  • Welcome to another what I eat in a day! This is part 4 of back to basics using the principles of the starch solution. Let's get started!!
    BREAKFAST
    CHICKPEA OMELET
    INGREDIENTS
    1 cup chickpea flour
    1 cup water
    1/2 tsp baking powder
    ½ tsp salt
    1/4 tsp black salt
    Garlic and onion powder to taste
    chopped mushrooms, peppers, green onions, arugula, basil and onions cherry tomatoes
    Cheese sauce • No oil plant based che...
    Instructions
    Mix chickpea and water together, start by adding 1/2 cup and add more to your desired consistency.
    In a good preheated non stick pan on medium heat. Add the chickpea mixture by 1/2 cup into pan and swirl it around to get a nice thin consistency, Let cook for a few minutes until the edges start to look dry, using a flexible spatula go around the edges. Then add mushrooms, peppers and onions to the top of the omelet cover and let cook until it is completely set. Add finely chopped arugula, green onions, basil and cherry tomatoes and fold omelet over. Add plant based cheese if desired.
    Option 2 is to mix the mushrooms, peppers and onions into the batter and then cook in pan. Adding arugula and green onions and tomatoes at the end.
    LUNCH
    TATER TOTS AND AIR FRIED VEGGIES
    iNGREDIENTS FOR TATER TOTS
    1 bag no oil hash browns
    Microwave for a few minutes like 3- 4 minutes until slightly defrosted
    2-3 T gluten free flour
    1 tsp each garlic powder, onion powder, salt
    3/4 tsp smoked paprika
    INSTRUCTIONS FOR TATER TOTS
    Add all ingredients into a bowl and mix well. using your hands grab some of the mixture and form into a tot form, place on lined baking sheet
    bake at 400 degrees for 30 minutes. flip halfway through cooking.
    *INGREDIENTS FOR AIRFRIED VEGGIES
    chopped zucchini, peppers and onions
    1-2 T coconut aminos
    garlic powder
    onion powder
    smoked paprika
    *INSTRUCTIONS8
    Place veggies in bowl and coconut aminos and coat all veggies, season and mix well. place in air fryer basket.
    air fry for 15 minutes at 400 degrees. check at 10 minutes and shake basket. Keep an eye on them, they can burn quickly.
    DINNER
    LOADED POTATO SKINS
    INGREDIENTS
    2 russet potatoes, scrubbed and baked till done.
    2 cloves garlic
    1/2 cup unsweetened soy milk
    1 T mustard
    1/4 cup nutritional yeast
    1 cup chickpeas rinsed reserve the aquafaba (juice in can)
    2 T capers
    3-4 sun dried tomatoes chopped
    1 green onion chopped, green and white parts
    1/2 cup chopped spinach
    juice of 1/2 lemon
    salt and pepper to taste
    INSTRUCTIONS
    let the potatoes cool enough to handle.
    Cut the potatoes length wise and scoop up each potato leaving enough for a shell.
    transfer the inside of potatoes into a bowl, mash with garlic, milk, mustard, and nutritional yeast. add chickpeas and mash.
    add the rest of the ingredients and gently mix.
    fill the potato skins and bake for 20 to 30 minutes until golden
    In the meantime make the sauce
    Garlic lemon sauce
    In a magic bullet or blender add the following
    1 cup chickpeas
    1/2 cup aqua faba
    2 cloves garlic or less
    juice of 1/2 lemon
    1 tsp salt
    1/4 tsp cumin
    1/4 tsp smoked paprika
    1-2 T mustard
    Blend well.
    When potatoes come out out of the oven top with sauce and garnish with green onion.

    I make an easy and yummy hummus: in a blender or food processor add a drained/rinsed can of garbanzo beans, juice of a lemon, and about a tsp. of freshly chopped garlic. Season with salt, pepper, garlic and onion powder. Blend and add a bit of water as needed. YUMMERS!!!

      That was basically what I did. But to me it's not a hummus unless their is tahini in it. But is is a nice sauce.

      Exactly ☺ hummus doesn't need tahini to be hummus 👍
      You could also try mixing in some cooked beets and have a gorgeous color with a twist in the taste 🌞

      @@ChewonVegan I agree with you. In the Middle East they like adding sources of fat like oil and tahini. In addition to that, they eat hummus warm and with some spices like cumin or sumac.

    As a person who needs to lose those last few lbs, I'm abstaining from nuts and seeds, so the no tahini hummus would be ok for me, but if you want a little of that tahini flavor, adding a tsp. of toasted sesame seeds works. It's the same, but having that jar of tahini open in the fridge calls to me, so I don't keep it on hand.

    Those stuff potatoes looked delicious! I think I would've just put your cheese sauce on top - but the Hummus is a good option too. I do make Hummus with Tahini in it, during my weight loss journey. I only add 1 TBSP to the whole recipe. I I only serve myself about 1/4 cup or less sometimes with my dinner (sometimes less than that). So, I'm only getting about 1/2 to 1 tsp of Tahini per serving. I just love my Hummus with Tahini in it. It tastes so much creamier, even scaled back. I'm a die-hard. :- ( ha ha

      You could dip your air fried fries in it, it would be great on baked potatoes as well. You could add it to pasta. You could drizzle it over veggies. This is just off the top of my head. I think there are many possibilities out there. Enjoy and have fun with it.

    Will the batter last a day or so in the fridge or should I cook it all, when cooking for just one? I really like when you add the approx # of servings for your recipes. I understand people will eat different amounts and what serves 4 for some may only serve 2 or 3 for others, but just to know whether I should be eating an entire recipe or expect some leftovers would be great to know. I've been preparing a number of your recipes the past week or so, and find them easy and very good. Thank you!

    This is definitely different I found it a little dry. Maybe I cooked it to long. It doesn’t resemble an egg whatsoever although it’s not terrible just very dry..

      Yes you will not fool anyone into thinking that it is an egg. I think the flavor stands on it's own. Next time add a little bit more water and less cooking time. Just like my plant based cheese sauce, I tell people to think of it as just a really good sauce. It's not going to taste like dairy cheese but it will taste really good. Anyway just my two cents.

      It gives it a cheesy flavor. You can leave it out if you don't like it.

    Hummus, think you added way too much liquid, it might not be the lack of tahini. I’ve been using 2 tbsp of aquafaba per 1 can of chickpeas.

    Whenever I cook with chick pea flour it always comes out soggy

      Then you are not cooking it long enough. Make sure you swirl the pan to get a thin consistency and wait until the mixture sets before adding veggies. You could also cover the pan to help it cook before adding the veggies.

      Really, very interesting. 1300 calories isn't a lot of calories. I guess if you are not hungry all the time, then it's working for you.
