55-60% water to amount of semolina is a rule of thumb if you are new to it. For example, 500 grams semolina and 300g water (get a kitchen scale they’re cheap). If it’s dry after kneading for a minute, dip fingers in warm water to add moisture. You want it kinda like a really springy playdoh. Don’t buy a stand mixer, you can just use the well method. Much cheaper 👌🏻

Another common way we make it is to boil cocoa with spices (cinnamon, cloves, nutmeg) and the pasta to it and towards the end add milk and it’s breakfast or a comfort food. We also make them big and shape them like wheels (the amount of dough he had would be cut in two) boil it till they float. Remove from the water then slice up plate and enjoy with any meat or stew of your choice. Some persons add a little cornmeal to it to make it harder or tougher to the bite. 😂😂😂 so funny how our world is one just different names.

I am glad that you showed us this recipe because I have Vegan friends that I promised to cook for, and I was afraid to make the eggless pasta. Won’t my friends be surprised, it’s not polenta for dinner! Gracia!😘 By the way, Mommom (LaMia Nonna) loved being in the kitchen cooking, especially if she was showing me how to cook. Now, I love being in the kitchen and cooking. My son’s friend even stops by when he isn’t home so he can eat my cooking. I Love it.

I made it yesterday. It's so quick, cheap, easy and delicious! It's springy, soft and olive oil is all you need with it. My new love! Going to eat it also today hahah. But I cut it differently. I heavly floured my dough circle, put it in half, flour, half and now I cut it into strings like fettuccine.

I just tried this out because I wanted to make fresh pasta with different flours to see if I can find a recipe that doesn't bother my stomach, but the cost of eggs makes the usual recipes impractical. It turned out great, will definitely make it again! I don't have a mixer and it was actually really easy to knead the dough by hand! Letting the dough ball rest for a while makes rolling out the noodles much easier.

300g flour 175g hot water 1tsp Diamond Crystal Kosher Salt Consistency and reproducibility is key. If you want oil in it you can substitute some of the water for it but the important thing is 175g of liquid.

I did this recipe and used my pasta attachment with the KitchenAid to make spaghetti turned out really well , BTW I use your winning roasted chicken recipe anytime I want to impress :)
Create a well in your flour and pour the water and olive oil in the center. Slowly add flour from the inside of the well until all is incorporated. Start with less water and add as needed.
That is a brilliant video. And a brilliant way to make noodles. I don't find kneading by hand that much work though. I just work the flour/water mix until the dough just barely keeps together when rolling it with a rolling pin, that's all. Works fine for me, I'm not a perfectionist. That way, the the kneading part, in my subjective perception, does not feel more time-consuming than the final step of shaping/cutting the dough into pieces. Of course, one should allow perfectionist grandmothers the pleasure of kneading their dough for hours, if that is their way of showing their love for the family.:-)

I literally grew up on this homemade pasta. My mother and grandmother made it exactly the same as Fabio version (but without the mixer).
