i just made Nanaimo Bars yesterday. It wouldn't be Christmas here in Vancouver without them. You have to try home made ones. The mass produced ones that are all soft and squishy in the middle are just not right. The second one looks more traditional. The yellow stuff in the middle is butter icing mixed with a couple of tablespoons of Birds vanilla custard powder, the base is cocoa, butter, graham wafer crumbs, sugar, walnuts, and shredded coconut and egg mixed on a double boiler. And the top is bakers chocolate and butter melted and drizzled over top.
We just love all holiday traditions that various areas and families have!! A friend sent me the recipe and I’ve ordered the ingredients so we shall see how this turns out! 🤞🤞🤞
I wonder if its only a Canadian Costco thing then as they sell trays of them at the local Costco, and yes they have the yellow center. While I like them I am curious now as to what Nanaimo the town has created. I drove through there some 12 years back in July but had no idea I was supposed to look up this specialty, instead I drove across to Tofino and tent camped in the rain ... that was fun ( you think Nanaimo was cool in the middle of summer, try Tofino on the beach on a rainy windy day ( which I think is most of the time ! ).
We definitely do not have them at Costco here but a friend sent me a recipe to try so we will see if Jim likes them homemade. We head to Tofino after Nanaimo!!! It was on our list for several years so it was surreal to finally be there!

As to Tofino, I was wondering if you two would end up heading over there and I guess I will soon find out what your experience and weather was like in the coming videos. I know one thing, they certainly don't call it a coastal rain forest for no reason !

As a regular to the island. I highly recommend Reds Bakery the next time you are in Nanaimo. One of the best versions and has numerous awards. 👍
We can’t wait to revisit the island at some point and are putting this on our list.
