Great recipe. I did it in one pan. Sautéed fish first, removed fish and kept warm, used juice from lemon and tomato to deglaze pan, added spinach, added fish back to pan.
Joe, you saved the day! A bit of a story on how I stumbled upon your recipe... Our local Costco now sells bags of vacuum sealed frozen sea bass (5 individual fillets) and I quickly snagged a bag. So my young daughter had an ice cream craving, grabbed the sea bass bag and forgot to put it back in the freezer. Along comes dad (yours truly) the next morning and sees his treasured sea bass on the counter at room temperature, so I quickly throw it in the fridge and immediately look for recipes and after preparing and indulging, here I am now a new subscriber raving about it! Just an amazing, flavorful, yet simple recipe. After adding the lemon/butter to the fish, the aroma had the kids rushing to the kitchen wondering what dad was up to. A great meal and great conversation followed, and yes I thanked my daughter for leaving the sea bass out!

I couldn't get sea bass but I used Mahi Mahi and removed the skin and followed this to the tee, it came out delicious.
