Clearly overcooked. Cut down cook time: maintain seared outside but translucent interior.

LOVE this recipe! I have tried several but this one is the most simple and classic. Your not junking up a good piece of fish with sauces and spices. If you like sea bass, truly enjoy the flavor of the fish, this is the recipe for you. I have cooked this for several guests, including my mom (Dorinda), and it always gets serious compliments. The best one is "Why am I paying $40 at a restraunt when I can cook this at home" It's that good! Thank you Deronda! I finally have a signature dish.

Worked out very well. I used my timer, but I got scared and took it out of the oven at about 4 minutes (instead of 5). My wife said it was perfect, but I like my fish cooked just a hair more, so I could have left it in for the full 5 minutes. Important to consider the thickness of the filet. Ours was a little under an inch, so a much smaller filet would have been overcooked. Thanks for the easy recipe!

I actually used an olive oil-seasoned cast Iron skillet so it turned out to be blackened sea bass. Due to the smoke created from searing, I panicked and turned the pieces before the 5 minute mark. Left it in the oven only 3 mins but it still came out delightfully tender. Will remove the skin next time too. Thanks for such a good tutorial. Will check out your swordfish prep suggestions next.

Eat this delicious fish *SPARINGLY* as it's through_the_roof in mercury, which causes cancer. Chilean Sea Bass is thee_best fish I ever had bar none, but it's also one of the top five WORST fish to eat because of its mercury level! :)

Apply oil to fillet AFTER seasoning. FYI: Oil & water don’t mix. Adding oil acts as a flavor-BLOCKER if you add it before seasoning.
