Thank you very much for sharing useful information. As I am staying in the USA. I don't find a similar kind of compound as we are using it in India. So, do you have any idea about compounds used in the USA? I have searched for the ingredients you mentioned in the video, but every chocolate consists of cocoa butter. But I found only 2 brands that consist of oil and the below ingredients and also, those are available only in two flavors, i.e., vanilla and chocolate. Ingredients: Sugar, Hydrogenated Palm Kernel Oil, Cocoa Powder Processed With Alkali, Nonfat Dry Milk, Soy Lecithin (An Emulsifier), Natural Flavor. My question is, can we use these compounds, or please suggest to me if you have anything. Thank you very much. Sorry for a lengthy message.
Compound chocolate has a cardboard like taste. It tastes worse in cakes and brownies. I prefer cocoa powder based recipes if pure chocolates are unavailable for baked goods

I have used both compound chocolate and couverture chocolate in many recipes and saying it tastes worse would be an exaggeration i feel.
