Hi the Chocolate petals or leaves should be kept in the fridge or freezer to set n how to avoid the condensation, once it comes to room temperature it's start condensing

It’s up to and ur taste preference I prefer chocolate so chocolate butter icing is a fav But say if u r making a fruit cake or a black forest then u have to use cream So it depends on the cake too
