    My Grandmother never tightened the lids down till arter the water bath. I remember watching them bubble the air out in the water. After removed them they cooled off they would seal tight.

    When i made mine I used brown sugar for half of my sugar content.

    Scald them in hot water and peel will. Come right off.

    Thanks for this recipe. We have 3 pear trees that produce well, but the pears have tiny little hard bits that are aggravating to bite into! Have you ever found this? Know a rememdy? Thanks.

      I see this on some of the pears we harvest as well. I don't know a remedy, I usually cut the spot out with a knife. Thanks for your comment!!

      Those are called seeds. They happen sometimes

      No certain time frame.....I still have a few jars from last year.....I will probably open one of these sometime this winter.....in the past, I have ate a new jar the next day.

    Do the pears not scorch when cooking for an hour on med-hi? We were just given 2 five gallon buckets of pears and I want to try this recipe!!

    how do I sanitize the jars?

      My dishwasher has a sanitation cycle. I washed them using this cycle......you can also place them in boiling water for a few minutes.

    We have a pear tree also, with lots of pears. So why not try this. Anyways I see the Hotty Toddy cup are you from Mississippi a well?
