    It's basically the percentage of solid present in the compound if u come around different brands then u can easily compare n that's the reason the COD 15 is mellower n COD 16 is slight bitter due to more Percentage of SOLID!

    to make home made chocolates which is better compund or chocolate?

      Hey, depends on alot of things. If you use couverture, you will have to learn to temper the chocolate. Couverture chocolate is definitely better in taste and good for health and of course better quality than compound chocolate anyday.

      Anything that tastes good to you. I like callebaut personally.. but if for orders that gets expensive you can use morde couverture too

    If we make ganache out of compound chocolate...will it not melt at all ?..as couverture melts a lot while making chocolates? In summers

      Actually like I said climate and chocolate pe depend karta hai.
      Agar aap compound use kr rahe ho then 2:1 and if real chocolate I’ll suggest 1:1

      Absolutely. Couverture tasted much better than compound. And the bitterness helps with balancing the sweetness that comes with fondant

      Hey, I use compound. For truffle you can also use couverture as tempering is not needed. But if you want to make a bark then couverture has to be tempered

      Sure. I do, I consume couverture chocolate with hazelnut sometimes. I chop them into small pieces and store it

    Can diabetes patients eat dark chocolate..?? What is suitable for them..?? Please advise anyone

      Hey, depending on how high the diabetes is.. you can check with your doctor & consume it. And also in dark chocolate try to consume couverture not compound. But of course depending on what your doctor recommends. Please do check with him/her

      Hi, no. For Belgian chocolate you will have to use any kind of Belgium chocolate (callebaut, Amul)
