    Corn Grits Recipe:
    1 cup Corn Grits/Polenta
    3 cups filtered water
    1/2 tsp salt
    1 TBSP no salt seasoning (from Costco)
    2 TBSP Nutritional Yeast
    Bring water and salt to a boil. Add Corn Grits and reduce heat. Cook slowly for about 5 minutes, stirring occasionally. Add no salt seasoning and nutritional yeast. Remove from heat, cover and let stand for a couple minutes.

    Polenta Pizza Recipe:
    Toppings of your choice
    Corn Grits recipe from above
    Put half of the corn grits recipe from above in a 8 or 9inch spring form pan. Put in the oven at 375 degrees for 8-10 minutes or crust is set. Remove from oven. Top with sauce and toppings. Put back in the oven for 10 minutes. Slice up and serve

    Cauliflower Tacos Recipe:
    4 cups riced cauliflower
    1 tbsp smoked paprika
    1 tbsp chili powder
    1/2 tbsp garlic powder
    1/2 tbsp onion powder
    1 tsp cumin
    3 tbsp soy sauce
    hot sauce (optional)
    corn tortillas
    Heat up a skillet on medium high heat with a bit of water. Add the riced cauliflower, smoked paprika, chili powder, garlic powder, onion powder, and cumin. Mix. Add the soy sauce and continue to sauté for 5-7min. Assemble your tacos with some hot sauce if desired. Add diced tomatoes, lettuce, corn kernels, cilantro, pico or salsa, or any other toppings.

    Corn Tortillas Recipe:
    Tortilla Chips
    4 corn tortillas
    1/2 fresh lime
    red pepper flakes
    garlic salt
    paprika
    Cut tortillas into 8 pieces, put into mixing bowl, add juice of 1/2 fresh lime, a sprinkle of red pepper flakes, garlic salt and paprika. Mix well to coat. Put into oven at 400F for 20 mins, flipping halfway through. Or you can cook in air fryer for 20 mins flipping halfway through. Ours came out much better in the oven. Cook until crispy. Serve with pic.

    Nini Girls Recipe Video:

    Pico recipe:
    4-5 roma tomatoes diced
    2 diced jalepeno
    1 diced red onion
    3-4 cloves of garlic diced
    1/4 cup diced cilantro
    1/2 cup cooked for frozen corn
    juice of 1 lime
    Salt and pepper to taste.
    Mix well together in bowl , let sit for a few hours in fridge and serve.

    Corn Salad Recipe
    4 1/2 cups corn kernels cooked or frozen
    1 diced red onion
    1/4 cup cilantro diced
    1-2 tbsp Apple Cider Vinegar
    Juice of a whole lime
    Mix in a mixing bowl until blended. Serve and enjoy.

    You changed the intro? Love it! Congrats on the new DIY channel. I have never had grits before. Actually looked pretty good. I would still eat that pizza also even if the crust wasn't hard. So cool Tim made homemade tortillas. I love your taco trays. The polenta sticks were brilliant!!!!! I want to try them. Great idea to add lime juice to the nacho chips rather than oil, so the seasonings stick to them. So many amazing dishes all out of corn! You passed the challenge with flying colours!

    This video is great. I have thought about doing a corn mini before, but didn’t have any idea what I would eat. I’m not a huge corn fan, but love tacos...but was thinking if I can’t have beans or potatoes I didn’t know what I’d use. Never even thought about riced cauliflower. I also love polenta, but never even thought about it for a corn mini.

      I wanted to do the corn mini, but like you, I had no idea what to eat. Then I remembered that I read somewhere that McDougall allows corn tortilla shells for the mini. So that kind of got me inspired. I mean, If I could have tacos every night for dinner, I could totally come up with other meals too, right? I loved doing this corn mini. Thanks so much for watching.

      Hi Kira. I lost 4lbs in 8 days on this mini. Its about the same as my other Minis, but this one was much easier to stick to and much more fun to do. knowing I had those tacos to look forward to every night made it really simple to stick to. Thanks so much for watching.

      @@robinlaycock3186 1 cup polenta,4 1/2 cups liquid( water, broth, or combo) 1 tsp salt. Add all to I Pot, set for 5 minutes, natural release. Good luck

    This is so cool i love rice and corn i tend to get tired of potatoes so that’s why I haven’t been successful with the mini with potatoes as the main starch. Can I have 5 minute Quaker Oats white hominy grits in place of the yellow polenta grits? I’m from the south and my comfort zone is with that type of grits. I’m doing the rice mini now but I can’t wait to try the corn mini thanks for sharing and I just subbed:) BTW the green plate did look aesthetically better🤷🏽‍♀️😄

    I love your inspiration! I’ve got 3 weeks off from work so I think I will mimic your minis. I’ll do corn one week, potato another week and rice another week. I hope I make it! And just to clarify, I cannot hav avocado while on my mini?

    Love polenta. We had it for lunch the day of or after brk of cornmeal mush. Fried crispy & served with maple syrup. Haven't done it since airfryer in house.
    BTW, when I moved to Fl
    learning to eat 'grits' was odd. Didn't look nor taste like corn to me. Think I might have a half serving once a yr. Still find them tasteless after 55+ yrs.

      David. I hear ya for sure. The whole idea of Mary's Mini is to be bored with your food so you don't look forward to eating which in turn keeps you from overeating. Still, I wanted to make it fun which was why we did tacos with it. But yes, I was ready to go back to other foods after this was done. Thanks so much for watching.

    We make polenta pizza
    but the two things I do differently are:
    pop a flax egg in the mixture
    (is that allowed under a Mary's Mini?)
    and pour it into a tin
    (I use a brownie tin - so we get square pizza)
    and let it cool for at least an hour.
    I have omitted one or the other steps
    and the pizza was floppy
    and prone to collapse.

      Next time I do this, I am going to look into a corn chowder recipe that will work with this. I think that would be a really good addition to all this. I don't think flax is allowed on the mini though, since it's a seed. Thanks so much for watching.

      definitely let the pizza base polenta
      set for 30 - 60 minutes
      because that helps stability
      (like the polenta fries)

    Hi , I'm a 29 year old woman and I been starch based for only 2 months now, but I have lost weight I'm having trouble with losing weight in my belly tho and I'm wondering if it's cuz I'm eating to much fruit ?

      If you're losing weight, trust that you will lose it all over. You just may not notice it right away. Great job on 2 months of progress!

      I agree with the other comment. Just keep after it. Weight doesn't come off in any one spot. There is not spot reduction in weight loss. Just keep going with it and it will all eventually even out. Thanks so much for watching.

    I had nutritional yeast fro. Walmart it was awful. Do you know if that was because it was Wal-Mart's brand or I'm just one of those people that doesn't like the taste of nutritional yeast?

      Trader Joes has an oil free pasta sauce among it's varieties. Good flavor but I always add a few things whether veggies or spices.

      @@robinlaycock3186 Hi Robin I used my jar, on hand, last week, but, I believe it is one that has mushrooms. Just checked the recycle bin and still had the jar. It is "organic Spaghetti Sauce with mushrooms". No fat listed and no oil in ingredients on the jar. It has a brown background on the label. The label says fat free in a red circle. Hope this helps!!! It is good and so easy to use.
