    I do not have a dehydrator, so I cut up lean chicken breast into small chunks and cook them on the stove top until they are really dry. Then I use a Nutribullet blender to grind the chicken into a fine powder and then spread the powder out on a sheet pan in the oven at low temperature just to dry it out some more. I use it with Indigo Nili's "breading" recipe (instead of pork rinds) to coat shrimp and other meats, works great!

    I'm in a horrible health trial with no income and only foodstamps. I have a very limited budget and I'm trying to go carnivore to help my health. So many influencers use brands I can't afford to even try once. Videos like this are a life saver for me. On good days I try to make things to use in recipes. On bad days I have pre-made foods put up in the freezer to use when I can't cook. Most sick people trying to get better can't afford the expensive carnivore and keto brands. So thank you for this.

    I bought about 5lbs of chicken breast and pressure cooked it, then let it cool, then I used my food processor to shred the chicken. Then I baked the shreds in the oven at 400 degrees for 30 minutes stirring it often. Then I used my powerful Nutribullet to pulverize it to a flour and then sifted it. I only used my grinder to finish off a few bits that didn't pulverize. I got a little over 3 cups of chicken flour. I didn't salt my chicken at all since I wanted to mix the flour with bamboo flour, egg white powder, and gelatin and use in place of wheat flour in a recipe. The bread I made out of it turned out quite dry, but it works pretty good when you make it into french toast, or grilled cheese sandwiches. Beware it has a lot of fiber in it.

    I have a freeze dryer. I buy 2 or 3 rotisserie chickens every time I go to Sam's, pull it off the bone and freeze dry it. I've recenty used some to make meat flour. It's amazing! Game changer!!!

    If you have a newer oven the convection setting is really good and the temp can be set to 175. I do it all the time

    I'm glad for this version. I like options. I was wanting to make meat flour a few months ago and found a TH-cam channel @Allergies Bites, but Taste good she created a year ago.
    She used a roast and cooked it in crockpot then dried her meat and then blended.Turned out really good. I have a Cosori so I'm going to try this version next.Thanks again for another great recipe!

    I made my own chicken flour this week. I used my dehydrator which on high can get to 220F. I got 4.2lbs of chicken breast. I trimmed the fat off of it and sliced it really thin. From there dehydrated for about 12 hours. Seeing my dehydrator gets to 160+ then felt safe from salmonella.
    After that I used a food processor to break down the larger bits and then put the rest in my coffee grinder attachment for my personal blender. This ground it down to a fine powder.
    All in all this gave me 2.1lbs of chicken flour. So about 50% of my original weight.
    Will be making Mel's Clean Keto Flour for my wife this weekend.

    Well Ya'll done it! 👏🙌 I've been waiting for this video! So I have been thinking about trying to make my own carnivore flour in my dehydrator, and even contemplated using my freeze dryer!?🤔 I figured either Joe and Rachel, or Anita from Ketogenic Woman would be the first to come up with a homemade version and I was right!!! 😁 I really appreciate you two so much! Thanks for saving me money and time by giving me the formula I needed to begin making my own carnivore flour! Love ya's! 🥰

    What about using a freeze dryer? Freeze dry the meat, and then grind it up to a flour texture.

      That would only work if you cook the meat first (like the chicken). The problem with freeze drying it is it will take a long time. The average freeze dry cycle is 24-36 hours)_

      @@2krazyketos I just looked up if you could freeze dry raw meat or not and what I found said it didn't matter if it was cooked or raw. It said to package it with an oxygen packet, (whatever those things are called) one sight said pack it in a mylar bag (it gave a thickness) and it should last from 10-15 years. It said to mark it well if raw so it gets cook probably.

      @@dawnwatkins6554 yes, you can freeze dry raw beef. But, that is for preserving the meat and making it shelf stable. But that is not the same as drying it for a flour. As soon as you expose it to air, it begins to rehydrate and that process will happen quickly if you turn it into a powder. At that point, it will no longer be a carnivore flour. If you want to make a flour or crumbs, it MUST be cooked . And any freeze dried meat needs to be cooked upon rehydration

      This is what I'm going to try with cooked chicken. I will be able to maximize how much I can make at once. Vacuum sealed in jars it should be shelf stable for a long time.

    I just made chicken flour today, my first time trying it! I had a left over chicken breast from dinner last night and used it.
    I actually followed another TH-camr's recipe, b/c I just now found your page. I used a Magic Bullet to grind the chicken after using my microwave to dry it out. It worked great. Now i just need to go through your recipes and find one using my chicken flour!

      ​@@Sharis_Lovehi 😊 I kept my chicken flour in a Mason jar in the fridge. I have not made it since the first time, but would make it again if needed b/c it's a lot healthier than wheat flour and much cheaper than buying premade meat flour. ❤

    I just got a ham maker/meat press and meat slicer. I can't wait to try making pressed chicken breast then dehydrating it for flour. Yes it's a lot of steps but I am hoping it will save me even more $ in the long run. Thanks for another great video! 💜

    You can find dehydrators at thrift stores and yard sales. I bought a used one right into the dishwasher a couple of times and it worked great.

    I use the rotisserie chickens at Sam's club. They are huge and are only$5 for a whole chicken. I eat the dark meat and use the breast for flour

      it doesn't need refrigeration but it will stay fresher longer in there. Just store in an air tight container. Because it is cooked and its been dried, it will stay fresh for months. (think beef jerky)

    I did a big batch I did use my food processor and I had to sift it quite a bit to get the bigger chunks out and it works real nice. I got a very fine powder but I’m going to try a coffee grinder I don’t use for the chunks that didn’t get ground up fine. Cook with Mel did a very short video on how to do this and she talks about it. I got chicken breast at Safeway this last week for $1.97 a pound half of it went to my dog and half of it went for my flour. I can’t wait to make something out of it

    Have you ever made luncheon meat? Awhile back I saw Maria Emmerich use either ground turkey or chicken and puree it in a food processor then stuff it in a metal cylinder. She boiled it in the can and after it cooled she sliced it on a meat slicer. That would be really clean ingredients. 😋

    I don’t use meat flour in my meat bread instead I use 6-7 T. egg white bread crumbs that I’ve dried out in the oven. I cube the bread, bake in oven @ 225 for 80-99 min. Grind in food processor.

      Store it in an airtight container. It doesn’t need to be refrigerated. But, we do it anyway just to be on the safe side.

    Great video. I will be waiting for meat flour recipe Videos. Lately I’ve been trying to add more protein into my diet and it’s surprisingly harder than people would think. If i could get a great crispy chips recipes that has meat flour in it that would be amazing. I’ve experimented with chicken flour chips recipes and the results have been lackluster at best😢

    Question: Would that grinder grind colored peppercorns really fine? I use a small hand grinder, but I have hand issues, and being able to grind peppercorns really fine with electricity would be awesome. Do you have a video using your meat flour?

      Yes it is a spice and coffee grinder. We have a recipe using it with cheese bites and a recipe for carnivore mug bread. More recipes on the way

    ❓Do You use both grinders with the different blades for this? Or just the 1 and use other for like coffee/spices? I’m a Celiac & had to buy a new spice grinder few years ago because of that 🫤 so hmm, I will have to figure this out. I do have a very nice food processor with an additional small “dough bowl” that I rarely get to use. 🤔 Yes, I think my Dry Goods VitaMix will get too hot.

    My question is, how do you store your chicken flour and how long do you store it? I want to make some but am nervous of how long it lasts before having to use it because its meat. Also after using the food processor, do you sift the meat for any larger chunks and redo them to get a finer or more consistent flour?

    Have you tried using your freeze dryer instead of the dehydrator? Assuming you were using precooked meats. Not sure what the cost difference would be.

    Does the meat flour need to be refrigerated after preparing? The carnivore crisps package doesn’t say and I don’t want what I bought to go bad after opening.

      technically no because it is dried but we store it in the fridge to preserve freshness. You should store in an air tight container, especially if you live in a humid climate

      Freeze drying doesn't cook it, dehydrating does. You could possibly freeze dry it but you would need to cook the meat first. The question is, what would happen to the flour when you exposed it to air later. The bigger problem with freeze drying is the average cycle is 24-36 hours. Since you would have to cook the meat first, then freeze it and then freeze dry, it would take about 48 hours to finish

    What you can do with most meats is go ahead and cut them up but boil them and then put them in the freezer so that the fat floats to the top and you can separate the meat from the fat. Then I would use the meat from there

    Best Video i've seen on this topic. I follow a 98% carnivore way of eating - and I had tried a recipe for Soul bread a few months ago, and broke out in a rash and had some pain as well. I thought maybe it was just a fluke - bc i've never had any allergies. Well, I made it again (bc I liked it so much) and the same thing happened. YET, I can eat a few slices of hard cheese a week, cream cheese, etc - and nothing. So I can only assume it's the Whey Protein Isolate powder that is causing me issues. So depressing - bc I really loved that bread - both the taste and the texture. So i'm thinking that perhaps I can substitute "meat flour" - or maybe perhaps Beef protein isolate powder (not sure about the latter though because i've never seen anyone talk about it. I hate purchasing the beef protein isolate because it's expensive & i'd hate to purchase it just to find out it cannot be used as a substitute. If anyone else has tried it - i'd love to hear about their experience.

    I like the taste of one brand's chocolate variety but it's way too expensive - $64 for idk how many ounces - it would last 2 weeks. I'd use it in coffee and make brownies. Anyway thank you for this recipe.

    You're talking about savings yet you didn't buy meat on sale 🤦 And why not use pork loin? it's lean and it goes on sale here in Canada for $2 a pound😮

And they fulfill their purpose of life, perpetuated by becoming part of us. Yummy. Do you have any purpose in life? Do you know & love your Creator?
