I am Kashmiri too we cook khatra wangan and moli with mongh dal and boiled eggs with white rice in winter and we call them Rashmaloo my grandma are from jamu ❤.
What oil have you used here. Also, is it necessary to blanch the baingan in the salt and turmeric solution? Doesn't it make it difficult to fry because of the moisture?

Mam can we use lemon in stead of imbli....
U can but lemon give a bit if bitter taste. In authentic recipe only imli is used
