First off thank you for always having your written recipe right there under the “more” link. Love these pecans and never could find the recipe that would duplicate these. Tried the stirring them in melted butter and then trying to stir, nope could never get it to work. This is the “REAL” deal! I am so excited to have this one. Love the way you do your videos, showing all the steps, even tips and tricks along the way. It’s so fun learning something new. I just wish I had found you 30 years ago(really 40 would have been more like it) because I was physically able to cook more! Thank you for all the work you do creating your videos. Also, here's a top for easier stirring them. Take one corner of the parchment paper and pull it to the middle the move to the next corner and repeat for each corner . I learned this trick when I worked in a geological lab after crushing and pulverizing rocks to get a homogenized sample for testing for elements. Works great in baking too.
Thank you so much for the handy tip on getting the paper to fit the pan! You're also correct on storing them after the pecans have baked to so they won't get sticky. I couldn't help but see your post. Any tips with those trees? I'm planning a move over the next year and badly want to grow my own pecans and walnuts. Hoping to be able to grow enough to be like a squirrel and store em all away

The oldest tree must be 100 years or older as the house was built in 1837 and this one is huge and is native to the southeast producing a small pecan but the meat is sweet. Later, during the dust bowl years, 7 other varieties were planted as a county experiment to select the hardiest, most prolific and best tasting pecan. If I were you I would select a reliable nursery and purchase a variety designated as best for your locale, it's soil and weather conditions. Remember not all trees are prolific producers and like all fruit/nut trees some years there are bumper crops. Birds, squirrels and insects are always a problem. Good luck on your endeavor.

I'm from Peoria, Illinois and we have a minor league pro hockey team that I attended games for when I was younger. The Peoria Civic Center where they play isn't massive, but it's pretty good sized. There is a business that sells candied pecans at events and they make them fresh at the arena. There isn't a square inch of the entire complex that isn't filled with the smell of these awesome treats. From court or ice level to the top convention room smells so good!
In Florida, at outdoor art/craft shows, street fairs, etc., there are food vendors and often there is a cinnamon nut, candied nut vendor cooking them in a big kettle. Copper? It's a wonderful nutty fragrance you can smell a block away. Ummm. I will try this recipe and make them at home now. 😊

Love your channel I use 1 cup white sugar and 1 cup brown sugar they are so good I also do another way roast pecans for 20 minutes take out and put liquid margarine all over them several times and sprinkle with salt most people love them that way best. I have many pecan trees so I make many. Keep up the good recipes.😊

I made some for my personal snack, not sharing. I did some techniques of my own. In the last 15 minutes in the oven I turned the temperature to 300⁰ and the result was just amazing. Next time though I think I should add more pecans since the sugar/egg white mixture ingredient is a little bit too much for a pound of pecans which is not a big deal. Nevertheless it's really delicious like you said. Thanks for sharing! ❤

If you fold each side of your parchment paper over and make a crease on all four sides it lays perfectly flat.
