Thanks for the inspiration for keto fried chicken. I found that frying it in a cast iron skillet in lard on high heat until the skin get very crisp, then a dreg in psyllium husk powder and frying again on med high heat created a perfect keto fried chicken that was nearly identical to my pre keto days.
I use Pork Rinds ground fine in the Blendtec, Season the rinds, coat the chicken with egg and rinds and bake on a cookie sheet with a metal grid, all at the same time until done completely or you can partially cook them, and then use the Air Fryer to finish them off. The Chicken is very crispy and it's Zero Carbs.

Was intrigued by the crust and just tested it out on my chicken wings which i had seasoned before i saw this recipe. Verdict: the pyslium husk crust is really crispy but with a tiny bit of slime feel after due to the p.husk which is a given. The coating kept the chicken very juicy. Awesome!! Will try the full recipe soon!
That's why I hate using Pysllium Husk and Xanthan Gum. No matter how miniscule the amounts, it will always render a "slime" feel. I'm going to look for an alternative to those and to pork rinds.

I used this with some psyllium husk today and the tenders came out very dark brown. After taking a bite we noticed it was sweet. It was the equate brand and on closer inspection it has 4g of sugar per tablespoon[the net carbs in it are entirely the sugar]. It still turned out good and doesn't break my carb limits, but sweet was not the flavor we were expecting. Was still good and we used some chipotle powder to make sweet n spicy wraps. I'm now thinking of adding this psyllium husk to one of your cookie recipes to try and make snickerdoodles as the flavor was kinda similar to cinnamon sugar.

I made this for my mom today. It's NOT crispy, but it's tender and soft. If crispiness is what you want this is not it. If you want tender and soft fried chicken, this is definitely the one. Thanks for sharing the recipe.
I used boneless thighs and cut it into small pieces, I used coconut oil to fry in..it was so delicious. I will be making this Keto Farcha again! Marinating it all day certainly got the flavors into the chicken.

haha well it's not a medicine but it is used for constipation since it's just fiber.

I think you should run it through the breading again after the egg and then fry it. It looks good, I gotta try this.
You think almond flour will work for the batter?
Yeah it does but I find it's too heavy because it's literally like ground almonds. This keeps the batter nice and light and crispy.
