500g (1.1 lbs) minced beef
1 large onion, finely chopped
2 cloves garlic, minced

1 medium egg

They look fantastic Rik. You'd be a contender in an Aussie Pie Competition with those for sure. Growing up in the 1970's - 80's I had 2 mates at different times. One during high school and the other when I was in university. Both of their fathers were pastry chefs and made delicious, yet very different, pies and sausage rolls. You've inspired me. A very nice variation, and right up your street, is the curry pie.

You certainly didn’t waste any time getting this one done. Those look great mate. A tiny pinch of cinnamon goes well and using gravy powder in milk as the thickening agent works well too. Any Aussie would be happy to eat those. Congratulations on your take on one of those recipes which can be done a million ways. Other variations include mushrooms, bacon or even a slice of tomato topped with cheese over the meat and under the pastry. I’ve done them without the top pastry but topped with an egg and cheese and my son likes them with an egg inside the meat, cheese on top then pastry. As I said, a million different ways. The pie maker we discussed works wonders, a single layer of puff pastry all round or even a double layer especially for the base adds a new dimension too. Well done!!!

Guess what I have just finished making mate; a whole batch of good old Aussie pies. I used Tomato Sauce, a good whack of Worcestershire sauce, a heap of onions, small diced potatoes and mushroom. The potatoes and mushrooms are my variation of the straight out steak pies. Just luv my Aussie meat pies mate. Tomorrow, I make the Lorne Sausage, and English Pork Pies which I also love. I'm confused. Seen a lot of 'Aussie' pie recipes lately, but as a teenager in the UK (70's), I remember buying and eating exactly those types of pies (with short bottom, puff top, mince 'n onion filler), and they weren't called Aussie back then. Am I missing something ?

I just saw a bunch of other recipes, got motivated, bought the ingredients only to realise that I need to let the short pastry thaw overnight :-( But after watching this I'm now motivated to go make it myself. Didn't look too hard. Thank you!
Wonderful! - why would the pastry have to thaw over night? Is is a huge slab? - Just stick it on the side and it will thaw use what you need and then stick it back in the freezer - well wrapped - it will be ok. Good luck on making - easy and delicious pies. Best, Rik

ive eaten more than my share of aussie pies and this looks pretty right to me. Incidentally when travelling long road trips down here we buy a couple of spare pies to throw cool on the dashboard, they are called hence dashboard pies.
