The version from hong kong is typically served in a claypot and its not meant to be too saucy because the pot is so hot it is meant to evaporate some of the sauce when it goes in after cooking in the wok first. It creates a sort of caramelisation of the sauce. Also it is made with minced pork, salted fish, chinese bean sauce it is an umani packed dish usually quite salty best eaten with rice.

The HK style may add some dried seafood and seafood-based sauces like hoisin sauce, which is not present in Sichuan style despite the name.
In Hong Kong, 魚香茄子煲and魚香茄子are basically the same thing, one is served with a claypot and one isn't. The one served with a claypot is common in 大排檔 (open-air food stall) in order to keep the dish warm especially in winter. Hong Kong style 魚香茄子 is different from other types because it really made with salted fish.

I'm half Chinese (grew up in Shenzhen but with Guangzhou heritage) and Australian (Melb) and watching you explore Chinese culture at a depth I was never able to as a child is incredible. But when it comes to “咸鱼茄子煲”,which is the canton style, it uses salt marinated dried fish to reinforce the flavour of the eggplant, a lot of people really like the strong taste of the dried fish but some people just thought it might be too strong from the fish, oh btw, next time you can try the “金沙茄子” from “石锅先生”, they are really good, located in Burwood and Chatswood.

During the preservation process the fish also fermented which gives the final product an unique flavour and a soft and flake-y texture. Adding this preserved fish to the dish gives the dish an extra layer of flavours.

I myself am Asian Canadian but no one I've met knew I was of Chinese origin based on my given surname. Anyways that's another story. But back to your eggplant query at 8:03 - 9:08, a number of asian chefs do in fact use the basic ingredients such as garlic, honey, chillies, oil and add secondary ingredients to create different variations of the asian dishes in general. Some dishes can be made with different meats and/or veggies. The asian philosophy is to create vibrant, harmonious and healthy dish for all your 5 senses. Anyone CAN achieve such dishes in little time and only requires some energy and thought. When you see like 8 different eggplant offerings, the chef is saying "he/she has a diverse knowledge" to hopefully please your palate. By the way, my Mom taught me the fundamentals to re-creating most of the asian dishes and has become one of my strengths at home. I went to culinary school and travelled and expanded my cultural knowledge and have incorporated Middle Eastern, European, Japanese, Western into my kitchen. (Huge demand for my fusion cooking) Prior to the pandemic, my friends and I would get together for our Secret Basket challenges to see who could come up with a best looking and flavourful dishes. Absolutely agreed, Am a Malaysian Chinese covering China and SEA countries and my Eggplant tale. I fell in love at Lijiang , not the host but her home cook eggplant dish. The looked of softness of the eggplant and the aroma was tempting yet needed some persuasion. Then, the eggplant just melded away together with the sauce ........ Omg, delicious and mouth watering eggplant that I've ignored. During my travelling if there's a choice, I prefer/seek home cook eggplant dish. The ethnicity, authentic and ingredients.

For Yu Xiang, it refers to the sauce which supposed to bring some fish taste to the dish. The legend about "sauce originally for fish but accidentally became popular with meat/eggplant" is more of a urban myth. It's actually a comparatively new dish with only about 100 years of history or so. BTW, more eggplant dishes recommendation: eggplant salad 拌茄泥 (steamed eggplant, smashed with garlic, sesame sauce, and a pinch of salt, northern China style) and eggplant box 茄盒 (eggplant stuffed with meat, than deep fried with batter. They do have lotus root version of it as well and I do believe you should be able to find vegetarian variation). Love your videos. Greetings from Brisbane.

The Cantonese style 鱼香茄子煲 uses Preserved salty Mackerel Fish that comes in Jar. Just like Tuna in a Can.
