    Just a small correction
    Mustard and Wasabi contain Allyl Isothiocyanate which is a pungent compound and not Methyl Isothiocyanate

    Bhai, kamaal content hai. Tons of video on why spices feels hot on internet, but none makes them so ' special' as Geeks and Ashok did. Will be curious to know what the Great Ashok used for spicing up his meals.

    i got doubts regarding the removal of the stalk, I will test that out, but from experience I have seen chillies rot like bell peppers from the skin and usually keeping the stalk is recommended to preserve fresh vegetables, although not forever.

    I wondered why we have a have a tendency to add lemons to our spicy chicken curries. May be because its acid dissolves some of the heat and makes it just right for the specific person. Thanks for explaining.

    After watching this I realise that cooking is not art as they say, it is science.

      Actually it's both. Someone that has no clue how to cook anything can open a cookbook and completely bork a recipe despite following the instructions. Whereas someone that either has been taught through passed down knowledge (like family recipes and cooking) or through culinary schools can take the existing science and adjust and mix and match and tweak and modify the ingredients and still come up with something enjoyable to eat.

    Chillies are not taste they are sensational. The best way to demo it is, our hands burn when we touch grinded chilli. Same time we don’t feel sweetness when we touch sugar or dont feel bitter when we touch salt.

    But same time heartbreaking, today I came to know that idili is not South Indian, but only a vertion !! Also from Google, my favourite kappa(tapioca) is also not South Indian but Brazilian!!
    How sad 😢😅

    Hi sir my husband and me love your channel and really appreciate telling us what is happening behind the scenes for cooking. Very very informative 🙏🙏 I have one request please do a video of cooking biriyani. And Why you don't get same flavor/aroma when you cook at home Vs in the restaurant. I'm not big fan of biriyani but brother and my husband 😜 I live in California but when you go to Indian restaurant in India the biriyani taste so different. The smells stays in your hand for so long. Please help me out this. I asked this question to lots of TH-cam blogs but never got an answer 🙏🙏

    Most Indian languages differentiate between temperature hot and spicy hot. It is English that is lacking.

    Nice video! ... Why do I have the perception that different type of chilli burn different? Some burn very much but it's very pleasant in the whole mouth (for example Scotch Bonnet) and others burn in the throat or on the lips but not so much in the mouth? I mean at the end it's Capsaicin ... but why this differences? I had a lot of different chilli plants but only kept this plants from whom I like how it burns in my mouth (some have also differences in taste but that's another story) .

      Allyl Isothiocyanate is the molecule that causes that burning sensation in mustard, radish, horseradish etc

    Is astringent a taste ? Aren't there "Shadruchulu" which means 6 tastes, Vagaru as it's called in Telugu refers to anything which leaves a tongue coating kind of taste. Like a unripe gooseberry. Isn't there a "6th taste"?

    Born in Mexico, I've been chasing chilies all my life. There are terpenes I'm sure, because I can taste differences in all peppers regardless of the spiciness. Non spicy peppers are duh.

    Am now a bit confused. Ok,chillies or capsaicin have no taste,agreed, but I feel they do have a flavour. To illustrate the point, living here in Australia it's quite rare to come across that particular flavour that Indian chillies have. Oh, how I miss it 😂.

      Oh yes. Some chillies like Habaneri, scotch bonnet and several others have a lot of flavour, largely driven by aroma! Not taste

      Chillies and Mint trigger 2 entirely different receptors (heat and cold) so the effect will not be what you assumed it might be. It will just worsen since double the stimulation is happening
