When you shoot somebody who’s chasing then get him exactly 180 behind you and set speed 0. when the speed is zero then the torpedo goes exactly where you aim.
Always use magnetic detonators when shooting end on for best results. You're not likely to actually score a physical hit when the target profile is so narrow.
Yes, but in reality you had to put the magnetic fuse on before you put the torpedo into the tube, so he is going with they all have impact fuses on unless he states before he reloads a torpedo.

At least you took care of that annoying destroyer. I do wish there was a "long term effect" effect factored in - meaning "If I sink 20 destroyers, they have less next time. Yes, they build more, but the experience of the crew is less and less to guard convoys" kind of math done by the game.
The RN started WWII with 180 destroyers, lost 150 in the war and had 801 destroyers, frigates, sloops and escort corvettes at the end. America produced 1400 destroyers and escorts for itself during the war. There were basically no experienced crews outside of the experience gained during WWII itself, because the western Allies were putting ships in the water far too fast for it to be any other way.
Regarding the mod you mentioned while trying the surface attack. Is it a ‘mod’ of the One Alex Mod? Or a stand alone. My installation of SH3 is so full of mods and patches that I can’t get through a campaign for crashes to desktop. The save files are always a coin flip.
Tonci has spoken at length in previous episodes about how SH5 is, unfortunately, riddled with bugs, some of them so serious that apparently they can't be fixed (at least not without access to the source code.) Sucks, I know :(
The convoy might have thought they were under attack by a whole wolfpack, not just one very bold submarine. Can’t wait for the firefight next episode.
