I know it wasn't my eyes playing tricks on me!!! I had this game back in the day on Xbox. It looked so much better on Xbox I honestly can't stand the look of the PS2 version. It's got this weird grainy look to it. The textures are so much smoother on Xbox. I've literally got two windows open side by side of this PS2 version and the Xbox version to confirm.
It heavily depends on what TV you are playing it, the screen recording you are using and if you are using the Standard Cable or Component Cable (similar to HD) and eventually additional progressive scan and PS2 settings. Of course it also depends on the Video quality overall too.
I have multiple PS2's and never had the issues you are saying not even with modern TVs and I still play some PS2 games like Madden, NASCAR-Series, SSX3, NBA, NFS and such.

Interesting Nazareth is a fantasy track considering it was real and the layout was the same.
