    I just made this and am eating it now....... I want to eat it forever. My doctor put me on a Paleo diet in July and I'm still finding my way and looking for new ideas. This is definitely a new favorite :) Thank you!

    I love salads in the winter time. I normally roast butternut squash, serve over arugula greens with pomegranate seeds and a simple olive oil dressing, salt & Pepper.

    Hi Dani. This squash is one of my faves. After it is prepared just the way you have instructed, it is so versatile. I just ate one with Dijon mustard. So filling. I’ve had it fried in a pan with my morning tofu scramble. Or, just drizzled with maple syrup. Thank you for all your fabulous recipes!

    Those look fabulous! Great tip to throw them into a salad. I would love to see some stuffed winter squash recipes. We just bought Sweet Dumpling Squash, cut the lids off like a pumpkin, cooked them, stuffed with cooked sausage, rice, etc. and then popped them into the oven for 20 minutes to finish off. Yuum! AND it's so cute to have everyone have their own little squash.

    I never had a Delicata squash before today! After watching your video yesterday, I ran to Whole Foods and bought my first Delicata squash. I followed your instructions and it tasted great! My teenage daughter put it to her salad and loved it. My teenage son dipped it in ketchup - haha😄. My husband liked it as well. I added rosemary to mine.

    Made this tonight with a cider-braised pork stew and mashed potatoes. It really was perfect.Wonderful way to cook this squash! I'm going to do this again next week.

    I cut rounds seeds in and remove seeds easily when served. I sprinkled garlic powder after coating with olive oil before roasting I did not know skins were edible, thank you. Live winter squashed, very satisfying and flavorful.

    I love roasted delicata. I usually add some dried sage to the spices and drizzle it very lightly with maple syrup. So delicious!

    You have my son and I eating spaghetti squash and acorn squash. We are trying the coconut curry butternut squash soup this weekend. Now I have to try this one too! The key to getting my ten year old to eat squash is all in the use of spices and sometimes cheese! I like being able to go to the store and knowing what I'm buying and how to prepare it . Thanks!

    My favorite squash! I've been cooking them by cutting them in half, seeding, oiling the cut wound, and baking open side down on a sheet. I add olive oil and salt to the inside just before eating. I'll give this method a shot next time.

    I have been doing this for several years. I spice them up a bit though. I use a bowl to toss and coat everything and roast on a silicon mat. They are quite good.

    I'm sold. I'll have to try them. I like that we can eat the skin like zucchini. I like to use an ice cream scoop with its sharper edges to scrape the pesky seeds out of squash...

    OMG Dani these were so good! I had to keep mine in a bit longer to get that golden color, probably due to the inaccuracy of my oven temp but thay turned out fab! So fab in fact I ate them all and have to make more to try in my salad. Lol

    I made it today for snack and it was delicious. I dipped it in Maple syrup as I was craving for something sweet. Warm, nutty and crispy, it was perfect snack. I'm going to make Kale chips next week :-) Thanks sharing!

    I made delicate squash last weekend by dipping them in egg whites and coating with parm cheese. Then, I baked in the oven. I was wondering if I could do a more simple recipe, so now I know! Thanks! The one I had last weekend had a similar taste to a butternut squash. My husband who is picky about his vegetables liked it.

      I love this squash because there's no work with cutting off the skin. I've also cut them into a smaller fry size, and this recipe still works good.

    Great job, Dani! I made your recipe as written, and it was a hit with everyone! Best feedback, "It tastes like French fries!" My pickiest eater was not a fan of the skin. But if that's the biggest complaint at dinnertime, I consider myself to be doing pretty well. Tomorrow I plan to have the leftovers over a spinach salad with some homemade vinaigrette.

    This is under your keto friendly recipes. Winter squash tends to be high in carbs. So is this keto or borderline keto? Just wondering. I keto from time to time due to lymph edema. ( lymph doesn't get on well with high carbs)

    i love kobocha squash, unfortunately the rind is hit or miss as sometimes it can be quite bitter. is it odd that i watch for the bloopers just as much as for your recipes? enjoy fall dani!
