    I am so glad I am not the only one that saves things others toss! I harvested beets and have the greens dehydrating right now. Beans are in the canner as well for today. People either dont know or just dont take time to use ALL of the food they grow or buy. I also dehydrate or blanch and freeze leaves from brocolli, cauliflower and other veggies. I love watching the children help you prepare the harvest, they are so very helpful and seem to really enjoy helping! What a wonderful family you have raised!

    We canned. Beef roasts, French onion soups, mushroom and onion soup, drying herbs, butchered chickens, spaghetti sauce, froze baby kale, fresh pico for gifts, and canned celery!

    ooooh how precious the little one was Hauling wood in his wheelbarrow an dumping...made my grandmothers heart chuckle with laughter..had to rewind serval times to watch it ..so cute!!! BLESSINGS 💖

    I heard you say “fuzzy baby” at first and looked at the baby and was like, “Thats a cute way to talk about your baby, but he doesn’t look that fuzzy!” And then I realized you said “fussy” and it made more sense.

    You have encouraged me to start preserving. I didn't even want to garden this year and now I wish I had. But we are getting the overflow from friends and neighbors. Thank you so much. I am 63 yo this year, better late than never. :)

    This was a beautiful video, it brought back many hours of memories being in the kitchen with my grandma and mom. I’ll be 60 in October and still preserving food in my kitchen. Blessings to you and your lovely family. ♥️

    I had no idea a challenge was on. LOVE IT. I set a goal of doing something for food harvesting and preserving each day this month too. I'm not able to do much this year so no big bulk projects, probably a blessing since I push too hard when I do mammoth preserving.
    So here's how mine have gone. One day, the task was only to gather the supplies. One day was to can just 4 pints of potatoes, one day prep the strawberries for preserves, the next to make and water bath the preserves. One day apple cranberry jelly. One day, get the dehydrated celery in to jars, another, just 5 lbs peaches. Today, cleaning and labeling jars. So far, so good. It's really difficult, but I just push on. I need to be independent and this helps me to be.

    Came over on suggestion from Sarah at Living Traditions. I can’t participate as we are moving, but I’m learning! Maybe next year! I have froze green beans, corn on the cob. And canned 12 quarts of meal in a jar. Also water glasses some eggs; and froze some French toast...

      After it cools, I wrap each piece in wax paper and place in a gallon ziplock.When I want a piece of French toast for breakfast, I take one slice or however many out, and toast it either in a toaster or toaster oven! I do the same with leftover pancakes.

    I am learning so much from this video! So helpful! The kids dip the kale stems in my lemon poppyseed dressing.... but other than that I always throw my kale stems away! I be trying that! I do dehydrate many herbs for seasonings but I never knew to make veggie powder!! So cool.

    When I pick blueberries, I use a oval or squared basket hung around my neck with ribbon. I draw the branch down to me and pick it bare. So much easier than wind blowing those bags around.

    This week we Shredded cabbage for saurkraut got that fermenting. Canned 14 pints of corn, 9 pints black bean corn salsa, pickled jalapeños, pickled banana peppers, 2 gallons Clausen pickles. Today will be green beans, green beans with potatoes and onions, dilly beans, dehydrating onions

      Klassen pickles
      1 gallon cucumber spears or slices
      1/3 cup instant minced onions
      6 cloves of garlic
      1/2 TBS mustard seed
      6 heads of dill
      6 cups water
      2 cups cider vinegar
      1/2 cup canning salt
      Slice cucumbers put in jar with dill onions garlic. In a pot boil liquids seasonings and salt til it is dissolved cool pour over cukes let sit on counter 3 days shake and turn daily refrigerate good for a year

    I always learn so much from your videos, Jessica! There are so many times I watch one (or several 😉) and end up thinking, “Now, why didn’t I think of that?” For example, making cherry juice from the pits for jelly and saving and freezing kale stems to use in stir-fry.     These babies are so blessed!!!! This has been my first year having a garden and oh my gosh the trial and error has been hard! But I'm trying to teach my kids that it's so rewarding to grow your own food and they have loved it! So I can just imagine the confidence and happiness these babies are getting from their amazing mommy showing them and having them help preserve things that was home grown. Amazing job momma!!!!

    *Goals!!* That is amazing that you preserve everyday!... I found elderberry alongside a field edge but can't use them so close to the farmer's sprays. But I did plant a few plants myself, so I can gather that.

    I never thought to actually keep the kale stems as they're so tough so we give them to our dogs.to snack on and our guinea pigs when we had some. I'll have to try and freeze them and use in a stir fry. Thanks for the tip!

    Watching this on a snowy Michigan day has me dreaming of fresh cherry season! Last year I discovered a cherry pitter that does six at a time, it’s from oxo brand and I believe it was $20 at my local Meijer. Highly recommend!!

    I was excited to start this challenge and did get most of the first week. However I kept grandchildren this weekend and one was sick. Ended up testing positive for Covid. So that being said I wasn't able to get anything done Saturday. So far I have dehydrated yellow and red onions, paprika, chilis, and ground them into powder. I also crushed sage and stored jars of it and celery leaves crushed and stored One day I canned Jalapeno jelly, another day I canned pickled okra, another day I was able to vaccum pack bell peppers and onions. All of this came from our garden. Including the garlic for the pickled okra. I'm excited to see what I can do this next week.

    I am so glad to see someone saving their stims . My husband and don't take the stims off of our collard greens' When I wash them and cut them up i leave the stims on and cut them up too. A lot of the vitamins are in the stim.

    My garden, as a whole, did not grow. Of course, here in Las Vegas, NV it gets over 100-117 all summer. So I dehydrate. I do powder them, then vacuum seal. Then I use moisture absorbers. I am thinking of getting a freeze dryer. So far the only thing I can is meat. I dehydrate and put into jars other things. Love seeing the children learning.

    All I had to preserve today were some onions and celery that were were going to go bad before I could use them. Now they are chopped and bagged in the freezer, ready to use in all kinds of things. That's several dollars' worth of food saved. I love this challenge. Every little bit helps.

    I think my favourite tip would be to use small jars to hold all of my dehydrated goods! I generally use what I have, but it was a great reminder about the air :) I also save nearly all of my scraps as well, but I freeze them and then use them to make veggie broth with, and then give those scraps to my dog to enjoy. I think I need to start learning how to can more...you're channel is inspiring for sure!

    This past weekend I picked a whole bunch or Organo, thyme and parsley and dried it in my air fryer, didn't know you could and now I have half a bottle of each herb, planning to do rosemary and mint next my basil is still very small

    Hi Jessica, I read a homesteader say she stretches her flour by adding powdered zucchini as part of the flour component . Maybe 1/3 or 1/4 of total. Think I'll try it. Love your videos, even the older ones, I rewatch a lot to learn.

    You can put an oxygen absorber packet in your dehydrated items. It will keep moisture out.

    Love this video. I dont have mych of a garden this year, but it is a good size container garden. I have a bunch of sweet hungarian peppers that Im not sure what to do with. Any suggestions? Also I just found a place called City Folks Farm Shop on high st. in clintonville. It is amazing! All for urban homesteaders. I had so much fun exploring in there.
