RIJLA (PURSLANE) INSPIRED SPINACH & ADES || SPINACH & RED LENTIL STEW

  • This is a Sudanese/South Sudanese dish inspired by the stew rijla (purslane). Rijla is cooked with your choice of meat (lamb, beef, goat), lots of onions, tomato paste, ades (red lentil) & spices (mainly, black pepper, coriander and cumin powder).
    INGREDIENTS LIST:
    1 kg lamb curry with bones
    3 large onions
    3 boxes frozen spinach (250g each)
    1 cup red lentils (500ml cup or 2 cups if you use the 250ml cup)
    1 cinnamon stick
    1 tablespoon coriander powder
    1 tablespoon cumin powder
    2 tablespoons vegetable stock powder
    2 tablespoons tomato paste
    1 tablespoon garlic paste
    Canola oil
    Salt to taste
    Black pepper to taste
    HOW MY FAMILY & I EAT THIS: I have served this with rice but it can also be with kisra (Sudanese flat bread), injera (Ethiopian flat bread) or asida/ugali (a popular East African staple dish made with maize flour).

    You made me miss rijla😋😋. By tha I recwntly found frozen pumpkin leaves in a middle East store. Can't wait to cook it over the weekend 😋

      Rijla is hard to come by here so we improvise with spinach. Hope you enjoyed the pumpkin leaves.
      The things we find in African, Asian & Middle Eastern stores! I found tamarind & was so excited that the thought of it’s sour taste had my mouth 🤤 I eventually had a taste and the disappointment 😭😭😭 … the damn thing was sweet! I’m traumatised to date 😂😂😂

      You’re most welcome. It can serve 6-8 people depending on what you serve it with. For example serving it with rice, you would use less stew than if you serve it with bread. Hope you enjoy ❤️
