I just tried the recipe and have to say it's just awesome. I put in 200 grams lentils and about 220 grams of pasta and it turned out perfectly. I also don't like celery but left it in and am happy I did. There was nothing left of the celery after cooking but it adds so much depth to the taste, I would really leave it in. Great recipe, many thank Vincenzo for another fantastic and really unusual dish.

Thank you so much Vincenzo! I made this today as lent has begun. I left out the gaunciale, but it tasted perfect. The rosemary does so much for the taste, along with the soffritto and the al dente lentils. It was filling and I've now got several portions over for the coming weekend. Much love from a cold Sweden.

Usually most recipes for all 4 dishes are the same, except for the lentils/beans/potatoes/chickpeas, but even then they’re all very nice. And there are some variations like vegetarian or pancetta/guanciale/lardo/proscuito. Or even using anchovies. Some use fresh tomatoes instead of canned/bottles and other cheeses like smoked provola.

Barley is a Grain whereas Lentils is a Legume, and if you're more or less after carbs and proteins, then Lentils being a 'Super Food' is much higher in protein, and very high in B-vitamins and much more and high in minerals than Barley but, also less in sugar than Barley! Although, both are good...BUT you will not get that very special 'nutty' flavour that Lentils has compared to Barley, not even close! So it then falls in the taste category and as a Chef, I 'd very specifically choose superiorly over legume based Lentils than over blander-tasting grain based Barley and besides, Barley is more 'carb-y' ... but mainly, the taste and texture of 'creamy' Lentils supersedes any 'gummy' grain! It's like someone thinking that chalky Chick Peas is as good as smooth Northern White Beans! Not even close!
Vegans and vegetarians like the extra flavour that you talk about on the video when you mention the panceta and what we do is use, for example, liquid smoke or smoked paprika. Lots of flavour!! :)
Here in the south of Germany we have 'Linsen mit Spätzle'. As little kid I stood beside of Oma♡ when she was scraping the Spätzle from a board into the pot. It is my dish when the kids, the family comes together from around the world (: And here on the table there is a bottle of vinegar! Fits so perfect!
We have very similar dish in Slovakia, too. But we can add some pork meat with that. Great combination. No wonder, our cuisines are mutually highly influenced.
OMG, my granny was from the part of Hungary with lots of Germans and she made a thick lentil soup served over spaetzles and we sprinkled vinegar on it! I haven’t thought of it for ages but it was so good I will make it again ❤️
I can smell it from here! My lentil soup is very similar. Obviously more stock, no guanciale, and I use fire roasted tomatoes instead of passata. I also cook the ditalini separately to add during plating so they don't turn to mush.

Yesterday I made my favorite winter soup... lentil soup! And, it is exactly what you made with only a couple differences. I don't use guanciale, I use bacon, and I don't add pasta or cheese. Mine is delicious as it is, but now I have a variation to try! Thank you, Vincenzo!
In Syria we have a fresh pasta lentil dish ,we boil the lentils in Tamarind water than add the fresh pasta we fry onions until golden and in another skillet suate crushed garlic with green chopped cilantro then in a plat reassemble the lentils pasta and the fried onions on top also the garlic cilantro and pomegranate seeds
Thanks for this Vincenzo. As a vegetarian many of my regular meals are pasta e ceci and pasta e fagioli so this is a welcome variation. I was in Rome a few weeks ago and got obsessed with finding restaurants that served these soups. I found quite a few - mostly in the Jewish quarter but also a couple in Monti and Trastevere. I hard to search pretty hard though. I think they thought it was strange that a tourist wanted this kind of food!

Vincenzo, I look forward to and love all of your videos and recipes. I make this dish several times during the fall and winter months with some deviations. Instead of using passata, I use petit diced tomatoes. I also use chicken stock in lieu of the vegetable stock. I use the Ditalini pasta, but have never seen them with ridges before. I like beans but never tried lentils. I believe this recipe is a great way to strike out on the lentil journey of discovery with others great lentil recipes. I get a kick ever time you say, " they have to make la little love in the pot or pan together" This recipe has so much character it not a soup or a stew it truly a pasta dish and a luxurious sensual flavor explosion in your mouth and the addition of the italian pork quanchella with the smoky and oily texture from the fat made this go over the top with flavor compounds and umami taste. This was a great recipe.

I've made this several times in the past few years. I've also added TVP, textured vegetable protein when I add the pasta, sometimes instead of the pasta.
One of my great Italian friends makes orecchiette e lenticchie every christmas, very similar to this. It is made in two pots, and the lentil "ragú" has more tomato, she says the recipe has been in her family for centuries. I can't wait to give your recipe a go!

@@vincenzosplate In our homes, the kitchen is the most important place, there could be 26 other rooms in a house, but everyone is always in the kitchen, other people can’t understand that here in the states, at Holliday season, the day began 2 weeks before, I remember my mom cooking everything, and my dad was entertaining people as they came to the house in droves, all day into the night.we would have 18-20 people at the table, and 2 other tables for the kids, everyone got wine, even the kids, but they got wine and orange soda, it was called a wine cooler, then they would make salsiccia when the sun went down, and the lentils came out with fresh bread, no body cared about the salsiccia, they wanted that juice in the pan from the salsiccia with that fresh bread. Things were so simple in those days, we all came together just because we were family, I really miss those days, thought I would share some of those memories, I think these are the things that we get to take with us, I’m usually alone at the holidays now, it’s ok though, I have these memories. 🙏🏽

Nice! I make it with both pancetta and Italian sausage, and my guests always prefer the sausage version (we're Americans, what do we know?) 😉. When making this for a large crowd, I boil the pasta and keep it separate tossed with a couple of tablespoons of olive oil so the pasta doesn't get gummy sitting in the dish. My guests can add the pasta if they want or not if they're carb counting. Prepared that way, it can sit out for hours and guests always get a fresh bowl without gummy pasta. Keep up the good work!

The dish looks great! I'm definitely going to make it soon. Also just a thought: if people are sensitive to lentils and produce a lot of gas eating legumes, it's a good idea to soak the lentils the night before and make sure to through the water out. Or use the canned ones.

Well, I have some digestion troubles with lentils in general but I really want to try it ! I have three weeks for Christmas, I will try to make it. Just finding the same pastas might be difficult but well, they need to be small with a hole and if possible strains on them. Thank you for this recipe Vincenzo's !

perfume: "Passage D'Enfer" by L'Artisan, might be out of production but there's an "extreme" version that's been available more recently, not just rosemary, also some weird dried rose and other odd scents, smells kind-of like a scary church on a rainy day. Highly recommended.

Instead of using passata, I use petit diced tomatoes. I also use chicken stock in lieu of the vegetable stock. I use the Ditalini pasta, but have never seen them with ridges before. I will be on the lookout for them in

I like beans but never tried lentils. I believe this recipe is a great way to strike out on the lentil journey of discovery with others great lentil recipes. I get a kick ever time you say, " they have to make la little love in the pot or pan together"
This recipe has so much character it not a soup or a stew it truly a pasta dish and a luxurious sensual flavor explosion in your mouth and the addition of the italian pork quanchella with the smoky and oily texture from the fat made this go over the top with flavor compounds and umami taste.

One of my great Italian friends makes orecchiette e lenticchie every christmas, very similar to this. It is made in two pots, and the lentil "ragú" has more tomato, she says the recipe has been in her family for centuries. I can't wait to give your recipe a go!

@@vincenzosplate In our homes, the kitchen is the most important place, there could be 26 other rooms in a house, but everyone is always in the kitchen, other people can’t understand that here in the states, at Holliday season, the day began 2 weeks before, I remember my mom cooking everything, and my dad was entertaining people as they came to the house in droves, all day into the night.we would have 18-20 people at the table, and 2 other tables for the kids, everyone got wine, even the kids, but they got wine and orange soda, it was called a wine cooler, then they would make salsiccia when the sun went down, and the lentils came out with fresh bread, no body cared about the salsiccia, they wanted that juice in the pan from the salsiccia with that fresh bread. Things were so simple in those days, we all came together just because we were family, I really miss those days, thought I would share some of those memories, I think these are the things that we get to take with us, I’m usually alone at the holidays now, it’s ok though, I have these memories. 🙏🏽

Nice! I make it with both pancetta and Italian sausage, and my guests always prefer the sausage version (we're Americans, what do we know?) 😉. When making this for a large crowd, I boil the pasta and keep it separate tossed with a couple of tablespoons of olive oil so the pasta doesn't get gummy sitting in the dish. My guests can add the pasta if they want or not if they're carb counting. Prepared that way, it can sit out for hours and guests always get a fresh bowl without gummy pasta. Keep up the good work!

The dish looks great! I'm definitely going to make it soon. Also just a thought: if people are sensitive to lentils and produce a lot of gas eating legumes, it's a good idea to soak the lentils the night before and make sure to through the water out. Or use the canned ones.

Well, I have some digestion troubles with lentils in general but I really want to try it ! I have three weeks for Christmas, I will try to make it. Just finding the same pastas might be difficult but well, they need to be small with a hole and if possible strains on them. Thank you for this recipe Vincenzo's !

perfume: "Passage D'Enfer" by L'Artisan, might be out of production but there's an "extreme" version that's been available more recently, not just rosemary, also some weird dried rose and other odd scents, smells kind-of like a scary church on a rainy day. Highly recommended.
