how do you know how much to extend the compass

From vertex A, you're drawing an arc that has to intersect the opposite side (BC) in 2 places. So, just open the compass wide enough to do that. You can see where BC wasn't long enough, so I extended the side, so that the arc would intersect that line in 2 places. Hope that helps! If you're asking about constructing the perpendicular bisector, then the compass needs to be open wider than halfway between the 2 endpoints.
