I'm a coffee geek. Eden at 7:39 is correct. A 7g dose and 26ml output is 1:3.7 ratio, that's way too high unless they're using a very light roast. Regardless, most professional espresso machines in the US are 58mm. I don't know where you would even find a 7g basket. The lowest I've seen is like a 14g.
Yes but wouldn't you agree that utilising a 1:3.4 ratio is not as beneficial when considering a conservative ratio of 1:3.6 and that the tanens would over roast when European settings are considered when applying them to machines found mostly in the US?
He did not. He basicily gives 2 numbers disregarding the coffe. You do different brew ratios depending on the roast and etc. You cant have a general exact amount coffe to water ratio. Esspecialy you also have to watch out for how long you extract. For example he likes darker coffee roast where you try to have a colder brew temperature and less water because it is really easy to extract everything from darker coffe.

A) I will watch anything with Jordan Schlansky. This shit is absolutely hilarious. B) Has anyone else noticed that the different late night hosts have their one thing that they do best? Craig Ferguson is EASILY the best interviewer (sad to see him go). Kimmell is great with just the sheer amount of celebrities he can get. Fallon has some of the craziest games. Letterman is just old school. And Conan has by FAR the best away segments, i.e. segments that take place out of the traditional area of the show. The Clueless Gamer segments are awesome. (I didn't include Seth Meyers because he's still getting his footing)
I pretty much agree 100% with this assessment. Maybe to my taste Ferguson is sometimes a little too crazy (in a calculated way) in his interviews and that Conan can be the best interviewer out of all of them (he has off nights of course). And Letterman - yeah he's old school and to me it just comes across as uninterested and just plain boring. But yeah, I really agree with your analysis.

I agree. Jordan asks "based on what criteria?" She immediately responds: "Based on the actual solubles that we're extracting," as if that statement holds some kind of objective significance. She follows that statement with subjective claims about certain qualities overpowering others in the coffee if they go over a certain concentration. But, she also doesn't really disagree with Jordan explicitly. Conan asks her to "get him" and she just explains what they are looking for in their coffee which, it seems to me, is pretty much what he just suggested (i.e. over concentration makes certain flavors overpower others in a negative way). I think it's really just Conan's "get him" comment that makes it seem like she's trying to refute him.
They're both right, and the reason they can both be right has less to do with brew time and more to do with grind particle size. The longer you brew the espresso, the more bitter/burnt it will be. So if you want a more less concentrated, more liquid espresso - you'll use a coarser grind and give it the same 25-30 second brew time. It's no surprise Jordan bought an automatic machine, as even really expensive automatic machines notoriously fail to brew thick, syrupy espresso but succeed at very liquidy shots. I believe automatic machines grind coarsely because fine grinds require more maintenance.

I'm a coffee geek. Eden at 7:39 is correct. A 7g dose and 26ml output is 1:3.7 ratio, that's way too high unless they're using a very light roast. Regardless, most professional espresso machines in the US are 58mm. I don't know where you would even find a 7g basket. The lowest I've seen is like a 14g.

He did not. He basicily gives 2 numbers disregarding the coffe. You do different brew ratios depending on the roast and etc. You cant have a general exact amount coffe to water ratio. Esspecialy you also have to watch out for how long you extract. For example he likes darker coffee roast where you try to have a colder brew temperature and less water because it is really easy to extract everything from darker coffe.
If Jordan is getting paid to stay in his character for Conan's show, he is well deserved for the salary.

A) I will watch anything with Jordan Schlansky. This shit is absolutely hilarious. B) Has anyone else noticed that the different late night hosts have their one thing that they do best? Craig Ferguson is EASILY the best interviewer (sad to see him go). Kimmell is great with just the sheer amount of celebrities he can get. Fallon has some of the craziest games. Letterman is just old school. And Conan has by FAR the best away segments, i.e. segments that take place out of the traditional area of the show. The Clueless Gamer segments are awesome. (I didn't include Seth Meyers because he's still getting his footing)
I pretty much agree 100% with this assessment. Maybe to my taste Ferguson is sometimes a little too crazy (in a calculated way) in his interviews and that Conan can be the best interviewer out of all of them (he has off nights of course). And Letterman - yeah he's old school and to me it just comes across as uninterested and just plain boring. But yeah, I really agree with your analysis.

I agree. Jordan asks "based on what criteria?" She immediately responds: "Based on the actual solubles that we're extracting," as if that statement holds some kind of objective significance. She follows that statement with subjective claims about certain qualities overpowering others in the coffee if they go over a certain concentration. But, she also doesn't really disagree with Jordan explicitly. Conan asks her to "get him" and she just explains what they are looking for in their coffee which, it seems to me, is pretty much what he just suggested (i.e. over concentration makes certain flavors overpower others in a negative way). I think it's really just Conan's "get him" comment that makes it seem like she's trying to refute him.

They're both right, and the reason they can both be right has less to do with brew time and more to do with grind particle size. The longer you brew the espresso, the more bitter/burnt it will be. So if you want a more less concentrated, more liquid espresso - you'll use a coarser grind and give it the same 25-30 second brew time. It's no surprise Jordan bought an automatic machine, as even really expensive automatic machines notoriously fail to brew thick, syrupy espresso but succeed at very liquidy shots. I believe automatic machines grind coarsely because fine grinds require more maintenance.
