My Sister and I make homemade jams. We are currently switching our recipes over to sugarfree. Preparation suggestion: to get rid of the foam on top stir in a tablespoon of butter before you add in the Chia seeds. Your jam looks delicious.

I came to TH-cam to find out how best to cook it and here you are like you read my mind. I have the Anova oven. I cooked it yesterday and it is basically gone today. My family thanks you 😊

Thanks for all the great recipes. You have helped us a lot! For jam - I simmer frozen fruit, add gelatin and a few drops of stevia. Turns out really well
I almost always start briskets in my smoker at 225°-250° for 3-4 hours or up to 165° internal temp (whichever comes first) then wrap and finish it with the prob in my Anova Precision Oven. I wrap in peach paper with some Wagyu tallow and put a tray under it to catch drippings.
I love adapting recipes to make low carb alternatives for high carb foods! 😁 I make blackberry jam with sucralose as sweetener. My Mom had a "famous" sweet pickle (bread and butter type) that she home canned and I've adapted that to use a sugar alternative (Sucralose) as well. I've also cooked down blueberries without using any type of jelling agent and they're pretty phenomenal, as well. PLEASE keep sharing! 🥰 I love watching your creativeness.
I am taking a medicine to get rid of a skin cancer, but I think it has knocked me out of ketosis. Yikes! I forgot what it feels like to hurt all the time.
Fresh lemon juice helps with the gelling for me. I use seasonal fruit (strawberries, blueberries, peaches) or wild fruits I glean here in Kansas (like chokecherries, elderberries, plums) and try to make it without pectin (for fresh/keep in the frig not waterbath canning). I had been making it with sugar, and lemon juice, and this has worked. I am now trying to use non- sugar sweeteners (but not artificial ones like sucralose or saccarine, etc. which give me headaches) and am learning. Erythritol gives me crystals, which i didnt like. Allulose so far, though not as sweet, has been giving me something i can use as a treat with a rare zero net carb bread and a peanut only peanut butter. I have just cooked them down low and slow but didnt use a thickener.
I have not tried the Sweet Leaf stevia yet, which is supposed to not be bitter. I just had it arrive so i plan to try it (maybe triple berry with strawberry, blueberry and blackberry - they tend to gel pretty well in my experience).

I pat dry, cover in lard then cover the lard with Maldon salt and cook it in the oven in a glass dish. The juice it makes is what my kids love the most. I slice it and then run it through that salty goodness.

Since wheat is an ancient grain, why is it so inflammatory? Do you think it is that the wheat plant has been modified in order to grow a lot in a field? Is a slow rise bread with natural yeast from the air better for people? I have no idea. Just curious.
First, the grains today are not the same as the original ones, they have been modified. And grain was always used for famine times. It will keep you alive, but not necessarily healthy

Great video, thank you. I’ve started making my own strawberry jam too for exactly the same reasons. Haven’t tried chia seeds but looks a good method. I’ve been researching heritage strawberry varieties and trying to get ones that are not so sweet. I’ve got rhubarb growing and I’m trying to find less sweet blackcurrant and gooseberries. As you said, seasonal eating and enjoying a small potion of something delicious.

There is a freeze dried trend around here (Eastern Kentucky). There is a company that is selling candy (Skittles, Nerds, etc.) freeze dried. They sell them for about $6.99 a bag. Crazy trend.

It's a rare occurrence that I have information to share, and today is the day. One of my local supermarkets sells GoodGood. Strawberry GoodGood jam is good. The other flavors are not. Also, I bought two packages of the Enhanced cookies you showed today a couple of years ago while on sale during the pandemic. They were priced so cheap I assumed the store was trying to get rid of them and haven't seen since. I baked in the air fryer one cookie at a time. They don't taste or have the texture of Toll House and didn't spread out at all. I'm surprised to learn from you that they're not made of almond flour because I assumed they were. They're ok for what they are and I have no regrets. I didn't pine for them, but they did hit the spot when I wanted a little something with a cup of coffee. Not too often, though because it had taken me over a year to finish the two packages.
To answer your question on the cookies, depending on the price I probably would've purchased them even though I usually make my own keto desserts. I get the recipes online. Maybe the reason they don't have the word keto on the box is because of the ingredients and they know it's not keto. I have a question about daily protein intake. How is that figured out? I read where an 8 oz steak provides about 30 -40 grams of protein. If I weigh 200 lbs. I would need to take in 200 grams of protein. 200 grams equals 7 ozs. So, I would need to eat almost 2 lbs. of that steak. Is that right?

Me too! I have been eating 700 to 850 calories a day. Walking 4 to 5 miles a day and not losing. I went way off program I was tired of starving.
I eat plenty two meals a day and fasting for 18 to 19 hours, but my sugar and my weight is still there

When you buy lemons cut them in half and freeze. You can zest them frozen and you can micro thaw for juice any time!

I make blueberry and cranberry preserves the same way. So good! Egglife wraps make a dreat vehicle for them or chaffles.

Oh, and maybe some stevia (can be a little bitter but i think the lemon helps cover that). I have thought about chia so thanks for the experiment.

I add no sweetner at all when I make my keto jams. They are naturally sweet. Just cook them down and jar it

We use store bought as well as homemade bacon. We generally cook it in the oven or on a flat top
I stay away from all “looks like the original “ because I’ll eat them like I’d eat Oreos…… can’t eat one! So no moderation for me …..pure abstinence ❤

I have always been told that the smoker meats will only take on the smoke flavor for about 2 hours the rest of the time it is just cooking.

Not really extended fasting. We just eat when we are hungry and dont eat when we’re not. Sometime that means skipping a day

It's not quite that simple since different cuts have different amount of protein. We are going to address this on Keto Beyond the Couch this morning.
