I made my first fettucine or tagliatelle last night following your recipe with the carrot puree - they were AMAZING !!! - my Italian husband liked them too (and he is a picky vegan when it comes to Pasta ;-))) - and I really liked your very efficient and practical handling of the Pasta - a Million times better than some of the top-chefs that have posted videos here on youtube. THANKS for sharing!!!!!
Olivia Cheong cake flour doesn't have enough gluten to create firm texture. maybe you can use bread flour instead. but flavor and texture are slightly different from pasta.

Komatsuna is delicious. Sainsbury supermarkets used to sell it in growing trays which you could plant in pots at home, and it grew much bigger, but they didn't stock it this year. I got seeds and grew my own but they didn't do well. Any advice for UK Komatsuna lovers, on how to grow it, please?

If you want al dente pasta, you can make if with only flour and water.
