you should always tighten the hubnut HARD first to snug it down. then back it out and proceed to setting the adjustment on the nut. you have to take up the free space of grease and compact it. unless you feel like adjusting it again after a few drives
As a mechanic by trade I admire the work you've put In so far. Some things that stick out is those front wheel bearings appear to be adjusted far too loose and yeah maybe a touch too much grease in the hubs 😂
