    NOPE SPOILERS:
    Initially I also couldn't understand why Jordan Peele decided to murder the alien, I was also dissatisfied with this end. However, with time and a second watch, I think Peele's decision to kill the alien perpetuates the cyclical nature of violence both in Nope, and in wider culture. Cast members are murdered by Gordy, Gordy is murdered by police (witnessed by Jupe). Jupe and co. are abducted and eaten by the alien, and ultimately the alien is killed by our protagonists. It's this cyclical nature of violence, and how this connects to the exploitation of each victim, that I think Peele is trying to represent with the finale. I agree this message is portrayed muddily and honestly doesn't wholly save the ending, but after more thought this is my interpretation of Peele's decision to kill the alien.

      My take is Peele wants each of his story to have a structural twist (the Shyamalan moment), which is both a short story technique and the essence of comedy and horror (his two favorite genres). The meaning part comes in later.
      What bEATTY describes makes too much sense, and is not (IMO) the ideal way to end a story for a man obsessed with comedy and horror - or really hard to pull off to be surprising.
