This is a variant on one of my favourite dishes of the Viennese cuisine, which is where I come from. Or maybe it actually is the origin of the Viennese dish I love so much. It is very similar. The key difference being in Vienna we don't put pasta into the dish we pour the lentils over dumplings made from stale bread. The details of the lentils may also vary but the basic dish is the same.

MAN ! Such QUALITY instructions! you explain prep technique, not just listing off ingredients, you explain it for beginners yet show how is can be done advanced! One note, small thing, really. Depending on how you prep your garlic, it will have different cook times. People never seem to notice this and it can really mess with a dish! If someone watching this decided to cute their garlic small, it'd be burned and gone when the mean finished. Small thing I know, but many people have one way they prep garlic and they will always use that method

A question for a pro: in the past when I've used lentils in soups, once they start to boil they seem to shed a papery outer skin that doesn't dissolve in the dish and makes for a really unpleasant texture. Since you didn't call out any special preparation for the lentils here, you don't run into that. Have you ever seen that happen, and do you have a particular brand or type of lentils you'd recommend for this?

Bravo Steve, congatulations on 1M subs! I started watching NACS about 4 years ago and have been hooked ever since. As an Italian-American in the NY metro area I find your recipes very familiar and authentic, but you always elevate them. This Pasta Lenticce recipe is yet another example with the pancetta and herbs, and looks delicious. Keep up the great work, 1M subs is just the start!
So I have to say I made this tonight and wow, what a flavor bomb! I used a 50/50 mix of red and green lentils, and a nice thick cut bacon since I didn't have pancetta. Thank you for the great food!
I have a friend whose family would break out the skinny sausage and lentils at midnight. I eat lentils every year for luck and all year as well. I love it with escarole.

In Hungary we would cook lentils as pottage as to have luck in the new year because "Lencse"(lentils) rhymes "Szerencse"(luck) and eating it with pork sausages and bread so food will be on the table the whole year along with meat(richness).

Very similar to a German lentil stew, which is often served on top of separately cooked egg pasta and a Vienna sausage on the side. ("Linsen mit Spätzle")
