I love the pie idea. Alternative ideas: instead of button mushrooms use creminis, or even smoked creminis, then add to beef, if smoke add Everglade seasoning. Add a little chipolata or ancho pepper powder to beef. A little soy sauce could be nice. I am going to try this with alterations and report back.

That British Beef Pie looks like it belongs on my plate. Along with the thick gravy topped on your fries, if you covered that with cheese curds, you would have Poutine, which is a Canadian creation from Montreal. Popular with the young people here.

If that's not possible, mozzarella cut up in small pieces or any other soft, mild white cheese will do. A nice onion, beefy gravy with fried peppers, mushrooms, chopped bacon mixed in with oven-baked or deep-fried, crispy, seasoned, thick hand-cut fries (skin on), then at the last moment lightly mix in your cheese, so that it is just superficially melted from the heat of the fries and gravy (you can still see the cheese chunks). This should give you the best results. Similar to what is served in the best Poutine restaurant in Montreal. Accompanied by a nice craft beer of course. Looking forward to seeing you make this meal and introducing this iconic Canadian dish to your cooking fans!

I’ve also seen it where the pie is baked for a time until the crust sets a bit, then it is flipped upside down and the pie plate removed, the bottom gets egg washed and then baked for a bit longer so the bottom is more brown and flaky like the top.
Do you grease your tin before placing the meat, i find when i make pies i never get a firm bottom on my pies. I love your recipes i have a notebook and written your recipes down for future use

lovely cracking pie that Rik we bought some kidneys to make a steak and kidney pudding, probably my all time favourite, a bit of messing about making the suet pastry and steaming it but a great end result.

Miss the mushrooms out Ian - swap it for potato but cook the potato cubs for about 20 mins in with the meat then make up the pie and cook in the oven. Best, Rik
