Hi Steve. When you mentioned how people tell you that you 'need' to do something, I understand how that rubs you the wrong way. I think that you are actually very kind in your response to that. It's your channel that you have worked hard to build and you have your niches in the keto world. Your channel is one of the most well-rounded channels that I've seen out there. The other channels you mentioned have the niche of doing a lot of baked goods. Another channel that does that is Victoria's Keto Kitchen. She has worked at perfecting a 1:1 keto flour. (all-purpose, self-rising and a version of Bisquick) She is a perfectionist at always improving it... as you are in certain things. No one can do it all.
I can vouch for Victoria's Keto Flour, I used them to make a Starbucks recipe with a 1:1 ratio and it came out awesome. Just have to make sure you measure by volume instead of weight, which most conventional recipes do for flour.

I'm going to try that next time but because bamboo fiber is hard to source and I dont really trust its sourcing and safety profile yet, Ill likely stick with the older flour even though its a bit higher in carbs.
I am with you on the pronunciation of chronometer, speedometer, odometer, pedometer, they all should fit together. Looking forward to more cooking videos that inspire you; I feel like you can always tell in any job if someone is working on something they enjoy vs being told they NEED to do this. I always say Cro-NOM-eter. I guess because here in Canada, I am used to metric. So we say kil LOM eter. I still love and use Terry's recipe for Egyptian rice. Best wishes for Conor's recovery.
My daughter broke a few bones between her pinky and her knuckle after getting her finger, caught in a tear on a slip and slide that they made for the family that was visiting from Arizona for a wedding. We all went to. She had three pins put in it last week. I hope Connor heals really well.
I batch cook the egg white portion of Chris Cooking Nashville’s mashed potatoes/potato salad and I freeze it in baggies. When I need it I defrost it, heat it and then I continue the recipe (add the cheeses to the blender, add the egg whites, and blend and if I want the potato salad I bake it off at 275 for 1/2 hour. BTW yes, it is worth making if you miss mashed potatoes. It tastes really close. I am not saying you NEED to make it, just that it is really good. I was impressed.
What a great idea about prepping the egg whites! I already made a 1/4 cup of the browned gelatin in advance as a time saver. I agree that these "potatoes" are delicious.

Omg Steve, THANK YOU about the mashed potatoes! I have never craved mashed potatoes, and just can’t get into this keto mashed potato craze. My thought go out to Connor. Poor kid. Hope he can come home soon. I haven’t trusted the WHO or the CDC in years.
I love Brussels sprouts just thrown in the air fryer and then salted. I don't crave mashed potatoes either. They are ok, like you said, just for putting stuff on. Good grief, 400g of carbs per day. That sounds like all the illnesses waiting to happen. My dads diet is atrocious and he might take in that many carbs a day. He eats chips, cookies, high sugar cereals, candy and lots of frozen, packaged meals, but he thinks my diet is unhealthy. He thinks I take in too much fat and not enough fiber.
Steve, I don't like brussel sprouts when they are steamed or boiled. They are bad if cooked that way. BUT have you tried pan-fried or oven-baked brussel sprouts? All you need is avocado oil or bacon/pork fat and salt. If you pan fry the brussel sprouts, make sure to have enough oil in the pan (covering the bottom of the sprouts). Cut the sprouts in half and put them in cut side down (the pan doesn't have to be hot). Cook them in batches if needed. Let them sizzle for about 3-4 min or so, until the cut side is brown. Flip them over and cook for another 2-3 min. Sprinkle salt to taste (we like the Montreal Steak Season on them too). Toast them and serve. For the oven, preheat oven at 425 F. Spray the cut sprouts in oil and sprinkle salt. Toast and put the sprout on the large cookie pan (foil lined). Cook for 12-15 minute. You can also sprinkle cheese (Parmesan cheese or any cheese of choice) before you take them out and let it cook for 2 minutes or so. Personally, I like the pan fried better. I like the leaves slightly crunchy.
Brussels sprouts with simply olive oil and salt, roasted in the oven, are amazing! I do like making them with bacon when I am having a leaner cut of meat (like pork tenderloin) to get some more fat into the meal.
The only way I really like Brussels sprouts is shaved and air-fried. Essentially you unravel the sprouts so they're all individual little leaves, coat them in oil, salt, pepper and any seasonings you might want to add (parmesan, spice mixes, etc.). Then air fry at high temps until they take on a bit of char. I usually drizzle some balsamic or even better a balsamic reduction over them. Or you can dip them in aioli. Something about the frying kills the stink. Works on kale too, which I otherwise don't care for (except in beef vegetable soup, where I like the chew).
Just lay them on a cookie sheet and bake them at 400°F for 40 mins or until they are crispy. THATS all. Maybe salt or pepper if you like but not even necessary. Just eat them crispy. So sweet and delish!
I like watching someone winging it when cooking. Brussel sprouts coated in bacon fat with salt & pepper plus a sprinkling of parmesan then roasted is delicious, but then I like brussel spouts boiled and butterd.
I think for the crowd that wants to do "dirty" keto, the big corporations getting into ketogenic products might be a good thing. However, as you said, most of these products (read the labels, y'all!) are not really keto. Personally, being fat adapted, I would rather just get a small amount of the real deal if I am just "dying" for a bite or two at a get together or on vacation and want to try out a specialty in a restaurant and then go back to my regular eating routine. Keep being the voice of reason and let's see some more of Colton, soon.

I think that larger companies like King Arthur getting into keto will help get more people into doing keto. That will make it difficult for smaller businesses, but hopefully they can adjust and find their niche. And hopefully new people getting into keto will use discernment when considering their options. Your channel will help there a lot! One statement about the WHO/FDA/USDA, etc.. A sick population is easier to control. That book on stoicism sounds great. Last year I was watching a video and stoicism was mentioned. It sounded like me, so I looked up the definition. I had no idea, but my life experiences have made me a stoic! I used to be ruled by emotion. A friend complimented me several years ago about how I remained so calm despite the h___ that I had been through for years. Now I have a name for it and can get even better. Just this month I bought Meditations by Marcus Aurelius! Now I know which book to get next. A review of the book for Lean Body Mind might be something to consider.

I think it is great for any company to get into the Keto space. Especially, if they have clean ingredients. That is the only way we will have a shift to better dietary choices. If they get rid of sugar, corn syrup and unhealthy seed oils, that would provide a measurable improvement.... at least I hope so. I have used a CGM to evaluate foods for the last year. There are definitely some low carb products that are not great for me (I was a T2D for many years and still healing). I did cook a couple lbs of chorizo that I got from a regenerative ranch and am looking at using the chorizo grease for coating shrimp when I put them on the BBQ. Thanks for that recipe!
I did love Brussels sprouts but it took years. My mom used to serve us boiled frozen sprouts and they were awful. Once I was cooking I tried making them from scratch. I tried Ina Garten’s Roasted Brussels Sprouts and I was in! I serve them every once in awhile. Hubby loves them, son will eat them occasionally. I make sure to take some Bean-O before I eat them. It helps my body break them down without too much gas. A great product Don’t know if they have carbs, never looked at the packaging.
same, my mom steamed or boiled every veggie and i therefore HATED veggies growing up. when i got older and was introduced to grilled and roasted veggies, it was an absolute game changer. more importantly, i know how to get MY kid to like them from the jump 💪 (he is literally obsessed with roasted broccoli 🤗)

Keto Upgrade just released a video about flour. She said each type of baked goods - biscuits, bread, pancakes, etc, requires a different flour formula to turn out well. One flour mix does not work for all of them. She’s a professional baker, she ought to know. 😮
Yep. Even with non-keto baking, the type of flour you use makes a huge difference. Pizza uses a higher protein flour, whereas cake uses a lower protein flour. Sure, you can use "all purpose" flour for those things too, but the results won't be nearly as good.
"Should" is my trigger word....and at 53 years of marriage, my husband still uses it! I'm with you in No brussel sprouts..funny I have twin daughters, 1 loves them and the other won't touch. The carnivore mash, make them but trying to figure out what to add for French fries. King Arthur keto flour, have a bag, don't care for the texture ( same with purchased mixes ) they are like cornbread crumbs. Experimenting what to add to get a better texture
I pretty much agree with you on the brussel sprouts. My wife found a recipe that we actually love. its essentially cut the sprouts in half, coat in olive oil and salt. lay face down on a sheet pan and rough cut thick but bacon and spread it around. roast at 450 for 30 minutes ish. We put chicken thighs on the sheet pan too and roast it all. absolutely fantastic and easy to make.
I don't miss mashed potatoes. I only used to make them once a year, at Thanksgiving to go with the gravy. I never cared for Brussel sprouts until I married my husband 14 years ago. He loves them so I found recipes using balsamic vinegar and yes, bacon. I will eat them that way but not so much on their own. Because I love my husband I will make them periodically. I, also, do not respond will when anyone tells me I "need" to do something. My general thought is to immediately tell them what they need to do (generally more of where they can go ) so I don't normally let those thoughts become words that come from my mouth.😅
I couldn't agree more. Everything you said is spot on. I've tried and cannot make Brussel Sprouts taste good. I think it has something to do with a person's taste buds. Like how some people can't eat cilantro.

My mom's mashed potatoes were always wonderful & never used the fake potato flakes, but as kids we always looked forward to the mashies! I agree though that the cauliflower mashies are really good😋
Love b'sprouts! I like to put balsamic vinegar and oil on them then roast in the oven. So sorry about you and Terry... 😂 I hate that they can put Keto on the label, and it's not. I found some Sara Lee bread with big "Keto" letters on the label. It was the same as regular bread. So, after reading ingredients over the past few months, I found I'm better off making/baking my own. Years ago, we had the same prob with "all natural" and "organic". Now it all has to be certified. I hope they do something with Keto - including using clean ingredients.
I understand how you feel about brussels, I personally love them and can eat them with nothing but salt....however, I despise wine and I have had several people tell me that I just haven't had the right one. To me wine has 2 flavors, moldy grapes and beer, I also despise beer...lol.
You do you Steve!!! Thank you for your contributions and your time, it is has helped me immensely. I have been living a mostly Keto lifestyle since late April and I am learning as much as I can. My wife thinks I am going a little overboard, but to your last point, I was there once too. My wife is not on a diet and not Keto, but because I do 90% of the cooking and nearly all the grocery shopping, she is definitely Keto adjacent. I think she is coming around because she has lost 15 pounds just by eating the meals that I cook for her, and I have replaced every "bad" snack I used to eat in my house with low or no carbs. The only thing I cannot persuade her on is fasting or intermittent fasting. The after dinner graze is strong with this one 🤣. I personally love fasting and it makes some things so simple for me.

Hi Steve, Awhile ago I asked if you had a substitution for "breading" other than using pork. You said you didn't. FYI, I wanted to let you know that I've found a replacement. Using a rotisserie chicken from Costco you cut up the chicken (minus the skin) put some in a blender. When it is ground into small pieces you spread it out on a plate (microwave) or pan (oven) to dry it for a few minutes. Put it back in the blender, than the microwave or oven and repeat until it is dry enough & fine enough. (There are some TH-cam videos.)
I’ve used the chicken flour to make bread and pizza dough (and even little cheese stuffed spheres in a cake ball maker:) but never as breading! Thanks for the tip!
I never used to like Brussels sprouts until I moved to the south and a friend made them for dinner roasted with bacon. OMG now I love them and regularly buy them- they have a long shelf life in the fridge, and what more can I say about bacon, right? They are also good halved with olive oil, Parmesan cheese, salt and pepper.
I feel the same way about mashed potatoes...having to cook for the folks 6 days a week, sides are getting boring for them. I am perfectly happy with meat and salad...occasionally some roasted veg...or a cheesy sauce to go with meat...Even dessert is an occasional thing now, when I grew up with it as a every day thing. I kinda sorta miss bread sometimes (always a staple with dinner growing up) so I want to try the carnivore brioche to see if that works, but have been underwhelmed at all the recipe bread substitutes. to this point..I skip the store bought versions.
I see Brussel Sprouts as a condiment or vehicle for other things, it adds a bitterness that I like to compliment other flavours in the dish, the same way bitter melon does to asian dishes, although it's significantly more bitter than Brussel Sprouts. I like a lot of things that I can't have on it's own because it's too strong a flavour and is supposed to be used to add depth of flavour to other dishes like shrimp paste, marmite/vegemite, soy sauce, vinegars, chilli peppers, rhubarb, and the list goes on forever.
I really miss popcorn and I realize what I really miss is the salty, buttery crunchiness that I can eat by the handfuls! So that rules out the crispy cheeses or pepperonis or homemade meat crisps cause the brand you can buy is too expensive. For me, I also avoid the almond flower crackers. So, you NEED to create a low carb crunchy snack that meats (lol) those parameters. That would be great! 👍👍😂😂😂 Thank you for not wrapping this request in fish guts and tossing it into the bin.
The recipes I did on, TH-cam were sort of on the fly and sort of with the recipe depending on how easy it was. Like my keto chow fudge that was pretty much how the recipe is on the keto chow website. And my egg white bread I just did with taking elements of three recipes and it came out perfect. But I have change so much to where I don’t do a lot of cooking like that anymore. I mean I still make my egg white bread, but I’m not into elaborate recipes for dinner we just eat a piece of protein and my husband has a side dish and we call it good

I'm very hesitant to use Primal Kitchen anymore since it's owned by Kraft. How long will it be before they degrade it with cheaper products in order to increase profits.
Growing up my mother was the only one who like brussel sprouts. She made them maybe twice a year on a holiday. She just threw them in the microwave. We all hated the smell so much she wasn't allowed to open the microwave until she was ready to eat them. We complained so much, she reduced that down to once a year.
I’m not much of a recipe person either. I just throw things together. It’s a talent. I basically learned from my dad and he was a chef in the 50s. My mom was a great cook too. I just have the ability to throw things together. One time we needed shortcake for some strawberries at my mom’s house, and I threw them together with no recipe and they were absolutely wonderful. I say just let Terry do what she wants.
unfortunately if she does that, there will inevitably be about 50 people in the comments demanding measurements, times, and macros. he just avoids a lot of headaches by providing that up front. some people just have to live by the recipe because they are not as intuitive in the kitchen 🤷♀️

As far as the "flour" goes, there's several people that make flour substitutes. Those people have it covered. Mashed potato substitute is Daikon, it's a great as mashed potatoes. The condiments makes the dish often times.

Plain boiled with butter. - the bestest! My kids love them that way. I have always pronounced it KroNOMiter, but then I am Canadian. Victoria's Keto Kitchen has created an all-purpose and self-rising keto flour recipe that works not too bad. Carnivore mashed potatoes is a bit of work and about as good as mashed cauliflower (which my wife loves).
Steve, out of curiosity I read through the WHO guidelines. They do indeed state this: trans-fatty acids in baked and fried foods, pre-packaged snacks, and meat and dairy foods from ruminant animals, such as cows or sheep. But, the 400 grams of carbs doesn't appear to be right, they are saying 400 grams of vegetables and fruit, with 25 grams of fiber. I had to go straight to the source, the idea of 400g of total carbs was mind-blowing! So I don't know that 400g of veg and fruit is a good idea either, unless it is all something like broccoli. :) Regardless though, there is a lot of misinformation in the new guidelines. I was surprised to see they are still linking salt intake to high blood pressure.
I also really like the King Arthur company and still use their flour for bread making for the not me people in the household - in fact it took a while to find a flour that good to make a good bread over here in the States. I am giving them the benefit of the doubt at the moment as far as their keto/diabetic/ low carb options go - as far as major companies, I am a cynic and believe they are run by marketers that will call white milk green if they thought it would get them more sales. So for major companies I rely on channels like yours, others similar ones and my own judgement before considering their products to become a part of my pantry.
Hi Steve! I have found that Fiber Gourmet flour is VERY close to regular flour in baking. I’d be so interested in finding out about the glucose response. I don’t love the taste of King Arthur keto flour.
I’ve always pronounced cronometer like you did with the emphasis on NOM. Similar to odometer or…..chronometer! Also, I am totally team brussels sprouts. Prefer them roasted, but like them most any way with nothing more than a bit of butter necessary. I will admit to the unpleasant smell when cooking though, especially in a microwave. I still can’t live down the time I cooked them in the microwave at work many years ago. Someone came into the break room after and said, “What is that? It smells like someone is cooking a swamp corpse!”

Divorce? I just divorced 27lbs since May 18th! your low carb/no carb bread video was golden, I use the aldi bread like a loaf a week but have since turned to the Inked Keto bread at costco, wish u tested that one
I agree about the carnivore mashers. The prep time of 1 hour is excessive IMO. I am never going to cook these. Cauli mashers is the way to go for me too. I get several servings of veggies with that. Prep time about 10 minutes.

I think that when people say "you need to do ______" they are actually saying "I need you to do _____ for me." On the up side it means they love how you do things and want more. On the downside it comes across as making a demand and taking you for granted. And just like your wife, many have no idea what actually goes into what you do. Re: large companies doing keto products - I think it is more bad than good because people get excited and expect to have health benefits and weight loss when they see "keto" but many will end up with minimal or no results and decide keto doesn't work, quit and miss out and take others with them that might have had life-changing experiences.

I think it is needed to keep keto relevant. By this mean there are so many good, clean keto cooking items I would hate to see them go away. You are right that many are not “keto” but if you’re educated on how to eat, your making smart decisions.
There are plenty of self help people who say that we need to cut toxic people out of our lives in order to preserve our own mental sanity. Some people you just can't reach. The best way forward IMO is to be a good example of whatever way of life you strive towards. There is enough anecdotal evidence out there in support of Keto now that we really don't have to say much....we just need to show off the results.
Your take on Brussels sprouts -if you have to doctor them up you really don’t like it -is the way I feel about coffee which I can’t stand! My pronunciation of chronometer is My Fitness pal….lol
In Belgium we cook our (Brussels, capital of Belgium) sprouts until tender, like melt in your mouth. We let them drip out and cook them slow in some butter with salt and pepper. I eat them maybe once a year in the winter, or so..if they smell like poop when cooking, they're usually not great tasting in my opinion.
There's a very good reason why Yankee Candle doesn't make a steamed Brussels sprouts scent. But if they did, they could always just re-label it "Diaper Genie that's been sitting in a hot garage".

I always say Cro-NOM-eter. I guess because here in Canada, I am used to metric. So we say kil LOM eter. I still love and use Terry's recipe for Egyptian rice. Best wishes for Conor's recovery.

My daughter broke a few bones between her pinky and her knuckle after getting her finger, caught in a tear on a slip and slide that they made for the family that was visiting from Arizona for a wedding. We all went to. She had three pins put in it last week. I hope Connor heals really well.
I batch cook the egg white portion of Chris Cooking Nashville’s mashed potatoes/potato salad and I freeze it in baggies. When I need it I defrost it, heat it and then I continue the recipe (add the cheeses to the blender, add the egg whites, and blend and if I want the potato salad I bake it off at 275 for 1/2 hour. BTW yes, it is worth making if you miss mashed potatoes. It tastes really close. I am not saying you NEED to make it, just that it is really good. I was impressed.
What a great idea about prepping the egg whites! I already made a 1/4 cup of the browned gelatin in advance as a time saver.

I love Brussels sprouts just thrown in the air fryer and then salted. I don't crave mashed potatoes either. They are ok, like you said, just for putting stuff on. Good grief, 400g of carbs per day. That sounds like all the illnesses waiting to happen. My dads diet is atrocious and he might take in that many carbs a day. He eats chips, cookies, high sugar cereals, candy and lots of frozen, packaged meals, but he thinks my diet is unhealthy. He thinks I take in too much fat and not enough fiber.

Interesting recipe though!
Steve, I don't like brussel sprouts when they are steamed or boiled. They are bad if cooked that way. BUT have you tried pan-fried or oven-baked brussel sprouts? All you need is avocado oil or bacon/pork fat and salt. If you pan fry the brussel sprouts, make sure to have enough oil in the pan (covering the bottom of the sprouts). Cut the sprouts in half and put them in cut side down (the pan doesn't have to be hot). Cook them in batches if needed. Let them sizzle for about 3-4 min or so, until the cut side is brown. Flip them over and cook for another 2-3 min. Sprinkle salt to taste (we like the Montreal Steak Season on them too). Toast them and serve. For the oven, preheat oven at 425 F. Spray the cut sprouts in oil and sprinkle salt. Toast and put the sprout on the large cookie pan (foil lined). Cook for 12-15 minute. You can also sprinkle cheese (Parmesan cheese or any cheese of choice) before you take them out and let it cook for 2 minutes or so. Personally, I like the pan fried better. I like the leaves slightly crunchy.
Brussels sprouts with simply olive oil and salt, roasted in the oven, are amazing! I do like making them with bacon when I am having a leaner cut of meat (like pork tenderloin) to get some more fat into the meal.
The only way I really like Brussels sprouts is shaved and air-fried. Essentially you unravel the sprouts so they're all individual little leaves, coat them in oil, salt, pepper and any seasonings you might want to add (parmesan, spice mixes, etc.). Then air fry at high temps until they take on a bit of char. I usually drizzle some balsamic or even better a balsamic reduction over them. Or you can dip them in aioli. Something about the frying kills the stink.
Works on kale too, which I otherwise don't care for (except in beef vegetable soup, where I like the chew).
Just lay them on a cookie sheet and bake them at 400°F for 40 mins or until they are crispy. THATS all. Maybe salt or pepper if you like but not even necessary. Just eat them crispy. So sweet and delish!
I like watching someone winging it when cooking. Brussel sprouts coated in bacon fat with salt & pepper plus a sprinkling of parmesan then roasted is delicious, but then I like brussel spouts boiled and butterd.
The problem is that many people in the keto world (at least in my comments) get awfully prickly when I don’t provide measurements down to the gram.

I think for the crowd that wants to do "dirty" keto, the big corporations getting into ketogenic products might be a good thing. However, as you said, most of these products (read the labels, y'all!) are not really keto. Personally, being fat adapted, I would rather just get a small amount of the real deal if I am just "dying" for a bite or two at a get together or on vacation and want to try out a specialty in a restaurant and then go back to my regular eating routine. Keep being the voice of reason and let's see some more of Colton, soon.

I think that larger companies like King Arthur getting into keto will help get more people into doing keto. That will make it difficult for smaller businesses, but hopefully they can adjust and find their niche. And hopefully new people getting into keto will use discernment when considering their options. Your channel will help there a lot!

That book on stoicism sounds great. Last year I was watching a video and stoicism was mentioned. It sounded like me, so I looked up the definition. I had no idea, but my life experiences have made me a stoic! I used to be ruled by emotion. A friend complimented me several years ago about how I remained so calm despite the h___ that I had been through for years. Now I have a name for it and can get even better. Just this month I bought Meditations by Marcus Aurelius! Now I know which book to get next.
A review of the book for Lean Body Mind might be something to consider.

I think it is great for any company to get into the Keto space. Especially, if they have clean ingredients. That is the only way we will have a shift to better dietary choices. If they get rid of sugar, corn syrup and unhealthy seed oils, that would provide a measurable improvement.... at least I hope so. I have used a CGM to evaluate foods for the last year. There are definitely some low carb products that are not great for me (I was a T2D for many years and still healing). I did cook a couple lbs of chorizo that I got from a regenerative ranch and am looking at using the chorizo grease for coating shrimp when I put them on the BBQ. Thanks for that recipe!

I did love Brussels sprouts but it took years. My mom used to serve us boiled frozen sprouts and they were awful. Once I was cooking I tried making them from scratch. I tried Ina Garten’s Roasted Brussels Sprouts and I was in! I serve them every once in awhile. Hubby loves them, son will eat them occasionally. I make sure to take some Bean-O before I eat them. It helps my body break them down without too much gas. A great product Don’t know if they have carbs, never looked at the packaging.
same, my mom steamed or boiled every veggie and i therefore HATED veggies growing up. when i got older and was introduced to grilled and roasted veggies, it was an absolute game changer. more importantly, i know how to get MY kid to like them from the jump 💪 (he is literally obsessed with roasted broccoli 🤗)

Keto Upgrade just released a video about flour. She said each type of baked goods - biscuits, bread, pancakes, etc, requires a different flour formula to turn out well. One flour mix does not work for all of them. She’s a professional baker, she ought to know. 😮
Yep. Even with non-keto baking, the type of flour you use makes a huge difference. Pizza uses a higher protein flour, whereas cake uses a lower protein flour. Sure, you can use "all purpose" flour for those things too, but the results won't be nearly as good.

"Should" is my trigger word....and at 53 years of marriage, my husband still uses it! I'm with you in No brussel sprouts..funny I have twin daughters, 1 loves them and the other won't touch. The carnivore mash, make them but trying to figure out what to add for French fries. King Arthur keto flour, have a bag, don't care for the texture ( same with purchased mixes ) they are like cornbread crumbs. Experimenting what to add to get a better texture

I pretty much agree with you on the brussel sprouts. My wife found a recipe that we actually love. its essentially cut the sprouts in half, coat in olive oil and salt. lay face down on a sheet pan and rough cut thick but bacon and spread it around. roast at 450 for 30 minutes ish. We put chicken thighs on the sheet pan too and roast it all. absolutely fantastic and easy to make.
Pretty much any time someone says they have a fantastic Brussels sprouts recipe, it involves bacon. I don't think that's a coincidence. 😄

I don't miss mashed potatoes. I only used to make them once a year, at Thanksgiving to go with the gravy. I never cared for Brussel sprouts until I married my husband 14 years ago. He loves them so I found recipes using balsamic vinegar and yes, bacon. I will eat them that way but not so much on their own. Because I love my husband I will make them periodically. I, also, do not respond will when anyone tells me I "need" to do something. My general thought is to immediately tell them what they need to do (generally more of where they can go ) so I don't normally let those thoughts become words that come from my mouth.😅

I hate that they can put Keto on the label, and it's not. I found some Sara Lee bread with big "Keto" letters on the label. It was the same as regular bread. So, after reading ingredients over the past few months, I found I'm better off making/baking my own.
Years ago, we had the same prob with "all natural" and "organic". Now it all has to be certified. I hope they do something with Keto - including using clean ingredients.
My favorite veg is Brussels sprouts. I just have them with cheese, butter salt and pepper.

I understand how you feel about brussels, I personally love them and can eat them with nothing but salt....however, I despise wine and I have had several people tell me that I just haven't had the right one. To me wine has 2 flavors, moldy grapes and beer, I also despise beer...lol.
You do you Steve!!! Thank you for your contributions and your time, it is has helped me immensely. I have been living a mostly Keto lifestyle since late April and I am learning as much as I can. My wife thinks I am going a little overboard, but to your last point, I was there once too. My wife is not on a diet and not Keto, but because I do 90% of the cooking and nearly all the grocery shopping, she is definitely Keto adjacent. I think she is coming around because she has lost 15 pounds just by eating the meals that I cook for her, and I have replaced every "bad" snack I used to eat in my house with low or no carbs. The only thing I cannot persuade her on is fasting or intermittent fasting. The after dinner graze is strong with this one 🤣. I personally love fasting and it makes some things so simple for me.

Hi Steve, Awhile ago I asked if you had a substitution for "breading" other than using pork. You said you didn't. FYI, I wanted to let you know that I've found a replacement. Using a rotisserie chicken from Costco you cut up the chicken (minus the skin) put some in a blender. When it is ground into small pieces you spread it out on a plate (microwave) or pan (oven) to dry it for a few minutes. Put it back in the blender, than the microwave or oven and repeat until it is dry enough & fine enough. (There are some TH-cam videos.)

I never used to like Brussels sprouts until I moved to the south and a friend made them for dinner roasted with bacon. OMG now I love them and regularly buy them- they have a long shelf life in the fridge, and what more can I say about bacon, right? They are also good halved with olive oil, Parmesan cheese, salt and pepper.

I feel the same way about mashed potatoes...having to cook for the folks 6 days a week, sides are getting boring for them. I am perfectly happy with meat and salad...occasionally some roasted veg...or a cheesy sauce to go with meat...Even dessert is an occasional thing now, when I grew up with it as a every day thing. I kinda sorta miss bread sometimes (always a staple with dinner growing up) so I want to try the carnivore brioche to see if that works, but have been underwhelmed at all the recipe bread substitutes. to this point..I skip the store bought versions.

I see Brussel Sprouts as a condiment or vehicle for other things, it adds a bitterness that I like to compliment other flavours in the dish, the same way bitter melon does to asian dishes, although it's significantly more bitter than Brussel Sprouts. I like a lot of things that I can't have on it's own because it's too strong a flavour and is supposed to be used to add depth of flavour to other dishes like shrimp paste, marmite/vegemite, soy sauce, vinegars, chilli peppers, rhubarb, and the list goes on forever.
The WHO bit, i agree 100%! Lobbying... We enjoy all your videos. Recipes or input, it's all good.
I really miss popcorn and I realize what I really miss is the salty, buttery crunchiness that I can eat by the handfuls! So that rules out the crispy cheeses or pepperonis or homemade meat crisps cause the brand you can buy is too expensive. For me, I also avoid the almond flower crackers. So, you NEED to create a low carb crunchy snack that meats (lol) those parameters. That would be great! 👍👍😂😂😂 Thank you for not wrapping this request in fish guts and tossing it into the bin.

The recipes I did on, TH-cam were sort of on the fly and sort of with the recipe depending on how easy it was. Like my keto chow fudge that was pretty much how the recipe is on the keto chow website. And my egg white bread I just did with taking elements of three recipes and it came out perfect. But I have change so much to where I don’t do a lot of cooking like that anymore. I mean I still make my egg white bread, but I’m not into elaborate recipes for dinner we just eat a piece of protein and my husband has a side dish and we call it good
And I like brussels sprouts fine - just sprinkle balsamic vinegar liberally. Though I don't eat so many veggies anymore....

Growing up my mother was the only one who like brussel sprouts. She made them maybe twice a year on a holiday. She just threw them in the microwave. We all hated the smell so much she wasn't allowed to open the microwave until she was ready to eat them. We complained so much, she reduced that down to once a year.

I’m not much of a recipe person either. I just throw things together. It’s a talent. I basically learned from my dad and he was a chef in the 50s. My mom was a great cook too. I just have the ability to throw things together. One time we needed shortcake for some strawberries at my mom’s house, and I threw them together with no recipe and they were absolutely wonderful. I say just let Terry do what she wants.
She can (and does) do whatever she wants. But if she's going to make a keto recipe for publication, then she needs to measure the ingredients.
unfortunately if she does that, there will inevitably be about 50 people in the comments demanding measurements, times, and macros. he just avoids a lot of headaches by providing that up front. some people just have to live by the recipe because they are not as intuitive in the kitchen 🤷♀️

As far as the "flour" goes, there's several people that make flour substitutes. Those people have it covered. Mashed potato substitute is Daikon, it's a great as mashed potatoes. The condiments makes the dish often times.

Plain boiled with butter. - the bestest! My kids love them that way. I have always pronounced it KroNOMiter, but then I am Canadian. Victoria's Keto Kitchen has created an all-purpose and self-rising keto flour recipe that works not too bad. Carnivore mashed potatoes is a bit of work and about as good as mashed cauliflower (which my wife loves).
Steve, out of curiosity I read through the WHO guidelines. They do indeed state this: trans-fatty acids in baked and fried foods, pre-packaged snacks, and meat and dairy foods from ruminant animals, such as cows or sheep. But, the 400 grams of carbs doesn't appear to be right, they are saying 400 grams of vegetables and fruit, with 25 grams of fiber. I had to go straight to the source, the idea of 400g of total carbs was mind-blowing! So I don't know that 400g of veg and fruit is a good idea either, unless it is all something like broccoli. :) Regardless though, there is a lot of misinformation in the new guidelines. I was surprised to see they are still linking salt intake to high blood pressure.

I also really like the King Arthur company and still use their flour for bread making for the not me people in the household - in fact it took a while to find a flour that good to make a good bread over here in the States. I am giving them the benefit of the doubt at the moment as far as their keto/diabetic/ low carb options go - as far as major companies, I am a cynic and believe they are run by marketers that will call white milk green if they thought it would get them more sales. So for major companies I rely on channels like yours, others similar ones and my own judgement before considering their products to become a part of my pantry.

Hi Steve! I have found that Fiber Gourmet flour is VERY close to regular flour in baking. I’d be so interested in finding out about the glucose response. I don’t love the taste of King Arthur keto flour.

I’ve always pronounced cronometer like you did with the emphasis on NOM. Similar to odometer or…..chronometer! Also, I am totally team brussels sprouts. Prefer them roasted, but like them most any way with nothing more than a bit of butter necessary. I will admit to the unpleasant smell when cooking though, especially in a microwave. I still can’t live down the time I cooked them in the microwave at work many years ago. Someone came into the break room after and said, “What is that? It smells like someone is cooking a swamp corpse!”

Divorce? I just divorced 27lbs since May 18th! your low carb/no carb bread video was golden, I use the aldi bread like a loaf a week but have since turned to the Inked Keto bread at costco, wish u tested that one
That's great progress. The Inked bread appears to be a regional thing. I've never seen it in Wisconsin.
I agree about the carnivore mashers. The prep time of 1 hour is excessive IMO. I am never going to cook these. Cauli mashers is the way to go for me too. I get several servings of veggies with that. Prep time about 10 minutes.
Agreed. I mean it’s cool that Chris came up with them, but I won’t put that kind of time and effort into a side dish.

I think that when people say "you need to do ______" they are actually saying "I need you to do _____ for me." On the up side it means they love how you do things and want more. On the downside it comes across as making a demand and taking you for granted. And just like your wife, many have no idea what actually goes into what you do. Re: large companies doing keto products - I think it is more bad than good because people get excited and expect to have health benefits and weight loss when they see "keto" but many will end up with minimal or no results and decide keto doesn't work, quit and miss out and take others with them that might have had life-changing experiences.

I think it is needed to keep keto relevant. By this mean there are so many good, clean keto cooking items I would hate to see them go away. You are right that many are not “keto” but if you’re educated on how to eat, your making smart decisions.
There are plenty of self help people who say that we need to cut toxic people out of our lives in order to preserve our own mental sanity. Some people you just can't reach. The best way forward IMO is to be a good example of whatever way of life you strive towards. There is enough anecdotal evidence out there in support of Keto now that we really don't have to say much....we just need to show off the results.
Your take on Brussels sprouts -if you have to doctor them up you really don’t like it -is the way I feel about coffee which I can’t stand!

In Belgium we cook our (Brussels, capital of Belgium) sprouts until tender, like melt in your mouth. We let them drip out and cook them slow in some butter with salt and pepper. I eat them maybe once a year in the winter, or so..if they smell like poop when cooking, they're usually not great tasting in my opinion.

LOL... I do actually like steamed brussel sprouts too, but I do put a large dollup of mayo on my plate too, then mix them all up. You crack me up! 😂
There's a very good reason why Yankee Candle doesn't make a steamed Brussels sprouts scent. But if they did, they could always just re-label it "Diaper Genie that's been sitting in a hot garage".
