As Kashmir from UP we don't have access to Dried Eggplants.We Use Fresh ones,Fry them and cook in similar spices except we use Mango powder!Also mint leaves!Garnish with Ginger Julilians
Chhattisgarh me humare yha, phle bahut sukha (drought) pdta tha toh asi sabjiyo ko sukha ke rkhte the aur ab bhi rakhte h. 1950 ke phle aloo aur tamatar ke alawa Chhattisgarh me na koi sabzi ugayi jaati thi na milti thi aur logo ko aajkl ki normal sabziyo ke baare me nhi pta tha. Humlog kai trh ke bhaaji (saag) khate the aur aaj bhi jyadatar log bhaaji hi khana psnd krte h. Chhattisgarh me 50 se zyada prakar ki bhaji (saag) khayi jaati h. Hrr season me alg alg bhaji aati h.

In our north east baingan and sour is completely opposite.....because of basic and acidic nature.....we don't even eat nimbu with baingan...
in Kashmiri cuisine always eat with rice or you also include roti or naan something

Ham Goan brahmins baigan ko vayangan kahate hai aur aap vangan .Hamare yaha bharta hota hai per usme baigan bhunate hai per imli ,hari mirch, greated coconut, onion ye sab hath se ekaththa mix karake serve kiya jata hai. Vaisehi bharwa baigan bhi banata hai ek teekha rahata hai to dusara teekha aur meetha rahata hai. Ab aapaki yeh recipe bhi try karenge. Mere do sawal hai agar aap usake jawab de to achcha hoga .
