I personally cut a quarter maybe half of my chicken breast and added it. A way to make it so flavourful cut 3-4 deep cuts a bit separated from each other then get your salt and all your things then put them inside your cuts, it made it so flavourful and tender.
Do you know how to use that thermometer? Do you get the measurements right after you cook it? After about a minute, for me, the temperature began to drop from 180 to 140. Is that ok?

If you're looking for a healthier alternative I'd suggest coconut oil? Otherwise olive oil is fine. You're not deep frying so the heat point isn't so high.
