That’s super common, no worries 😉 I suggest you bring the water to a boil, and when you drop the pasta in, you simmer for 2/3 minutes. Then you strain and finish off the heat

I'd once tried a pasta that was made from edamame, and not only was it high-protein, but it was pretty indistinguishable from regular wheat pasta I'm used to (though that likely says more about my pasta boiling than it does the pasta itself haha) - the biggest issue was it costing 5-6x the price/kg, so will have to try and make some from scratch!

Your video has really opened a window for me! Thank you! For the New Year I am investing in an Omega Juicer which comes with a few attachments; one of which is a pasta attachment; now you have given me a purpose for that! There is also a breadstick attachment, which also doesn’t have a purpose… yet! Is there anything more you can do with those legumes to help me out with this?! Boiling the pasta do deactivate the lectins but since it is a short time, the lectins content might be still high. Perhaps, soaking the legumes (discharging the water) and then cooking them and after the grinding add some rice (or corn) flour to get the dough with the right texture and low in lectins. Lectins in high dose can be bad for human health.
while boiling for a short time might not eliminate all lectins in legume-based pasta, the reduction is likely significant, especially when considering the prior processing of the legumes into flour. Additionally, the extrusion process used in pasta making could also impact the lectin levels.For most people, this makes such pasta a safe and nutritious option. Generally, the levels of lectins in well-cooked legume-based pastas are safe for most people. Problems usually arise from consuming raw. However, individuals with specific sensitivities to lectins or digestive concerns should consider their personal dietary needs and consult with a healthcare professional if necessary.

I would wash, soak, not overnight, but a few hours, oven or sun dry (on towels), then blend into powders . washing is necessary, if only to remove the polishing and other residue from the processing of the lentils or any store bought item anyway. at least where I come from. but this is a fantastic idea for healthy GF pasta!
I found a study on lectins in peanuts and they found out if you roast them at 177°C for 30mn there was no more lectins in it. So maybe roast them? That would explain why my Lupine flour is labelled as roasted.

Carbs have nothing to do with gluten. These pastas still have high carbs
