I am retired and enjoyed a career which allowed me to experience fine dining in many of best locations. Chef Billy makes it possible for me to attempt cooking in that same style at home. He is the best at explaining techniques and recipes in everyday terms. I am no chef, but getting excited to try cooking like Chef Billy. Thank You!
Thank you so much for this. This is one of the first cooking videos I've seen that is ACTUALLY good for beginners, and it felt very comforting having every single thing that I felt confused about clearly explained to me. A lot of people seem to take cooking knowledge for granted, so they don't even bother teaching about the basics like which oil and pan to use. So thank you :)
*@**3:06** I take video to store, they say pan is mild steel not cast iron. I say "no way", they pull out exact pan, say "here you go". I make chicken. Delicious, thank you. Steel great.*
Just made it for dinner and I never thought I could make chicken breast this juicy! It was delicious, I am making chicken like this from now on. You are the best! Thank you chef!!!
I’ve been coming back to this about once every couple weeks when we have chicken breasts. This has become my standard go-to method! Always tastes great, is never dry, and the cast iron sear takes it to the next level. And one pan - bless 👏🏻
As a white American I can say that when my mom and I cook chicken we generally cook it on high for 4 minutes then flip it over and cook for 3-4 minutes again. Don't worry about the oven, haha.
Great advise, thank you. I fry my chicken the same way but in a non stick pan. I am older and the iron pan is too heavy for me. I just brown the chicken as you did, on slightly higher than med. heat, then place a lid over it and turn the temperature to low, bake it this way for about 10-15 minutes, depending on chicken breast size. It's so nice and juicy and saves electricity.
Oh! That's a good idea. I have to make more than 2 breasts and my pan handle won't fit in the oven! Plus, we po'. We can only afford the non-natural huge chicken breasts! So I need a bigger pan! 🤣
I too have trouble with heavy pans. Rather than Le Creuset, try Emile Henry (baking dishes, Dutch ovens, pots, non-cookware items as well). Much lighter in weight, cook beautifully, and clean up is a dream!
I literally never go back and comment on videos after I try the recipe but I can confirm this recipe is 100% full proof. I cooked about 8 breast for the week with this method and every single one of them came out fully cooked and juicy as ever.
I used a cast -iron pan, olive oil, same size chicken breasts as the demonstration. Do EXACTLY what he says, start to finish, and it will come out perfect. I use the word perfect because there isn’t a better word. Absolute keeper.
I've made this so many times now and it always comes out delicious, I've changed up the pan sauce quite a bit each time and it's still such a great tasting recipe. Thank you!
Perfect. Coming off 18 years of vegetarianism, I wondered if it was going to be a pain in the arse. Listened to at 2x speed and 5min later, the chicken is already in the oven and seared perfectly. Thank you!
Just tried this recipe for the first time. Didn’t quite get the crust 100% and overcooked the chicken a bit, but my goodness was the pan sauce tasty. Definitely gonna keep practicing it.
So, we are trying to eat healthier here at our house, and we are doing a lot of meal prep. Now, we are also doing it for all four out of five of our kids (as the fifth is still a toddler). I’ve been cooking large batches of proteins, but this has totally changed the way I cook chicken! Super easy and tastes amazing!!! Thank you so much!! Subscribed!!
Bravo! Just Wow!!! This is by far the best and most informative (not to mention easy to follow) tutorial on chicken breasts I’ve seen. I do not eat meat, but my husband does - and cooking meats is an odyssey for me. But not after watching this video! Thanks for sharing. I can’t wait to make it for my husband.
I have followed your instructions for cooking chicken (on the stove top and then finish in the oven) twice in as many days and I'm ecstatic at the result. Thanks for the video!
I made this tonight. I shy away from chicken breast because most of the time mine comes out boring. This was just delicious, moist and full of flavor. Very easy and a great dish.
This, hands down, is the best pan seared chicken recipe I have ever tasted. My husband and kids wants it again... we just had it for dinner about 10 mins ago. lol Great recipe!! -So simple, so flavorful!!
Just made this for dinner and it turned out juicy and delicious, topped over pasta with cherry tomatoes and my husband and I loved it. I usually seem to overcook and dry out the meats, so all your tips were so helpful. On the top of that the chicken didn’t stick to my stainless steel pan for the first time in forever! Thank you!
I just cooked chicken breasts for me and my wife using this recipe. Came out beautifully. I used my fairly new Matfer Bourgeat carbon steel pan. Pan did a great job. Thank you for the recipe.
Made this.. didn't do it exactly.. messed up a few steps but it still tasted delicious!!!! I don't even like chicken breast usually... but this was the best chicken breast I ever ate and to think I cooked it myself.. it was a proud moment. =D
I like the fact that your instructions are not so rigid, you give me various options. Others make me feel so bad that I don't have a cast iron pan 😂😂😂.
I look back at this video and use this method every time I make chicken; it’s without a doubt the BEST chicken I’ve ever had and probably will have; thank you bro😭
I really appreciate you putting the steps and ingredients in the description! Too many times I've tried following along others videos only to realize I forgot to add something to my grocery list.
I have literally never cooked before as of being 23 years old besides eggs, I’ve been lucky enough to have a fiancé that has done all the cooking for me and our children for the last almost 4 years now. Tonight she was out dress shopping for bridesmaids and I had to figure out something quick to make for the kids. I was able to make it almost perfectly! The kids ate it up and my fiancee came home and made sure to let me know that the chicken definitely didn’t come out dry😂 thanks for helping me out!!
Thank you for this recipe! It was the first time I cooked chicken breasts that weren't dried out. My husband raved over this dish; I will be making often.
Thank you for this video, I don’t cook chicken much anymore due to me not being able to cook it properly. I just tried this method and it came out great!!
Totally agree with you Chef Billy as soon as I watched your video I subscribed to your channel as this is exactly the way I cook chicken breast every time and I have never failed to have the most tastiest juicy chicken every time 👌 spot on. I am looking forward to try your sauce thank you for sharing your knowledge 👍👏👏
I was watching the beginning of the video and was about to come to the comments to say something like, "this may work but let me tell you the best way to cook chicken breasts" and then he's putting them into a 375 degree oven for 10-12 minutes and I'm slapping my forehead because that's it, that's the best way to cook chicken breast, you nailed it.
Thank you. My chicken breast was lovely and moist. I put it with your Caesar salad and dressed it with your dressing. My husband the night before, had attended a dinner at a very expensive restaurant. His approval : so much better than the meal he had at the restaurant. So thank you Billy.
Literally the best cooking video I've seen. Not only did you explain everything and the actual reasoning behind it but also gave me confidence! Thanks!

This was great!! I’ve never been able to make chicken breast without almost choking on it. This was so good and so simple and it made the best new prepped chicken. The sauce was delicious! I would love a recipe with a creamier sauce for the chicken. But this was 10 out of 10. Thank you
I don't cook at all. But tonight I thought I might try chicken. Everything went exactly the way it should and it was superb. Thank you! And I'm proud of being able to do it.

If you ever want to add a little spicy kick, when you season with your salt and pepper, you can also add paprika or red pepper flakes and then cook it and it tastes absolutely amazing. A little spice to a fantastic stable of a protein.

Hi Chef. Great recipe. I understand the purpose of resting the chicken, chop, steak, etc but my hubby complains that the meat is only warm and not hot. I tent with foil but it doesn't really help it stay that warm. Any suggestions? Thank you.😎🌵
10 to 12 minutes in the oven is quite a lot, the 3 to 4 minutes to brown I agree with, but once they go in the oven I only give them another 6, then they're rested for 10 minutes. They're fully cooked through and juicy. It's the only thing I disagree on, otherwise I think this is one of the best instructional vids on the simple chicken breast. Nice!
I've been making them this way for years. You basically just treat the chicken like a nice cut of filet mignon. Don't even need to baste. The sauce reduction in the end is a must, but sometimes I just drizzle the juice as is on the chicken. So many people cook chicken the wrong way.
You are exactly right. I grew up in a farm and chickens are not that large. When I purchased chicken breasts from Fresh Market, my brother always complained that I brought darn ole rooster again. Lol

Thanks so much Chef Billy. It's always been a bucket list item for me to make juicy chicken breast. My guests LOVED it
I made them. They turned out great. Thank you for the recipe!
Wow… this worked perfectly! Thank you! No more rubber chicken dinners.
I like the way you proceed the video
Looks so tasty!! I love this. Learned a lot
Thanks a lot 😊
I've been making them this way for years. You basically just treat the chicken like a nice cut of filet mignon. Don't even need to baste. The sauce reduction in the end is a must, but sometimes I just drizzle the juice as is on the chicken. So many people cook chicken the wrong way.
Let it rest on a plate so you can pour the resting juices back into the sauce
I tried it and it was so delicious. Best chicken breast I’ve ever done
Perfection Chef! That pan sauce... oh my! 😋
All about those classic techniques my friend!
Chef Billy Parisi I’m so used to my Latin ways! Learning a lot from you!
@@BelquisTwist Nothing wrong with that, I'm sure I would learn a ton from you!
Chef Billy Parisi one day, can be far in the future but I’d love to cook with you.
@@BelquisTwist Agreed! Have to get Steve in on this too!
You are exactly right. I grew up in a farm and chickens are not that large. When I purchased chicken breasts from Fresh Market, my brother always complained that I brought darn ole rooster again. Lol
Pan searing needs an oven??? We don’t have ovens - flatten it to cook through ;) save some energy.
Great recipe again, Many thanks
