    Try my simple, step by step recipe for making this delicious Vegetable Dum Biryani at home.

    VEG DUM BIRYANI RECIPE:
    Preparation time: 20 Minute
    Cooking time: 30-35 Minute
    Serves: 4
    Ingredients
    Vegetable Marinate
    2 Winter Carrots, Cubed
    1 Small Cauliflower, florets
    15-16 French beans, Cubed
    ½ cup Fresh Green Peas
    1 cup Curd
    2 tbsp Ginger Garlic Paste
    1 tbsp Ghee
    ½ tsp Turmeric Powder
    ½ tsp Red Chilli Powder
    ½ tsp Coriander powder
    ¼ tsp Shahi jeera
    A pinch of Saffron
    ½ tsp Javitri Elaichi Powder
    3-4 Mint leaves
    Salt To Taste
    ¼ cup Fried Onion
    For Biryani
    1 tbsp Ghee
    ¼ cup Oil
    3 Medium Onion, Sliced
    1 Javitri
    2 Cloves
    ½ tsp Shahi jeera
    ¼ cup Water
    For Rice Cooking
    Water
    3 Bay leaf
    1 Big Cardamom
    1 Javitri
    2 Clove
    3-4 Black Peppercorns
    Salt to Taste
    2 cup Basmati Rice
    For Jhol
    A pinch of Saffron
    2 Green Chillies , slit
    1 tbsp Ghee
    1 cup Milk
    1 tbsp Onion Flavored Oil
    1 tbsp Kewra water
    ½ tbsp Rose water
    Few Mint Leaves
    Few Fried Onion
    For Burani Raita
    1 ½ cups Curd
    1 tbsp Garlic
    Salt to taste
    Charcoal for smoking
    Process
    For Marinade
    ● In a mixing bowl, add winter carrots, cauliflower florets, French beans, fresh green peas mix well.
    ● Add curd, ginger garlic paste, ghee, turmeric powder, red chilli powder, coriander powder, shahi jeera, a pinch of saffron, javitri elaichi powder, mint leaves, salt to taste, fried onion and mix well and keep it aside.
    For Cooking of Rice
    ● In a large saucepot, add water for boiling, add bay leaf, big cardamom, javitri, clove, black peppercorns, salt to taste let the water boil.
    ● After boiling water, add the soaked basmati rice and let it cook.
    ● Strain the excess water and set aside.
    For Biryani
    ● In a large saucepot, add ghee, oil, onion and saute till translucent and brown in color. And keep it aside.
    ● In the same saucepot, add remaining ghee, javitri, cloves, shahi jeera let it splutter.
    ● Add the marinated mixture into the saucepot and mix well and let it cook for 10 minutes.
    For Jhol
    ● In a pan, add saffron, green chilli, ghee saute well.
    ● Add milk, onion flavored oil, kewra water, rose water and mix well.
    For Layering
    ● In the same saucepot firstly, Arrange a layer of rice at the bottom. Over that arrange half the cooked vegetables followed by another layer of rice.
    ● Pour the milk mixture all around the rice. Few mint leaves and fried onion.
    ● Arrange the remaining vegetables followed by the remaining rice. Sprinkle the remaining milk mixture and few mint leaves and fried onion.
    ● Cover and seal it with dough and cook for 20 minutes. Serve hot with raita.
    For Burani Raita
    ● In a bowl, add curd, garlic, salt to taste and mix well.
    ● Smoke it with charcoal and clove.

    Ranveer, we tried this recipe at home last weekend as-is without any changes.
    It came out fantastic. The individual flavors were coming through so well, and the flavors were perfectly done, not intense and not too mild. and the overall experience was like having an exquisite food at a classy restaurant. So thankful to you for sharing this. This was the best biryani we have had, better than some of the well known restaurants. Won’t take names. Haan aap kahoge ki aapne bataya nahi 😀 but naam mein kya rakha hai. And btw we love your history lectures. Keep them coming.

    You are One chef whom I listen to throughout the show without forwarding even for 5 sec. extra boost comes with the smile, tricks and technique. My first source any day and anytime for North Indian cuisine 🙏🏻.
    The fun part is, I watch you even when I have a better recipe (May be for the smile and also just for that one trick or suggestion). for example, my father has experience in cooking sweets and savouries for over 40 years (he’s 55 now), even then I watch his videos for which I already got a recipe from my dad. I was born in a farmer turned halwai family.

    I must say to you Ranveer, I followed your veg dum briyani recipe I nailed it. Everyone appreciated the taste and texture of the biryani. Everyone said bilkul restaurant jaisa lag raha hai.. though for any recipe I see your video. But commenting on this one.. Ranveer sab batate hai bs hum bhool jate hai or bolte hai Ranveer apne bataya nhi ...

    I actually made this veg biryani with a slight twist : added some pan fried paneer marinated in spices and yogurt and the dish turned out to be great. My first ever paneer veg biryani was just 😋

    Its a delight to watch Chef Ranveer Brar when he talks about Food and its history behind..In one word he is amazing and each and every recipe looks yum..I being a homemaker now and a new mom get so much of inspiration to cook food when i watch him cooking..I have a dream to meet Chef Ranveer with my 6month baby..Least but not last " Haste khelte khana ban jaye to kya baat hai"..God bless him and his family..☺

    Hi chef, I tried your biryani recipe in Jain version i.e. without onion and garlic and few ingredients like rose water and kewada essence missing due to lockdown could not get them.... but still turned out awesome and yummy.... thanks for the recipe
