      Devon! Did you say Yukon instead of yucca? It sounded like you said yucca in the captions then you said later about 16 minutes in that you are adding the potatoes. If it is Yukon potatoes please confirm and does it matter how you prepare the potatoes if so? Thank you for the great information and engaging clip and for your answer. I appreciate it!

      He was a joy, but that was more well done than I've ever seen anyone make a French omelet. Which, frankly, I might like better, at least at first.

    2 eggs, a whole stalk of green onions, 3 shakes of fish sauce. Cooked up omelette style and served over hot rice! Mmmm my favorite Sunday breakfast :)

    This is why I love eggs so much. They’re so versatile and with just a few additions, you can make so many different dishes. You don’t need BA’s pantry to cook eggs.

    Eggs are my favorite food in any form. Its the perfect food. Super versatile.
    I always do the shakshuka type but my fave one is a spinach egg omelette
    I havent got the gyeranjjin right. Somehow ends up super watery

    What are your thoughts on scrambling your eggs but not whisking them before pouring in the pan? You just move with the spatula in the mid heat pan. I like to cook them and see the difference between whites and yolk cooked. In Costa Rica we call those "huevos pateados" (translates to kicked eggs) and it's similar but different to French style scrambled eggs.

      I grew up on these! they're lovely and We call them "huevos arrepentidos" ( Regretful eggs) here in Mexico!

    I've seen plenty of Spanish style tortillas made like Devonn's, but never saw scallion seasoned oil before. Will have to give that a try at some point, and not just with eggs! Picture that going along with a scramble and put over rice, that would be lovely!

      For a lot of people that grew up where I did, having furikake is as basic as having soy sauce, but having something like Worcestershire sauce is rare and not basic. It’s good that this video has represented different versions of “basic” in that way 🙂

    Chris is right, they are OK alone but do best with some support. Even Brad's lovely, simple omelet could really use some cheese imo.

      i'm normally not one of those "if you make this you have to get the ingredients at a farmers' market or fancy grocery store" people bc i think that's unrealistic for average income people for many dishes, but for french omelettes you NEED great butter & fresh, farm raised eggs. it makes such a massive difference. a french omelette with just eggs, butter, salt, and chives is perfect as is when you get good ingredients. doesn't need anything else

      and since brad has his own chickens and can probably get fresh butter pretty easily (if not, kerrygold is good), it's easier for him to make a great french omelette than most people
