    My wife tried this recipe for the 2 ingredient breading and in making a mistake, she found the best hash brown replacement snack ever! She was trying to make this recipe with pork rinds and cheddar cheese ground up in her blender but she accidentally blended too long and it ended up making a dough ball. She made little balls and pressed them down in the mini muffin tin and cooked them at the same time and temp as the pickle recipe but just the dough by itself and it came out tasting just like the little hash brown minis you get a chik fil a. Try it and you'll never want for hash browns again!

      When you started the chicken finger portion, I thought he is going use that pickle in the breading... You do realize a highly-rated chicken franchise uses pickle juice to marinate their popcorn chicken pieces, so good. Any hoo thanks for all you do for us keto-ers!!

      I'm starting keto next month, have to get everything I need 1st. Living on a very small monthly income. It's hard to buy everything I need. I cut out chips and bread, my favorite and my sugar went down from 200s to 115 sometimes lower. I never seen you before, but so glad I found you. So I want to get this keto life-style going. Hopefully off all my meds. With your help ,I'm sure I can.

    Hey Steve. Tip. When using heavy crumbs I use avocado mayonnaise instead of eggs or you can use mayonnaise of choice. I season the mayonnaise . I brush it on then press my crumb or panko recipe into it. Works perfectly. Cheers, Debbie

    Your keto recipes just keep getting better. I’ve been keto for 5 years this month. Lost 45 lbs the first 6 months and never gained it back. At 72 I feel as good as I did at 52 when I completed a marathon. Got fat after that and could not lose the weight until I found ketogenic life style. Your recipes have helped me to stay on track.
    Can’t thank you enough, and many others on TH-cam, for all the great information.

    I just watched this, run to the kitchen and made a couple of tenders using the exact recipe. It was my first time using the air fryer and first time making something breaded. The tenders didn't come out great. They came out PERFECT. Thank you so much. I encourage everyone watching this to go try it. You won't regret it.

      If you had taken the original batch out of the muffin tin right away, like you did the other ones, they would have been crisper instead of sitting in the cheese grease and gotten soggy. Just a thought.

    I didn't measure my shredded Queso cheese/pankow ratio, but I just made an awesome taco shell using this basic recipe. Heat up a small non-stick skillet. Put down a layer of this mix. While frying add a bit of extra cheese on top. Taco shell is done when the bottom is brown and crispy and the cheese top is melted. Remove, add fillings, fold and eat. For a tostada, flip while frying, so both sides are crunchy and brown. This works much better than just frying cheese as I've done in the past.

      We bake our cheese taco shells. It works great and can do 3 or 4 and a time then let them cool folded over a spatula.

      @@MagickalMe1133 well, my wife cooks them but I think its 400 for about 10 minutes. But keep checking them because once they are done, doesn’t take long to over cook.

    I made these exactly as you did the first time and loved them. Perfect lunchtime snack. Today I made them and added crushed bacon to the breading and used both sliced pickles and sliced pickled jalapenos. Amazingly delish!

    I’ve been using this type of breading for a bit now and as much as I love the cheddar; my favorite is using real Parmesan cheese and pork rind breading on chicken tenders….so good!

      Yes! We just tried parm and pork rinds for the first time last month and I'm ashamed to say we've made it four or five times since then. It is so delicious. I even like to soak my tenders in franks wing sauce then bread and fry them....so. dang. good.

    Steve, I did a “take-off” on your pickle recipe! One of the things I miss on Keto, is fried chicken, so I used your pickle coating on some chicken tenders tonight, fried them up in some olive oil…fabulous!!! Really nice and crispy and the coating adhered to the chicken…maybe because of the cheese, so a big “thank you” for all you do…..

    Thank you so much 💓 I've struggled with pork rinds because of the smell. But I have to say this combination of cheddar and rinds is absolutely the bomb on chicken tenders. I have a super picky daughter who devoured these tonight. I used blue cheese dip and it was finger licking good.

      @@jwm4ever it wasn't bad tasting, it was a ridiculous effort to get the breading to adhere to such a small number of zucchini slices. When the zucchini plants are prolifically producing their fruits, this is not a good option.

    Awesome crunch. I have always used a combination of crushed pork rinds and parmesan cheese. I add seasonings to it and use it for mozzarella sticks, breaded mushrooms, fish, or pretty much anything I would fry in my air fryer. I will be trying this version using some pepper jack cheese and a bacon habanero gouda. Woohoo!

      Same, with the Parmesan. Depending on what I'm breading, I sometimes add a small amount of almond flour to the mix. It helps cover any spots where the breading doesn't stick well and adds a little browned, nutty flavor to the finished product. That slightly brown nuttiness is what drives my decision of whether to add the almond flour. Looking forward to trying this out with cheddar and other cheeses as well!

      Pork rinds provide a great crunch that is typically missing in a keto diet. I use them as "chips" for dipping as well.

    I made tuna patties, did a quick fry so they would hold their shape, then dipped in egg and the panko cheese mix to air fry. Very crisp and good. Thank you! I will be using this often.

    Had me laughing pretty hard at cheese juice. Only thing that might have been funnier would be cheese blood. My wife recently saw a similar one of these for a snack that is a lined cookie sheet, pile of mozz cheese, pepperoni slice, little more mozz, and then bake in the oven. Crispy and delicious dunked in some Rao's. Thanks for posting.

      I do the same thing in a sauté pan. It's called a Frico (without potatoes). I usually eat them when my kids order pizza. Easy & gets the job done.

    I've been breading chicken in a seasoned pork panko mix for a while now but it never really occurred to me to also add some cheddar cheese into it. I've been really enjoying the pork panko version but I'll definitely try your breading version next. I bet graded parmesan cheese would be excellent too and it is already grated nice and small from the store (unless you buy a block of parmesan cheese).

      It is what I use. Kraft brand works just as well as fresh grated stuff too! Lemon and herb seasoning and you got yourself a good breading.

      I do something similar. My non-keto hubs likes it without knowing there is no bread crumbs in there. The air fryer helps a lot as well to crisp up the “breading”.

      Grated Parmesan has anti-caking agents in it... Which are all carbs. It's essentially flour... Just food process your own

    FYI, after experimenting with Evercrisp & not wanting to pay the price of that, I discovered that the same ingredient is in Benefiber or any of the unflavored fiber powder products. I use that now with the same results!

    Steve - I made these yesterday and we really like them also. TY for another great recipe! (So far I've made your candied jalapeños, Faux-Potato Salad and these.) I made my own panko pork rind crumbs watching you and of course mixed them with shredded cheddar. Yummy! This was my 1st time using pork rinds and I'm pleasantly surprised I really liked the flavor and that crunch. (Kroger plain version) I'll make this recipe with jalapeno instead of pickle next bc we are still blessed with a lot of jalapeños from our garden. Hope things are going well in Hawaii!

    I used your new breading today. Made fried shrimp in olive oil. Didn't have an air fryer here. I also took some of the mix and made a ball out it and fried it. Tasted just like a hush puppy. Your right about difficulty sticking to food though. Still worked good enough. I added more panko as I went but not cheese just because I was cooking and lazy. In the end, I mixed leftover egg with panko mix and fried it. Again was like a hush puppy but frier because to much panko. You could just mix the cheese and panko for hush puppies. Could also stuff this with another cheese for mozzarella sticks. Add salt to fresh cook items and delish!

      @@dana102083 you make a panko by putting crispy pork rinds into the processor and blend it. 1/3 cup of pork rind panko + 1 cup loosely packed shredded cheddar cheese in a food processor makes the crispy breading he uses in the video.

    6 weeks into keto - chicken tender MANIAC here - I bread about 30 tendies at a time using this recipe but had to augment the ratio to make the batter stick to the chicken better. 1/2 cup cheddar to 3/4 cup pork rind crumbs works PERFECT for me. 1 cup of cheese to 1/4 cup pork rind crumbs was falling off like crazy. (Granted, I make this ratio 4 times since im doing 4 packages of chicken tenders at a time, generally takes 90 mins after trimming a lil better, breading, and cleanup included in that time estimate.) This sticks well and gives it that perfect crunch still.
    Consider adding 1/2 tsp of black pepper/ground peppercorns, 1/2 tsp oregano, 1/2 tsp sweet basil or 1 tablespoon of Italian seasoning if you want that "Italian" touch of flavoring to your breaded tendies. 12 mins on one side, flip, another 6 minutes, good to go in my much smaller standard size air fryer!

    Instead of egg, try mayo. Sounds crazy but I've started using it and it's a great binder. I'm not sure about a crispy coating but for seasonings it's awesome

    I make my breading like this. I find if you set it in the fridge for about 30 minutes then the breading still sticks better. Definitely going to make the pickles for my grandkids.

    Can’t wait to try this breading. Your pancakes with pork rinds are terrific and are perfect for making a “Mc griddle” chopped bacon & 1 egg sandwich. I make each pancake double size. Would love to try a pork rind pizza crust.

    I've been making these for years to take on our RV trips! I sometimes use pickled jalapenos instead of pickled cucumbers. Travel well and make a nice snack.

    My personal favoriteis 50/50 pork panko and Kraft style Parmesan. Nice and dry and always in my fridge. For a really crispy crust, dip chicken strips in whey protein powder, then in beaten egg white, then in the pork panko / parm combo. Stays on and fried up crispy. Great for fried mushrooms or okra fries, etc. Love it.

    Hey Steve, looks very tasty as usual. Can’t wait to try this. I love the crunch! Love your creative experimenting mind. I’ve been using the pork panko with Parmesan & various spices for quite some time now. I find my breading stays on better if I do a dry dip of either egg white powder or buttermilk milk powder first followed by the egg wash then the breading. Glad to see your channel growing 🤩

      I've only tried whey protein isolate powder and found that didn't adhere especially well to the chicken.

      @@SeriousKeto The buttermilk powder is especially wonderful for chicken, imho~ a nod to traditional buttermilk marinade for classic fried chicken. The idea of pairing different cheeses, and/or pork rind flavors w/various proteins has made for a whole new world to explore~ especially in using the air fryer.

    I made this exact thing the other day but I made them nuggets and I smeared the breast with mustard before I cut into chunks. The mustard just adds another level of flavor with negligible carbs. I also did mine in the air fryer... Yours look scrumptious! 💋🧚🏻‍♀️❤️🇺🇸

      Excellent idea using mustard! We typically use mayo on chicken, mustard on fish...maybe a blend of both...yum.

      @@roncenti -Mustard smeared on the breast, cut in chunks, dredge in flour I made from grinding hemp hearts in the ninja, then the egg, and then in the cheese/ pork rind crumbs and then in the air fryer with a spritz of avocado oil...💋🧚🏻‍♀️❤️🇺🇸

    I recently started my keto and low fat journey again. So I have been getting very creative with how I prepare food. I like breading but Panko breadcrumbs or hire micros then I can really afford to have so I got zero carb bread I made my own Panko breadcrumbs by drying them out in the oven and then putting them in the food processor. I added seasoning and fresh Parmesan that I ground in the food processor to make a really tasty Panko breadcrumb mixture. I’ve also made it with different kinds of cheese powders and seasonings like minced garlic and minced onion. You can go a step further and get quest chips and grind them up to put them in there as well. It makes a super healthy low-fat and low carb breading that I use for chicken tenders, pickles etc.

    Steve, have you tried using oat fiber before the egg? I’ve been using an oat fiber, egg, pork panco “breading” for fish (and other meat). I wonder if you’d get a fluffier crust on your tenders. Just wondering. Love your videos. Keep it up. Thanks

      This is what I do with chicken strips, plus some garlic and onion powder in the panko. The only problem is that they get soggy when you have leftovers.😒😒

    I have enjoyed so many of your videos! Keep ‘em’ comin❗️ I wanted to try this recipe but didn’t have sharp cheddar on hand. So I used Parmesan and also added salt pepper and garlic. Cooked them in the air fryer as you did. My husband and I loved them. Thanks for sharing. I will definitely make this again. We have only been doing keto for 1 month. But this is the best keto recipe I’ve found so far that replicates the flavor of the same nonketo food I used to eat. Well done!

    You are spot on the breading! Since you showed this, I've done chicken skewers (adjusted Natashas Kitchen recipe, chicken cheese balls (adjusted Blue Jean Chef recipe), tomorrow experiment with chipotle pork rinds and make chicken nuggets, and breaded canned artichoke hearts!

    I really love that you give measurements by weight, because that's how I roll! I also really love that you always let us experience the trial and error with keto experiments. I make a ton of keto experiments (but I'm not a TH-camr, and have no desire to be). Maybe I can share some of my secret ingredients and you can play with some of them. (Psst... Haven't watched all your videos because I just found you a few weeks back, but if you haven't discovered it already, powdered butter is a game changer).

    I'm excited to try it with the pickles! I tried it with just cheese and pickles before and it wasn't that great. My go to breading is pork panko, lupin flour, and Italian seasoning and I've done chicken tenders with it and my non keto 14 year old said mom these are better than a restaurant. 😁

      @@tickytootoo453 I kind of just mix it to taste. About a cup of pork panko, probably around a 1/3 to 1/2 cup of lupin flour and however much Italian seasoning you want. I probably use a tablespoon or more. Just mix those together and do your egg wash. I double coat to get them really crispy.

      I feel ur pain. I make fresh ground flour bread, and wholegrain sourdough bread. Snob doesn’t start to describe me. Pizza is a food group for me too.
      Once in a while, I just have some pizza. I’ve been involved with keto since 2014. It’s how I made peace lol

    Love this! Also, after you coat your chicken tender, let it air dry on a rack for a few minutes until breading completely adheres to meat. Otherwise you some lose a lot of breading in your pan if frying this. I sometimes fry in bacon grease. Oh so good!

    We enjoy your videos and recipe breakdowns. Not strictly keto, but I am an adventurous cook and I thought your idea of using chicharrones as breading was remarkable. To be honest I was resistant to using fried pork skins for any reason and the bag sat around for a couple of weeks. The other night I ground some up and used the crumbs to top a casserole.
