  • MULLA WEKA || DRY OKRA STEW COOKED WITH TOMATO PASTE
    Mulla weka (dry okra stew) is a Sudanese/South Sudanese dish. It is made using powdered dry okra which is cooked in a blend of garlic and spices (mainly coriander powder, cumin powder & black pepper).
    INGREDIENTS LIST:
    1 kg lamb curry with bones (your choice of meat, goat or beef)
    3 large onions
    2 tablespoons vegetable stock powder
    1 tablespoon coriander powder
    1 tablespoon cumin
    1 tablespoon garlic paste
    1 1/2 tablespoons tomato paste
    3-4 tablespoons canola oil
    Salt to taste
    Black pepper to taste
    HOW MY FAMILY & I EAT THIS: This has been served with injera (Ethiopian flat bread), and can also be eaten with asida/ugali (corn meal), kisra (Sudanese/South Sudanese flatbread) or bread rolls.

    Nice one, I just soak my in cold water beat it with fork while I prepare My soup base Also at times I add miakuka to the okra powder.

      Greetings for Melbourne, Australia! Welcome to our mini family & thanks for the support. This channel is quite young and we’re growing at a slow but steady rate. I’m not sure where you’re located in the US, but if you have a local Sudanese/South Sudanese store, they might have some. Sometimes Ethiopian or Eritrean stores sell it too.
      There’s a business in the US called ‘Taste of the Nile’ (I’m not sure where they’re located). Please look up their Facebook page and contact them. I saw an advert about a week ago stating that they’re selling dry okra. All the best with the search. Kindly let me know how you go ❤️

    As a Sudanese, I've always liked weka, but when did it become a South Sudanese dish?

      Growing up, despite being born in Khartoum, family members who lived in the villages of the then Southern Sudan also cooked mullah weka. It’s both Sudanese & South Sudanese.
      Putting politics aside &/or artificial borders you can’t really separate Sudan & South Sudan.
