Who else is excited for Spring and Summer camping? 🙋♀️ Make sure to check the description for the dinner recipe and other camping meal resources! Enjoy!
When I was a child, my mother always made fried potatoes with onions in her cast iron skillet. It was a ritual, peeling them, slicing them, cooking on the old Coleman gas stove. When I do it now, the smell sends me right back to my childhood camping, the canvas tent with the center pole, the wood and canvas cots, the kerosene lamp, hiking in the dark to the pit toilet. Things have improved since then in terms of equipment and comfort, but those potatoes are still the best part.
I love potatoes all ways for camping…..I peel, cube potato’s chop peppers and onions and place in the microwave at home and cook till potatoes are almost done…cool and place in prepped foil packets like you do. I buy meatballs frozen and brown them at home then package in foil pack…..I make my own pasta sauce or cheese sauce and vac seal them in to go bags….so all I have to do is put the bag in very warm water to heat , the packets of meatballs and potatoes go on the fire then pour over sauce of choice on each…..and it makes a great meal
Just can't wait for Spring and Summer camping this year! Even adding a kayak to the mix! Everything looked awesome and real simple. Wish there was smell a vision! ⛺👣🥘🚣♀️
I can't wait either! I'm really looking forward to warmer weather and longer days. I have a small pack-raft and I can't wait to have more adventures with that this summer!
Yummy. Zatarain’s is the best. A tip: when you finish chopping stuff, use the dull side of your knife to dump into the bowl or whatever. It spares the edge and keeps it sharper longer.
We use the Jambalaya mix and cook all kinds of meat in it (no beef). We'll sometimes have 1 odd chicken breast left over from a package. Maybe a pork chop, sauisage and other single servings of meat. I chop it all up with the same ingredients you use. Plus I add shrimp. Five quarts lasts only three days, not enough time to spoil. It does freeze well if I get the chance.
Thank you for not designing your videos around what affiliate links you have. These don’t feel like a long marketing ad for a bunch of products, like most channels, and is more informative than anything. Props for not becoming a slave to the affiliate marketing world / monetization.
Oh my goodness everything looked so good! I got some great ideas for camping this summer. Might have to do a trial run on that jambalaya this weekend at home! Thank you!
Excellent video! If there is some kind of web video award for the best cooking video, this has to be it! Love the interlude of you frolicking in the white amphitheater ... and that choice of song at the end was fantastic:)
My husband and I really look forward to camping every late spring through at least early October (weather and temps permiting) .We have ideas of travel camping with our motorcycle and a timeout any ideas would be appreciated. Love your camping videos!
@amanda I'm barefoot about 90% of the time. It's awesome! Sometimes people ask me if I'm part of this or that movement. No. I'm not. I just really like not wearing shoes or socks and feeling the earth under my feet.
Great Video Amanda I want to try making your dutch oven bars and jambalaya they both look like good camping meals, cant wait to see more of your cooking videos good job!
Definitely making that chicken sausage meal when we go camping this weekend! Love these videos. Would love to know how you clean your cast iron while camping!
I really like your videos, and oh yes I am so ready for some sunshine and warmer weather. My tent and air mattress days are over at my age, but I camp as often as I can in a teardrop. Basically a bed on wheels with a convenient galley in the back. Looking forward to more great videos
I watched quite of few different backpacking meals, camping meals, and hiking meals and by far yours are my favorite. You are so creative! I look forward to your videos and you got me so excited for all the adventures. Its going to be my first year, I’m going to be doing tent camping and I cannot wait. I hope you bring more eat with me videos and overall hiking/camping tips. ☺️
I do the same zatarains jambalaya trick only I use can chicken , andouille, can chicken stock and the Dutch oven, the original set it and forget it appliance
I would love to see more videos on what you eat while hiking a short or long trails. Also would love to see how you pack all your meals for camping and just overall more camping and hiking videos and tips. I love your contact.
Hello! Just subscribed to your channel. I have been doing a bit of solo camping lately and I have a few recipes for dinners etc...but you have now inspired me to try the Jambalaya dinner! (instead of my usual hot italian sausage pasta) Planning to try it in the Fall....Also intrigued by your camping desserts! Thanks for sharing!
My fiancé and I are going to be living out of a micro camper and traveling the country for the next year and we LOVE your videos and learn so much from you. So thank you! I do have a question that I’m hoping you can help with! We have only camped once before and it was in Florida, so we didn’t really have to think about bears. We have never even been to the west coast so we don’t know what bear country is like. My question is, when you’re in bear country do you still cook at your campsite or do you actually move everything hundreds of feet away to camp and eat? Thank you so much!!!
Such a great video and fun to see you and your partner enjoying it together. I had so many great memories doing this stuff with my partner of 5 yrs. We just broke up and this really brought me back to the good times. We used to go to St George and Moab all the time. Where is that amphitheater area at?
Great video! I've been bitten by the camping bug and can't wait to get out there in the fresh air. Just one question: What bags are you using to store your veggies?
Amanda, I need your advise. I have been camping, hunting, fishing, hiking for almost 40 years here in the PNW. My kids have never had the interest that I have had. Amazingly, my son came to me and said that he wants to go camping and hunting small game. Now, I am of course excited to hear this. I don't want to go overboard. How do I ease him into this? What fun meals, activities, or ideas should I present to him to keep him interested without going crazy and pushing him out if nature? Now I know that is a ridiculous question. But, plz. Any advice would be greatly appreciated.
Love that rice dish, one of my go to when camping….question why does everyone ground the coffee beans does it make that much of a difference in coffee taste vs. bring pre ground? Seems like more equipment and steps, but everyone seems to do it camping.
The main reason I grind the coffee beans at camp is that we have a coffee grinder at home, so we only buy whole coffee beans. I think grinding them right before you make coffee supposedly gives you a fresher more flavorful cup of coffee, but I'm really not sure I would notice a difference in a blind taste test.
If only there were lovely sceneries like that to camp in over here. I am excited about spring/summer camping, but not so excited with my options locally!
2:39 Fresh spinach is the best wilted veggie on the planet. And to think, our mom used to (force) feed us spinach from a can... That's the difference between Yum! and Yuk!
Is your blue water jug sitting upright because it leaks? Lol - I replaced the plastic valve with a threaded brass spigot 😏👍 What a great video, thank you for sharing ☺
I use my cast iron pan every day so it's just built up such a good seasoning. I also rarely clean it unless I cook something that is stuck to the pan or has a strong flavor like bacon or salmon.
That’s seriously the best salt. My grocery store stopped carrying so I switched thinking I wouldn’t notice a difference. Wrong! Now I buy the kosher style in a bucket. 😆
I’ve been trying to find the recipe for the Dutch oven dessert shown here and I can’t find it anywhere. I bought the ingredients that I think are in them but, I would like to know how much of each item.
I’m with you on the barefoot. When I was a child 6 decades ago I rarely wore shoes. Mama would be less than happy to see me barefoot in the snow. Oh to be young and warm again. Thanks for all your tips. 😊☮️

I love this story! It touches on one of the reasons I love camp cooking so much - it's something we build memories around!
This hurt my heart. So lovely to hear a memory of yours thank you for sharing ❤️

I would love to see how you pack your car. I am always looking for a better way to pack mine.
THESE ARE MY FAVORITE VIDEOS!!! ⛺️🌲
Me too! I realized I haven't made one like this in a while so it was long overdue!
I booked a few solo camp trips this spring/summer. I cannot wait! I haven't been camping in YEARS! 😁
Great food ideas, I always overlook the genius of simplicity until I'm reminded of it by one of your videos.
That is a well-seasoned skillet! 🙌🏽🙌🏽🙌🏽
Just can't wait for Spring and Summer camping this year! Even adding a kayak to the mix! Everything looked awesome and real simple. Wish there was smell a vision! ⛺👣🥘🚣♀️

Whenever I go camping I always take my cast iron skillet. Makes the food so much enjoyable.
I use my cast iron skillet every day! 😁

The jambalaya does make a delicious at home dinner too! Glad you got some new ideas 🤗
I did the potatoes at home today in my cast-iron & they turned out great!

We think alike. Camping is such a retreat for me. I'm 2 months away from retirement and I can't wait to hit the campgrounds!!
Thank you so much for the ideas! I go camping every year as a family vacation, and always looking for meal ideas. Love these! ❤

I do the same zatarains jambalaya trick only I use can chicken , andouille, can chicken stock and the Dutch oven, the original set it and forget it appliance
I'm definitely adding that jambalaya to my camping recipes!!!
Yay! Hope you enjoy 🤗
That is one nicely seasoned cast iron. No issues with the potatoes or eggs sticking.
I love your cooking and camping videos!

Those look like Stasher bags.

Excellent editing! Loved the song you chose.
All looks delicious! Maybe it’s in the comments somewhere, but what is the song? Love it! Great video, thanks!
I love your vids. So inspiring and fun. I'm planning a trip to in early July of 2023, where is this place in this vid?
Love your content. Love the outdoors, love to cook and love to eat clean. Your videos...me..perfect together 👍🏽🙂
Hey there Amanda this finally popped up on my to watch thing even though it is 4months late 😅 great watching this always 👌

For that jambalaya try reduced sodium then add that salt you mentioned in beginning of video to taste!
2:39 Fresh spinach is the best wilted veggie on the planet. And to think, our mom used to (force) feed us spinach from a can... That's the difference between Yum! and Yuk!
I’m going to have dreams about this dessert till I buy a Dutch oven 😋🙈
How do you wash everything out there? The cast iron skillet and tuna bowl??
I enjoy your recipes and videos. I was wondering if you ever do more back country versions of your meals?
That dessert looks sooo good! 🤤
Meals look so good! Where is your camo jacket/sweater from? So cute!
Wow. Everything looks delicious 😋 Thanks for sharing!
Is your blue water jug sitting upright because it leaks? Lol - I replaced the plastic valve with a threaded brass spigot 😏👍
What a great video, thank you for sharing ☺
Food looks yummy! Do you have leftovers or eat all in one day
wow, amazing mother nature is cool, i just joined you, your videos are so cool, love mother nature people.
Everything looks great, only thing I would have done different was to fry up some bacon first then cook the potatoes in the bacon grease.
... Always a treat ,, I need to pay attention to your dutch oven meals .... awesome location ..
Love your channel! Thanks for sharing 🙂
Amanda that cast iron seasoning looks perfect!!!! How do I get mine like that 😩
I use my cast iron pan every day so it's just built up such a good seasoning. I also rarely clean it unless I cook something that is stuck to the pan or has a strong flavor like bacon or salmon.
Where do you get your pots and pans and cooking essentials?
I wonder if the sausage and rice dish you made would be good in a wrap and eaten for lunch
It is really delicious leftover!
What brand is your tent? How does it do in the rain?
Great channel. You're going to go far.
Love these ideas
Tiny seasoned potato cubes for the win! 😂
😂 that really is the perfect name for them
What’s the name of the camping ground? I’m from California and I really want to visit Utah. Also, doing lots of camping for one year at least hahaa
Awww, now I'm hungry for camp food!🤣
Editing this video made me so hungry!! haha
That’s seriously the best salt. My grocery store stopped carrying so I switched thinking I wouldn’t notice a difference. Wrong! Now I buy the kosher style in a bucket. 😆
Luckily, it's mined right here in Utah, so I can easily buy it! I even put it in my water now to help me stay hydrated.
Hanging out with you is always a blast. wen
Do you have any good spots to camp near capitol reef? We are going near the end of this month and haven’t decided yet.
I love your channel
I’ve been trying to find the recipe for the Dutch oven dessert shown here and I can’t find it anywhere. I bought the ingredients that I think are in them but, I would like to know how much of each item.
Thanksÿ💜
Hello, great video with good ideas. Would you please tell me the name of your camping spot ? Alles Gute aus Deutschland...
I’m with you on the barefoot. When I was a child 6 decades ago I rarely wore shoes. Mama would be less than happy to see me barefoot in the snow. Oh to be young and warm again. Thanks for all your tips. 😊☮️
You're welcome! When I was a kid, I was always outside barefoot!
Which park did you go to? Thank you.
It's a nice video. It was fun.
You got the recipe for that dessert?
Ugh! I got a cast iron griddle and I'm totally regretting it. Should have gone with the skillet. I can't get the griddle clean for anything.
.. just clean it extra bare and season it in the oven ... after a few uses with oils ,it will be non stick .... remember never use soap ....
Flip it over the fire and burn it out. Then season again
Ohhh please post that recipe for that desert you made. mmmmmmmmmmmmmmm!
What do you do with leftovers?
Awesome.
Yum.
Is this in Utah ? It looks similar to White pocket.
Super!
Where is this campsite??? I want to read a book on the rocks!!!
How long did the potatos take? :)
wow, where is this place please! I’m obsessed with rocks
"My favorite salt on earth" invites questions about your favorite salt on other planets.
That all looked amazing, will definitely try that dinner recipe!
What song playing during the last third of the video?
What is the salt ? Thank you
I swear, coffee just tastes better when we are camping.
I agree!!
Where is the zip baggie from shown at 7:00?
Not the stasher bag
I got it on Amazon by the brand Bumkins.
