As a chef by profession discarding of some ingredients make the taste different! Parmesan cheese it added saltiness not to be creamy thats why he doesnt add salt and pepper and white onions po to add balance for sweetness taste! Fyi po d cya red onion magkaiba po sila nang lasa!

Ruffa Dimaporo i think pwede naman huwag ng lagyan ng alcohol. Alcohol just adds to a sweetness parang ganun. But u can omit alcohol.
