哈哈 ! Laugh die me ! 從未聽過或食個啲「白切雞」係咁樣做法...! 白切雞第一係選雞, 第二係靠浸熟(絕對唔係蒸熟), 第三(靈魂所在)係薑茸, 第四雞熟咗之後需要浸冰冷水令雞皮爽脆 白切雞係適宜微暖甚至凍食 !

我們這裏的白斬雞是水煮的 好像只要抹鹽後再水煮就可
不太一樣, 影片使用的是大陸的三黃雞 具有肉雞的軟嫩也有走地雞的香味 也不貴 台灣沒有這種品種 基本都是土雞
廣東人吃的雞肉 是要鮮香滑嫩的, 土雞 就非常不適合且肉硬 所以就有不同的料理方式。 三黃雞水煮也可以 但不能長期煮 只能泡熟 需要一定的技巧!
