    Who doesn’t love a good roast duck with charred crispy skin and juicy meat? Many of us think that roast duck can’t be made at home. That’s what we want to demystify! Anyone can make this dish as long as the duck can fit in your oven! The crucial step is to make sure the skin is aired dry enough before the actual roasting process.
    The advantage of roasting a duck versus, let's say a chicken is that the ducks are fattier and its fats will begin to soften and melt during the roasting process, giving it a gamey and alluring aroma.

    The best recipe yet! I liked that you marinate with dry rub first before poaching with the hot water.

      Thank you :) By doing that, we remove the bits of spices so that the skin of the duck will be smooth and to prevent any burnt spices during the roasting process!

    I have used this recipe about 4 times and it is awesome! All of my Chinese friends love it. The only thing I do different is I roast it in a vertical charcoal smoker instead of the oven.

      Ace 2 hours at 150 Celsius using just a handful of Hickory wood chips at the start.

    Done it ... awesome results, as good or better than restaurant !!! Hardest part was "sowing" duck from leaking marinade. NOTE: suggest keeping remains of bones/carcass for soup stock. Also suggest pocking skin with needle(s) to release oil. Thank you for this keeper recipe.

    I tried this recipe and my family really loved the flavor. We did this over a rotisserie and now we don't need to go buy it from the restaurant anymore.

    That looks amazing!! I love duck,don't have it very often now a days. It used to be very popular here in the US when I was young(I'm 53) but not so much anymore.

      I cooked one last Saturday, I used a recipe from the DMN Food critic, I think it turned out fine, but certainly wasn’t anything to the duck we used to get at NANA’S GRILL, but then I’m not a professional chef. And since I live alone, not much of it was eaten, and truth be told, I think I actually enjoyed the Baby Bok Choy more than the duck. 🤗

    I made this over the weekend and it's finger-licking good! I even used the bone to cook the soup base for noodles.
    I doubled the sauce as I like it a lot. For the drying process, I used a fan.
    I will defo make it again.

      Jameson Jones it’s fine if it’s for a few hours as long as you place all raw meat in the bottom of your fridge so you don’t cross contaminate with your other food :)

    i prefer a much thicker glaze for the skin.. but i really like this simple bamboo stick seal.. ive been using much harder ways. gonna try tomorrow!!

      Hey Elias! Oh wow, that doesn't sound normal at all; so sorry you had to experience that :(
      We roasted the duck at 200°C (centrigrade) and on Fan mode (with the fan on). Some ovens use Fahrenheit so be sure to check on that.

    Can i make this with chicken. To be exact three quarter chicken pieces leg and thigh. Weigh about 900 grams. Can i skip the poaching part and after its marinated just put it in the oven?

      +theMEATMENsg i made it last night. And ofcourse it tasted different because i used chicken instead of duck. But the marinade and seasoning and the sauce gave the chicken this amazing flavour.. I just skipped the poaching and hang drying part.

    The final roast duck doesn't look right, the skin is missing the gloss and paperlike crispness. What went wrong here? U need to let it dry longer

    Hi, when poaching the skin with boiling liquid, aren't you washing away the spices in the beginning?

      +KahVeen Khoo the spices has infused its flavour during the 3 hours of marination so it fine.

    Beautiful....but you can get a great tasting one at a good Chinese supermarket that has a roasted meats section so you won’t need to do all this work. 26 usd each.
