    Southern Italians typically used an eggless pasta because it was easier to store and wouldn't spoil as quickly. In Northern Italy, with its cooler climate, they were better able to use and keep an egg pasta longer. Also, use an egg pasta when making ravioli, lasagna, canneloni, etc. as they require more "body."

    I made this pasta last night and it was a big hit!! Although lengthy for me because I don't have a pasta machine.. I made fettuccine pasta.. With red sauce and vegetables :)

      from how I understand it, they are fairly basic, just start at the largest setting and close it up as the pasta gets thinner

    Regular semolina is really too coarse to make fine pasta which is why most recipes go 50/50 with white flour. If you want to make real Italian style pasta, use semola di grano duro (semolina rimacinata). The semolina is reground to a very fine flour. Amazon sells it under the Caputo brand name. You can probably get it cheaper from a store that deals in Italian products. Also, you should use cold water when working with semola to retain the elasticity and workability of the flour. When you roll out the dough you'll note that it is very resistant to tearing at the thinner settings. Oh, and as for regular semolina, toss your pasta in it to keep it from sticking rather than regular flour. One final note, I use the dough hook of my stand mixture to form the dough ball. I add 2 cups of semola to the bowl along with about a tsp of salt. (I'm guessing since I just pour some into my palm.) With the speed set to stir I slowly add cold water to the flour until the dough pulls away from the sides. This cuts the knead time to about 5 minutes and minimizes "olio di gomito".

    Andrea, we'd recommend following the same resting and drying directions as in the video. To cook the pasta, you'll most likely need 3-5 minutes. It's best to taste the pasta after a few minutes of cooking to see if it at the right doneness. Enjoy!

    2cup flour
    1/2 teaspoon salt
    Half cup warm water
    Kneed dough 10min
    Rest for 30 min
    Start shaping pasta to your liking
    After Shaping let it rest 10min to dry up. Then boil in salted water 😊

    Flouring the surface makes sense, but it appears video is using all purpose flour. Since semolina is a coarsely ground durum, Might it be ok to use fine durum flour on the board?

      @@madhusush80 For fresh pasta lasagna I personally do not precook the pasta because they cook so fast. You just have to adjust the liquid level in your sauce because the pasta will absorb some of it and the starch may thicken the sauce a little bit.

      Hi, qochemist! Thanks for your question. Semolina is produced by milling or grinding the starchy part of durum wheat kernels into a course flour. It is used to make pasta because it has a high protein content and gives the pasta its "bite." You may use whole wheat flour, but the texture and tenderness of the pasta will be different. Try both ways and compare the results.

    today I made past noodles using this recipe but semolina flour gets dry very fast and it is difficult to flatten it. I dont have pasta machine so I rolled the dough using rolling pin. But I tried hand pasta machine which is cylandrical but dough was too thick for that still I thinned it as thin as possible. Then I cut it with knife intothin strips but when I picked them up from table top then they thinned out even more. I have left out to dry Lets see how they come after being boiled. Thanks for recipe I was looking for.

      You could, Megha Lokanadham, but expect some differences. Semolina flour is a courser flour, pale yellow in color, and is milled from a harder variety of wheat than all-purpose flour. It's used to make pasta because it's sturdier and will hold shapes, especially in water. All-purpose flour is finer and primarily used for baking, but it will work.

      You will be fine using durum wheat flour, Naili Ernst. In fact, this kind of flour is called semolina when it's coarsely ground, so it's an excellent choice for pasta making. The pasta will have a more tender texture.

      Hi Elke, if you want to dry your pasta, it's perfectly safe to leave them separated at room temperature. If you prefer your pasta fresh, make small "nests" of noodles and store them in airtight containers in the refrigerator. Enjoy!

      @sheldon pereira Apart from the fact that animals who are eaten nowadays no longer obtain vitamin B12 naturally, but are supplemented with it - it doesn't matter whether we give the animal the food supplements or whether we take them ourselves(the supplements). We could simply exclude the middle man here - problem solved, no brain damage, no b12 deficiency and we'd left the trees anway. :)

      Maybe not to you but some people actually hate the sulfur taste that egg yolks give to pasta lol personally I am not vegan, and I bake for a living at times so I use alot of eggs, but ever since a kid I have hated strong egg tastes
