using a fork. The better it is mixed the more consistently it will hold together.
Also, consider less oil on the bottom as you will always get fat off the meat

I have several recipes that I've added to my family's recipes (created and improved over 400 years). I have a meatloaf recipe that I've developed over 30 years.
In my recipe I use A-1 sauce and honey. I also use Ritz crackers crumbled up instead of bread crumbs. Additionally, I use 60% beef and 40% pork. And last, I use a drip tray to cook so that it doesn't sit in fat while cooking.

Hello from the states! Meatloaf goes well with mashed potatoes, steamed carrots, and steamed green beans traditionally here. Season the potatoes with salt, butter, minced garllc and maybe some cheese to taste. The carrots are often served with celery salt or a butter honey glaze. The green beans are salt and peppered with minced garlic optionally. Btw, your's looked perfect when you sliced it!
We also have baking pans here that we use to not only shape the loaf but also bake it in which prevents it from breaking in the middle like you experienced. Love your series and figured I would answer some of your questions hopefully!
I add a little milk or cream to my meatloaf and meatball mixture. Hydrates the breadcrumbs and keeps the final product from being dry.
I use a mixture of ground beef and either ground pork or pork sausage.
I add sour cream and a little bit of milk
2 eggs, 2 pieces of bread (good use of the heels) and a little milk (plus all the secret ingredients - shh, family secret!) makes the best meatloaf!

Soak the bread crumbs in the milk first. Mom always used sage. Everyone has their own twist. I also like to throw in some parmesan cheese.
When making a meatloaf typically before you put the meatloaf in the oven you make an indention lengthwise in the middle of the meat and then add glaze or tomato mixture and then bake until ready.
But essentially the only way to ruin a meatloaf is if it becomes a brick or a piece of charcoal

There are as many recipes for meatloaf in USA as there are family surnames. I use ground beef and ground pork, bread crumbs, chopped onion, green bell pepper and garlic, eggs, Worcestershire sauce, yellow mustard, salt and pepper. Out it in a large bread pan and top with a sauce of ketchup, mustard, chopped onion and black pepper. Bake 359° for 35-40 min.
Growing up my Mom always used half breadcrumbs and half rolled oats. That is the only difference I recall.
My meatloaf is ground beef and ground lamb and crushed Ritz crackers instead of breadcrumbs and BBQ sauce on top for the last 10 minutes.
We use crushed sleeves of Saltines. No peppers but plenty of onion and a Pk of Lipton Onion Soup mix

Mashed potatoes are excellent as a side dish with meat loaf. There’s no need to add milk or butter to your meat loaf as it’s cooking. When my 3 girls were growing I added chopped green chilies to my part but they didn’t like them so I didn’t add it to their part. Now that they’re grown and gone I can add them to the entire meat loaf. You can also use oats instead of bread crumbs.

A couple of things - meatloaf often cracks like that. Don't handle the mixture too much or it will get tough. I break the meat apart with a fork and whisk the eggs before combining the ingredients. It's just easier. And yes, it does produce a lot of grease. Great job!
I drain the grease off as soon it gets out of the oven. If it sits it'll suck up the grease

6:52 I would suggest a baking sheet, covered in parchment paper (or tinfoil, with edges rolled on sides to direct grease away from the loaf). I prefer parchment because it soaks up grease, making the meat loaf tastier and healthier for you.
With meatloaf people typically eat it with mashed potatoes or macaroni and cheese or even a baked potato or rice and some people like gravy on the mashed potatoes or rice and also people eat a vegetable with it like peas, carrots, broccoli, corn, green beans etc. there are so many different styles of meatloaf, but the one you made is more on the traditional side. Meatloaf is a type of American comfort food, but it’s interesting seeing you try some of the American recipes that many may not know of and yes, it’s origins are European.

Yes some people do macaroni and cheese with peas or broccoli or whatever vegetable and meatloaf. Some do rice with gravy and a vegetable, so it depends on who makes it.

My personal favorite is the version with shredded cheese, wrapped in bacon with the brown sugar tomato sauce glaze. Served with garlic mashed potatoes, succotash and buttermilk biscuits.😋
We had meatloaf last week. I split the meat into two one pound loafs. We eat one and freeze one for later. I also add ketchup rather than BBQ sauce. The best part about meatloaf is you can mix in what you like! We love watching!
Since there are only 2 of us at home, I make a "family size" meatloaf recipe that uses 2 pounds of meat. Divide it into 4 loaves. Cook them. Have one for supper and freeze the rest for later. It's very nice to have homemade food that is ready to heat up when you don't feel like cooking.
I'm single. I'll make a double batch and do one loaf. The other half I make into burgers and freeze them and just take one or two out at a time. Sometimes I do both batches that way. Many of my friends who aren't great at finishing leftovers have adopted my method. 😊
About 60 years ago when I was a girl I sent away for a cookbook that was offered free on a flour package I think. I still have the recipe somewhere but haven’t made it that way in ages.
The idea was to interest kids in cooking. One ingredient I have never seen used in any other recipes was a small can of vegetables. Drained. I think it was peas and carrots but might have been mixed vegetables. They were diced. One half to one cup size can.
The mixture was put in cupcake pans which makes for handy leftovers. Just freeze and reheat the amount you want. Something about the veggies made the meatloaf really moist and flavorful.
It was the first time I ever had meatloaf as my mom never made it. I thought it was delicious. The next time I encountered meatloaf was in a public school cafeteria in Houston, Texas. It was served by the slice with this amazing sauce that was the color of Thousand Island salad dressing. That sauce elevated simple meatloaf to another level of dining to my rural tastebuds.
@doriskoons531 I finely minced onion, celery and carrot. Saute that, let it cool, and add to my meatloaf, along with egg, fresh breadcrumbs and a bit of milk.
If you want a smaller meatloaf (about 1/2 the size you made), here’s a good basic recipe to get you started. Then you can tweak it to your own liking with different ingredients if you wish. This one is called the Quaker Oats Prize-Winning Meatloaf. For this recipe, your Portuguese bowl should be plenty big enough.
Ingredients
1-1/2 pounds lean ground beef
1 cup tomato juice or tomato sauce
3/4 cup Quaker® Oats (quick or old fashioned, uncooked)
1 egg or 2 egg whites, lightly beaten
1/4 cup chopped onion
1/2 teaspoon salt (optional)
1/4 teaspoon black pepper
Cooking Instructions
Heat oven to 350°F. In large bowl, combine all ingredients, mixing lightly but thoroughly. Press into 8 x 4-inch loaf pan. Bake 1 hour to medium (160°F) doneness until not pink in center and juices show no pink color. Let stand 5 minutes; drain off any juices before slicing.

We add red, orange, or yellow bell peppers(capsicums) to my family’s recipe with the onions. Some people add bread crumbs to help the meatloaf stick together. Sometimes the egg is good enough to hold it together.

Sometimes, when I make a too large amount of meat loaf I just make a mound of it on a sheet pan, shape it as well as I can and cook it like that. No loaf pan. Works fine.
On the question of Should I add milk? that's the beauty of Meat Loaf. You can experiment with (some) ingredients. Try it with milk, see how you like it.
Meatloaf was always my specialty. I used to make it at work a lot for our crew. I had people coming from other areas of the plant, telling me, "Next time you make meatloaf, let me know. From what I've heard, I really want to try it." I always got creative with it. Sometimes I'd put cheese in it or add some mayo and ketchup to the mix. I always cut the ground beef with some type of ground sausage to up the flavor and texture. I also liked diced green peppers in it.
I also cook it in the smoker. Mmmmmmmm. So good.

I use a meatloaf specific pan that keeps the shape and juice in together better! And I usually do more ketchup than BBQ for the sauce.
For sides, southern green beans, mashed potatoes, homemade rolls, coleslaw, various veggies like cooked carrots or something, homemade macaroni and cheese - there are a lot of ways to enjoy a good meatloaf!

Meatloaf no ketchup on top. Mashed potatoes and gravy. Corn or asparagus or candied carrots.,,then you make it a hot sandwich ( butter the bread on both aides,put the meat between the two slices. Place creamed potatoes next to sandwiches pour gravy over both. Save room for the candied carrots on there too. Now a big glass of iced tea and you can eat

Meatloaf can be good made from just ground beef, but the best meatloaf is nade from a mix of ground beef, ground veal, and ground pork. In American grocery stores, you can even find all 3 ground meats in a mix called "meatloaf mix" or sometimes "meatball mix" that contains all 3 of beef, pork, and veal.
As some have said you can find different variations of meatloaf. I make mine with ground beef, crushed cornflakes cereal instead of bread crumbs, ketchup, egg and onions. Cover the top with a mixture of brown sugar, mustard and ketchup. Make them in single serving balls about the size of your palm. Serve with mash potatoes and broccoli and cheese.

We've always used rolled oats, and seasoned with instant onion soup mix.
I'm from the Midwest in the US. There are as many recipes for meatloaf as there are families. I recommend putting in a splash of milk to keep the loaf moist. Also I use onion, garlic, along with salt and pepper. As far as glazing goes - i usually apply the first coating of glaze about 45 minutes into cooking and then every 10 minutes thereafter to build up a nice coating. Good job for your first meatloaf.
Meatloaf is such a comfort food. I know the name can sound really unappealing, but as you've discovered, it's just meat mixed with spices and baked with a sauce on top... sort of like uncased sausage. When meatloaf is made well-- juicy, well seasoned, etc.--- it is DELICIOUS. Eat it with some mashed potatoes and some roasted vegetables, and you have a very delicious dinner. :D

#7 North Dakota here. Cooking 40 years, 30 professionally. Cracking of meatloaf is totally natural. It shrinks as it cooks. I can't describe how I do it at work. At home we love lots of surface meat loaf so I would make 2 square loaves in that pan. Give it a natural place to crack.
First a much bigger bowl. Yes worcestershire, just 2 tbsps for 2 lbs, ok with bbq sauce just a little (prefer soy sauce). Eggs, bread crumbs (toast potatoe bread) , and just a touch of heavy whipping cream and the spice/herbs you want (I like sage). You need a big container so that you are not mashing the ingredients, but simply folding them together. Pre scramble the eggs. And I like to bake it in a bread pan.
Ground beef looks great. USA also sells a combination of beef, veal and pork used often to make meatloaf. Mashed potatoes and gravy are my go to sides. Could have been baked in the loaf pan. Didn't need to transfer to glass baking dish.
Or.. I mix ground meats myself. 😂
If baking in the pan, slather on some Portuguese butter or olive oil, and definitely skip the plastic wrap!
If he left it in that loaf pan it would be drowning in grease!
The grease would have come up the sides and spilled all over the oven, causing a fire and we would have been able to see a Portuguese firefighter! But true, needed two loaf pans.

Not all choppers like that are made equal. If you have home stores, kitchen stores, or places like Target get one of those there. Pay more money. The one you're using will never work because the blades are supposed to make a quarter turn or so while you're chopping with it. It's just a malfunction with a cheap product - its not turning so you're just chopping the same point and jamming it further into the gadget. $10 should get you a decent one.
We tend to bake our meatloaves in a bread loaf pan, that's how they keep their shape and how they got their name - and I mean like an American bread loaf pan. I also think your fat ratio was ok, if its too dry it will just fall apart and be, well, dry. Milk is an either or kind of thing. Its only going to affect the way the meat is held together. You should try a few recipes for this. There are millions of meatloaf recipes out there. I like ones that include lamb. Your veggies should also be a little more well chopped, but we understand that situation :) This can also be a nice sneaky way to get your baby to eat some more veggies when he's older. Lots of people put carrots in their meatloaf, you could sneak in other things too.

Meatloaf is one of my favorite things to make. I cover the top in bacon and slather it all with ketchup, bake it until the bacon is crispy and the meat all cooked (you usually have to drain the fat a time or two), cut it in slices and cover it even more ketchup. Heinz, of course.
And then when it’s cold in the fridge, you cut good slices and make sandwiches with spicy brown mustard. Amazing, my friends!
Correction: while cooking with the bacon on top, I use a ketchup/BBQ mix.

That was a very fun video. Thank you! I think meatloaf is a very personal thing in America. Everybody's meatloaf is a little different. I don't put BBQ sauce in mine, I use ketchup. But, if you and your wife like it, then it is a wonderful meatloaf.
Meatloaf is typically served with potatoes and a vegetable. You could do mashed, baked or roasted, either would be good with meatloaf, and whatever vegetable.
We always have ours with mashed potatoes and broccoli and cheese.
