Hi guys. Loving the video. When I used to run restaurants, I would have to teach the Lao Wais how to eat Xiao Long Bao. I would teach them to place the Xiao Long Bao on their Chinese spoon, then pierce the top of the dumpling with a chopstick. This is done for two reasons...1) to vent the dumpling so you don't burn your mouth......and 2) to dribble the vinegar into the dumpling to infuse it with the soup. Then you can eat the whole dumpling in one mouthful to get the full juice explosion without burning your mouth. The legendary tradition is still being passed on by these experts now!

I grew up in this city back in the early 90s but have been living in Canada for the past 25 years. 2019 I visited the city for the first time since I left and was blown away by the diversity of Chinese food available. Never did I expect to be eating Chinese food everyday while I was in Melbourne for two weeks lol...
Ben definitely knows what hes talking about. Too much sauce is very American thing, and it covers the natural flavor of the duck. Instead, go humble with the sauce and it compliments the duck in such a way that literally means less is more. :)

There's another great Peking duck restaurant in Melbourne's Chinatown called Dahu Peking Duck restaurant太湖烤鴨店。So many火鍋hotpot restaurants around now. Melbourne has so many restaurants in Chinatown though some of the ones serving點心dim sam as breakfast/lunch are getting scarce due to the pandemic
There is a well-known fifty-plus year-old Peking Duck restaurant in the Washington DC. The chef carves the duck at the table by just removing the thin skin. Then the fat is scrapped off. The meat are carved and used to make a stir fry or served beside the skin. I guess you can do whatever you like with the crepes, but you are supposed to wrap the only the crispy skin slice, along with condiments, in them. Then the bone is used to make the soup. (The soup they serve is not from the same duck. It's probably from the duck someone else's ordered the day before.)
Next time I travel to Melbourne I’ll definitely head to all of these restaurants and try them out! Very impressed by Ben’s eating technique of the xiao long bao, I eat it the same as you Amy😂
Another ‘safe’ way to eat XLB is to use your spoon after dipping the condiments, bite the tip of the XLB off, creating like a little volcano where the heat can escape, blow the top of the volcano to cool the inside and suck the soup up from the hole. Then drizzle more sauce into the XLB and eat it whole! Try it!
The way some of us eat xiaolongbao is to use your chopstick to break the hole on the top of the Bao, then pour some vinegar into the Bao. This will release some heat and add the required favour into the Bao at the same time. Then you can eat the Bao with one mouthful without losing the soup inside. The "skin" of good and well prepared xiaolongbao is thin enough for the delicacy but will not break easily until you eat. Also, it should be sized for a gentle mouthful. Btw, we usually use vinegar and a little bit of thinnly stripped ginger for xiaolongbao instead of soy sauce because this will balance and help the digestion of the pork inside the Bao. Not sure how genuine this is but it's what I learned in Hong Kong way back when I was young many many years ago.
Love the video. A tip for Blondie, next time if you travel to Beijing and want to try Peking Duck in a fancy place, try this restaurant "大董". As a Beijing local, I would always pick 大董 over 全聚德 for Peking duck. (大董's founder used to be a chef in 全聚德 actually) Except for the roast duck, their other duck dishes are amazing too. The only downside is the place is quite expensive (more than $100 for 2). But still worths it :P

I am sure you all love the spiciness over there. Speaking Chinglish is like to put all the simplest word from any language in one sentences...Chinglish evolves too...
also, spicy foods has been in China for a long time, it's that the new world native chili peppers hasn't. szechuan peppercorn, regular peppercorns, ginger, mustard seeds, horseradish imported from Persia, other native or imported herbs and spices, possibly wasabi from Japan (unknown when that import first started, but it's since grown in small quantities in Yunnan and Sichuan IIRC).
全聚德的德 actually means morality , is the same word as in the 德 from 道德 , what Ben was saying should be 得到的得 , is a different word 😄 , there is also another Peking duck place in Melbourne called ( old kingdom ) at Richmond , they are very famous as well if you guys wanna check it out
Woahhh!! Shanghai Street is definitely one of my fav places! I'd usually go to the bigger branch in Chinatown. One thing I think Melbourne is doing better than Sydney is pho. I haven't had phos that taste as good as those in Melbourne. But having said that, I haven't sampled all phos in Sydney...
Amy! I found Wuxi style 小笼包 in Sydney the other week! The place is called Gangnam Spoon in Hurstville. They brand it as Shanghai Xiaolongbao but it's actually almost Wuxi style. Soy source based with lots of sweetness in it. The only difference is that actual Wuxi Xiaolongbao's are much bigger in size and much heavier in the sweet taste. But this is close'nough.

Two aussies speaking amazingly fluent Chinese -- impressive!
小笼包的吃法:咬开一个口朝里吹气,然后直接通过小口把汤汁吸进嘴里,不要让汤汁接触到任何勺子碗等其他东西。然后一定要(重点)把小笼包蘸醋,通过小口让醋(家里做记得把醋稀释)灌进小笼包(灌多少看你有多喜欢吃醋),因为醋会释放肉里的鲜味,和吃蟹要蘸醋一个道理
