Gennaro seems like the coolest grandpa you could possibly have! Imagine getting to visit for a weekend and how excited he would be to teach you how to make pasta by hand!
madman03 I love that he said that. it just shows that you don't need a lot to be happy, you make happiness out of what you have. to be grateful and not greedy. 😊

Illium very Intelligent guy ..He knows people should know how tp make all essentials ...- True story .- my mom as a child in another country used to complaint was hard to find pasta in stores was to expensive ..she had to travel long distances 2 hrs when she was able to do it only if she thought of it and teach . see how simple when learning
I couldn't get 00 flour, so used general purpose flour, which I sifted twice, and it all worked out really well. First time I've ever made pasta, and the difference between home-made and shop-bought is phenomenal. Well worth the small effort and very satisfying. You gotta love Gennaro!
“Make it yourself, it’s very romantic” I love this phrase! Your kitchen reminds me of my grandmothers farm kitchen. Food was always more satisfying knowing that it was cooked on that wood stove. ♥️
Gennaro, Jamie and all the people who work at Food Tube. You know have been aware, but it is good to repeat: you're fantastic. I simply love your videos teaching us your perfect recipes. Let's say that making the perfect pasta dough is romantic and exciting, but the last time I have followed Jamie's tips, my wrists have hurt for several hours. The food processor is great and the dough machine is also fantastic. Since I have been watching your videos, here at home we only make pasta. Keep it up beautiful and fantastic people from Food Tube. You rock.
Thank you for the food processor idea. Since I got Arthritis in my right hand, I am unable to knead dough anymore. This is brilliant. I tried it, it works very well.
gennaro u r a bless to humanity. i adore your passion and im using your fantastic pizza and focaccia recipes! im looking forward to making more of your dishes. i wish u all the best, stay healthy and happy and live forever 🙂
thank you so much for this lesson. I never made pasta before . I followed your recipe to the letter and used my new kitchen aid pasta roller and cutter set. wow! beautiful pasta to work with!. I made ravioli and fettucine. beautiful . found 00 caution and Durham semolina at the health food store. perfect. can't wait to eat it tonight. thanks again you are a master...
For perfect pasta I use 1/2 durum 1/2 semolina wheat( they are basically the same thing but the grind is different) and water. With 00 flour you get a softer dough and with the addition of eggs the dough is good for silkier pasta's like Pappardelle or Fettuccini . For Southern Italian pasta's Ravioli, Ziti etc. The harder wheat product is better and more conducive to filled and stuffed pastas. It is less likely to tear or fall apart.
You hit it spot on. But that is getting too complicated for the average TV dinner eating clown. These are things every one should know to feed their families well.
I was surprised to see eggs used, since Italians are known for looking down on noodles. A lot of the recipies almost look like nokedli, which makes me think why not have paprikash instead.
Finally a video that knows what its talking about. Using only 00 flower will give a smooth tecture only, but the pasta and saus should dance together, so the pasta ahould be more rough. Hence the semolina. Thanks for the amounts
Double Zero flour is referring to the fineness of the sift. Triple sifting regular flour will give you a very similar consistency. Just make sure to at least use a basic bread makers flour for the higher protein content.
That's what google is for my friend... A quick summary tho - the grading of flour not only indicates how fine it is but how much bran and germ has been removed.
This is an excellent recipe !!! Super easy . I made ravioli . It was quite yummy for my first attempt . However , I had to add more flour as it was initially very pasty .
Nearly impossible to give an opinion unless you specify which British accent. I guess he learnt his English from someone who spoke English (as opposed to a book) and films, but as far as I can tell it could have been someone actually English, a Canadian, or even a Yank. If someone told me he learnt his English from Glaswegians or from Connemara folk then I'd be a little surprised, but not knocked off my feet. I can really only hear English spoken in an Italian accent. I guess a bit of Jamie Oliver's idiom has also rubbed off on him, but not a lot, eh?
My husband (who was married to professional chef before her untimely death) always tells me my food tastes great because he can taste the love in it. *Love* is a real ingredient.
A friend showed me how to make pasta, same method as Genaro. So I followed this video to avoid forgetting something and it worked. Fiddly at first but easy! X
In the USA you will have a problem finding 00 Definitely not at my local supermarket Maybe at the Italian old market in Philadelphia and for a premium price because it’s imported from Italy
tip: only use 80 procent of the flour in the recipe, and then you can add more flour when you knead it, that means it wont get dry and hard so you have to add water, becouse if you add water, it makes it sort of gooey PS: love you gennaro
I freaking LOVE your kitchen! I'm beginning to see the big picture and wanting to care for my own vegetables and animals. Thank you for sharing your knowledge!
Only an Italian can be this passionate about pasta. That passion is the reason nobody makes better pasta. It's the heart and soul that goes into the food that makes it so great.
I didn't have any semolina just Canadian all purpose flour not the US type. I used 2 cups of flour (not sure of how many grams, no scale), four small eggs, 1/2 tsp salt and about 1 tbsp olive oil. I had a hard time getting it mixed together I thought I made a mistake but I see it was just like you Gennaro so now I feel better I did it right. Mine turned out pretty rubbery but just a bit not too bad it wasn't bad just a tiny bit rubbery.
I love coming back to watch Gennaro’s videos. He always has such a warm and lovely energy to him.
Gennaro seems like the coolest grandpa you could possibly have! Imagine getting to visit for a weekend and how excited he would be to teach you how to make pasta by hand!
looks are deceptive. he could be a psychopathic serial killer
Jon Doe death by how good his food is xd
Pyro mancer seems like a fair trade.
I would need subtitles in real life to understand him if he was my grandpa
@Phoenix Gaming i just cant understand that british American accent lol ,,plus English is my sec language so it could be that
"My god i can feed so many people." That's a really great thing you said. Thanks so much for this lesson.
madman03 I love that he said that. it just shows that you don't need a lot to be happy, you make happiness out of what you have. to be grateful and not greedy. 😊

Love his calm passion, and the way you can tell he learnt his English from a cockney lad/lass.
Thank you for the food processor idea. Since I got Arthritis in my right hand, I am unable to knead dough anymore. This is brilliant. I tried it, it works very well.

Learn Italian cooking from an Italian, you can't get it wrong....Gennaro Rocks..love this guy...
Well, yes! I was the one chosen to find this recipe. Thank you! It worked! First time in my life I made authentic italian recipe pasta.
I love his way of cooking, it’s simple and raw without all the fancy jazz most of the young chef have these days. Viva pasta!!!!
Finally a video that knows what its talking about. Using only 00 flower will give a smooth tecture only, but the pasta and saus should dance together, so the pasta ahould be more rough. Hence the semolina. Thanks for the amounts
love to see people passionate about making food. it's the best thing because you can share with family and loved ones
The passion he has for food radiates into a passion for life...
1:19 "look at these eggs.. THE INCREDIBLES!" I love this man
Double Zero flour is referring to the fineness of the sift. Triple sifting regular flour will give you a very similar consistency. Just make sure to at least use a basic bread makers flour for the higher protein content.
Good to know!
Thank you so much! I've been looking for this answer for a very very long time.
That’s incorrect info Tacohorse
Michael Pashak Well then, you give us the correct info!

"make it yourself is very romantic"!!! I love this phrase!!
I love the way he whispers 1 and a half minutes towards the end, i will give it a go by hand but have a food processor just in cases ;)
Priceless advice. Who else can give such valuable info.?
I made this today. It looks harder than it is. I was very easy and very tasty. I used it for Antonio Carluccio's carbonara
It's like he's my grandfather and this is just a normal Sunday afternoon.
The show where he made his friend’s favourite pasta, made me ugly cry so hard. So much respect for this man
Grazie Gennaro , Great to see how simple and enjoyable it can be to make beautiful food with simple + affordable ingredients and tools 👍
Made this for the very first time yesterday! It beats all of the store bought stuff 120% :)
This recipe is fantastic. Made it several times and it always works.
"Mixing it yourself is very romantic." love it.
Is it just me or does he go from a hard Italian accent to a British accent whenever he talks...
LOL
I thought the same thing! Per Wikipedia he has been living in London since the 60s so it makes sense.
Born and grew up in italy, and moved to london, hes got a mix of both
John Pogorzelski well he probably learnt English from a Brit. Not everyone speaks with a North American accent you know.
Thank you so much we followed your advice and made great pasta 😁
Gennaro is just such a joy to learn from
lately I've been interested in traditional chinese noodles and I'm trying pasta noodles nownand it's so funn
Love you genarrooooooo. Lovely to see you here xxxxxx
thank you so much for the close up and tutorial of how to knead the dough. very helpful!
Very likeable guy, great instructor. his recipes always come out great.
Bro this guys accent is wild! He sounds Italian one second, British the next and then Scottish after that! I love it!
finally i have found that recipe. homemade pasta is superb, amazing
Love the way you demonstrate.
It's inspiring. 💋
Ugh. I adore this man. Can't I adopt him?

We’ve just made an arrabiata with Chile de árbol in Jiutepec. Thanks Genaro!
When ever I see his videos I feel stress free
*Me currently at home because of corona*
Him: You can find this at any supermarket
Me..... are you sure
Yas back at 2013 when this was released i would assume you could 😂
In the USA you will have a problem finding 00
Definitely not at my local supermarket
Maybe at the Italian old market in Philadelphia and for a premium price because it’s imported from Italy
I found semolina at either whole foods or world market in the US awhile back. I never did find 00.
@@nicoleacosta9467 look for type 405 for 00 and 550 for 0 flour its the Italian description
thank you chef gennaro, another great lesson to learn about pasta.
tip: only use 80 procent of the flour in the recipe, and then you can add more flour when you knead it, that means it wont get dry and hard so you have to add water, becouse if you add water, it makes it sort of gooey
PS: love you gennaro
I freaking LOVE your kitchen! I'm beginning to see the big picture and wanting to care for my own vegetables and animals. Thank you for sharing your knowledge!
I wish he was my grandfather
I wish he was my husband 😀😀
old school scale.
love it already
This guy loves food, and we love him
Only an Italian can be this passionate about pasta. That passion is the reason nobody makes better pasta. It's the heart and soul that goes into the food that makes it so great.
This video was exactly what I needed
Gennaro explained it so well and with such passion.
Thank you :)
I love these guys (Two greedy Italians). I was surprised that no olive oil was used though.
Half the time he sounds italian the other half he sounds cockney
He grew up in Italy, but moved to London and that's where he learned English. I believe that's why his accent is like that.
As a fan of mixed accents, this video gives me great joy
Check out the Metatron, same situation.
Thinking this the whole time.
Sometimes he uses the Italian pronunciation pah-stuh, and sometimes he uses the British pronunciation pass-tuh. It made me chuckle.
So lovely to hear from a man say it'svery romantic mixing the ingridients by hand
this guy is amasing
Wow! You make me hungry:) Molto grazie per questo video. “Make it yourself! It’s very romantic!” I love it
